2 tablespoons unsalted butter
2 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped yellow onion
4 cups chicken stock, preferably homemade
5 cups freshly shelled peas or 2 (10-ounce) packages frozen peas
2/3 cup chopped fresh mint leaves, loosely packed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
1/2 cup freshly chopped chives
Garlic croutons, for serving

Steps:

  • Heat the butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 to 5 minutes, until the peas are tender. (Frozen peas will take only 3 minutes.) Off the heat, add the mint, salt, and pepper.
  • *Puree the soup in batches: place 1 cup of soup in a blender, place the lid on top, and puree on low speed. With the blender still running, open the venthole in the lid and slowly add more soup until the blender is three-quarters full. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives and taste for seasoning. Serve hot with garlic croutons.

Steps:

  • Heat the oil in a large pot over medium heat. Add the leeks and sauté for 4 minutes, until softened. Add the broth and bring to a simmer. Stir in the peas and asparagus and simmer, covered, for 3 minutes longer. Carefully place half of the soup in a high-powered blender and puree until smooth, then return it to the pot. Add the parsley and thyme (if using), and stir well to combine. Season with salt and pepper to taste and serve.

Steps:

  • Heat olive oil in a saucepan over medium heat.
  • Cook and stir garlic and green onions in saucepan until garlic is just golden, about 3 minutes.
  • Cook and stir asparagus with garlic and green onions until slightly softened, about 2 more minutes.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer until asparagus is tender, about 10 minutes. Turn off heat and allow to cool slightly.
  • Pour soup into blender, filling no more than halfway full. Cover with a lid. Carefully start the blender, using a few quick pulses to get soup moving before leaving it on to puree. Puree in batches until smooth.
  • Transfer soup back to saucepan and reheat. Season with salt and ground black pepper to taste.

4 cups chicken broth
2 cups water
6 cups shelled fresh English peas

My husband issued me a challenge shortly after we were married. I hated paying the price for his favorite soup-in-a-can, Green Pea Soup, by Campbell's. Not the Split Pea, but the one that's creamy smooth. He hates lumpy pea soup! Well, he told me if I could make it "just as good" as the can, he would eat it and I could stop paying a dollar a can (or more). Well, it took me about 8 years, and lots of tries, but I finally got it right. Hey, don't look at me like that, it's not like I was trying for eight years straight. I mean, you can only eat pea soup so often! When I make this now, I usually make a double or triple batch so I can freeze some - it does freeze well. Oh, and no, there is no ham or meat of any kind in this, just some bouillon. I read the can label and saw it contained no meat, unlike the Split Pea Soup. I prefer it this way. By the way, a couple of months ago, I found a foodservice sized can of Green Pea soup at our grocery outlet store, for just over a dollar. At that price, I bought it to have on hand for a quick last-minute meal. My family complained! It was way too salty for their taste now! I guess they're finally weaned. Now if I could just convince the kids that homemade Macaroni & Cheese is better than the Blue Box Stuff.......

3 quarts water
1 large onion, chopped
2 tablespoons chicken bouillon granules
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon pepper

lemon juice (optional but recommended)

Steps:

  • Combine everything in a large, heavy-bottomed pot with a lid (use one that holds at least 6 quarts).
  • Bring to a boil.
  • Reduce heat, cover and simmer, stirring occasionally, for 3 1/2 to 4 hours or until peas are tender and soup reaches desired thickness.
  • Puree in blender, or in the soup pot using a handheld stick blender (I love those things!) Re-heat if needed, over very low heat.
  • I have slow-cooked this in a crockpot, but was not happy with the results.
  • I did it just until the peas were done, but my husband and I agreed it tasted way overcooked, and even adding lemon juice didn't help much.
  • Stove-top cooking just until the peas are tender gives this a much fresher taste.
  • My family loves this served with freshly baked homemade bread and a tossed salad.
  • VEGETARIANS: As is, this is not vegetarian, you can make it so, by substituting salt or a vegetarian bouillon for the chicken bouillon.
  • LOW SALT DIETS: This is what I've done this for my mother in law who can't have salt: eliminate chicken bouillon, and add freshly squeezed lemon juice to taste.
  • Usually about one lemon does it, but it depends on the size of the lemon.
  • I recommend adding a bit of lemon if you're not salt-restricted, along with the bouillon- it's truly wonderful.

I chose to try making this recipe because of the tantalizing photo in the book, and it was every bit as good as the picture promised -- but the BEST thing about it is, there's no pre-prep prep! Anything that gets chopped or measured can be done during cooking time. If you have a hand blender, this is easy-peasy stuff. Before preparing your other ingredients, it's best to start the stock heating first, so it boils as soon as possible. That's what makes this such a quick and easy recipe.

2 1/2 cups chicken stock or 2 1/2 cups vegetable stock
8 -9 green onions
1 lb frozen peas
12 small asparagus spears
salt and black pepper
3 slices rindless streaky bacon
1 -2 tablespoon vegetable oil
2 slices day-old white bread (we used fresh French bread instead)
3 tablespoons whipped cream (we used 2 slices French goat cheese instead)

Steps:

  • Pour the stock into a 2 qt/2 L pot and set on the stove over high heat. (If you work quickly, cover the pot to boil even quicker.) Rinse the green onions, trim and chop them roughly, add them to the stock with the frozen peas, and bring to a boil.
  • Rinse the asparagus spears, remove the tips and set aside. Roughly chop the stems (you can use the whole stem as it's all going to be pureed) and add them to the saucepan with a pinch of salt. Reduce the heat, cover, and simmer 10-15 minutes, or until asparagus is tender.
  • Meanwhile, snip the bacon slices directly into a hot frying pan and fry until crisp and golden. Transfer these to a plate and set aside for garnish.
  • If there is not enough bacon fat left in the pan for frying, add 1-2 tablespoons of oil and heat. Cut the bread into small dice and fry for 2-3 minutes over high heat, turning frequently, until golden, then set aside to drain on kitchen paper (paper towel) for garnish.
  • When the peas and asparagus are done, blend or process the soup to a puree. You can use a hand blender to blend the soup right in the pot. Just be sure to keep it pointing down and keep the entire head of the blender under the surface of the soup (to avoid spraying yourself with hot green liquid!).
  • Add the reserved asparagus tips to the pea soup and simmer for 5 minutes, or until tender.
  • Pour the soup into warmed serving bowls. Swirl a little whipped cream into each (we set a round of goat cheese on the surface of the soup, so it melted in a bit) and sprinkle with the crispy bacon pieces, croutons, and some freshly ground black pepper to serve.

  • To roast the asparagus, preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. Remove the tough end of the asparagus and discard. Toss the asparagus in olive oil and place on baking sheet. Sprinkle with salt and pepper and bake for 20 minutes until very soft. You do not want the asparagus to be undercooked or the soup will not be as smooth. Cooking time will vary based on the thickness of your asparagus so watch closely toward the end of baking to avoid burning.
  • While the asparagus is roasting, saute the shallot and garlic with olive oil, salt and pepper in a large pot for 5 minutes on medium-low heat until the shallot is soft and translucent. Add the broth, milk, peas and allow the liquid to come to a boil on high heat. Reduce the heat to low and add the spinach and parsley. Cook for an additional minute or two. You don’t want to overcook the soup. You just want the spinach and parsley to be slightly wilted and the peas to be cooked through. Let simmer on low heat until the roasted asparagus is ready or remove from heat completely to avoid overcooking.
  • Once the asparagus is finished roasting add everything to a high speed powerful blender (roasted asparagus and everything in the pot goes in the blender at this time). Note: You may want to reserve a couple asparagus spears for garnish. For me, all ingredients fit perfectly in one batch. Depending on your blender though, you may need to blend in two batches. Puree from low to high speed and leave on the highest speed for 40-60 seconds to allow the soup to get smooth and creamy.
  • Pour soup into 2-4 bowls and garnish with roasted asparagus, additional parsley and peas if desired. Enjoy hot.
