Number Of Ingredients 10

250 g/8 oz pasta ((fettuccine or penne are recommended))
1/4 cup (56 g/2 oz) unsalted butter
1 small onion (, finely diced)
3 cloves garlic (, minced)
300-400 g mushrooms ((portabella, cremini, champignon), thinly sliced)
salt and ground black pepper (, to taste)
1 1/2 cups (360 ml) heavy cream or half and half
pinch of nutmeg (, ground or freshly grated)
1/4 - 1/2 cup grated parmesan
2 tablespoons chopped fresh parsley leaves or chives (, for garnish, optional)

Steps:

  • In a large pot, bring 2-2.5 quarts/liters of water to a boil. Add 1/2 tablespoon salt, followed by the pasta. Cook until al dente (i.e., slightly firm to the bite, not crunchy nor soft). Drain well.
  • As the pasta boils, make the sauce: In a large skillet (large enough to accommodate the pasta), melt 2 tablespoons butter over medium or medium-high heat. Add onion and sauté until tender, stirring occasionally. Add garlic and mushrooms, and cook until mushrooms are tender, about 4-5 minutes. Season with salt and pepper to taste.
  • Add the rest of the butter and heavy cream, and bring just to a boil. Reduce heat and let simmer for several minutes, until sauce has thickened slightly. Stir in nutmeg. Add 1/4 cup parmesan, then more if desired. Adjust seasoning to taste. Stir in pasta and cook on very low heat, tossing to combine for 1 minute until warm.
  • Serve immediately. Garnish with parsley or chives if desired.

2 tablespoons olive oil
4 fresh sage leaves
Kosher salt and ground black pepper
1 pound mixed wild mushrooms, sliced
1 pound fresh fettuccine
1 cup frozen peas (no need to defrost)
1 cup chicken stock
1 clove garlic, grated on a rasp
3 cups grated Pecorino Romano cheese
2 cups heavy cream

Steps:

  • For the pasta: In a large pan with sides and a lid, add the olive oil over medium heat. Add the sage and fry until just crisp, 2 to 3 minutes. Remove to a paper towel-lined plate and season with a tiny pinch of salt.
  • Add the mushrooms to the pan and cook, stirring, until wilted and darkened, 5 to 8 minutes; season with salt and pepper. Add the pasta, peas and chicken stock. Cook, stirring and tossing, until all the liquid is absorbed, 1 to 2 minutes.
  • For the 1-2-3 alfredo sauce: Add the garlic to the pan and toss, then add the cheese and heavy cream. Stir to coat everything, then cover and reduce the heat to low. Cook, covered, until the sauce has combined and thickened slightly, about 8 minutes.
  • Top each portion with a fried sage leaf.

1 pound button mushrooms, thinly sliced
1 cup finely chopped yellow onion
3 tablespoons minced garlic
1/2 cup all-purpose flour
7 cups milk
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1 pound spinach, stemmed, washed, blanched and roughly chopped
3 cups grated Parmesan
2 tablespoons olive oil, plus more for coating casserole dish
2 pounds boneless skinless chicken breast
1 tablespoon Essence, recipe follows
1 pound oven-ready lasagna sheets
1 tablespoon butter, cut into 8 pieces
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the mushrooms and cook, stirring often until the mushrooms are browned and most of the liquid has evaporated, about 5 to 7 minutes. Add the onions and garlic to the pan and saute until soft and translucent, 3 to 4 minutes. Add the flour and cook, stirring with a wooden spoon, to make a light roux, about 2 minutes. Whisking constantly, slowly add the milk and continue to cook, stirring occasionally until thickened, 5 minutes. Add 1 1/2 teaspoons of the salt, pepper, nutmeg, spinach and 1 1/2 cups of the Parmesan and cook, stirring, until thickened, about 2 minutes. Remove from the heat. Place a piece of plastic wrap directly on the surface of the bechamel sauce until ready to assemble the lasagna.
  • Set a large, 12-inch saute pan over medium heat and add the olive oil. Season the chicken with the Essence and remaining 1/2 teaspoon of kosher salt and place in the hot pan. Sear the chicken, stirring occasionally, until golden brown and cooked through, about 4 to 5 minutes. Transfer to a plate to cool and set aside. When cool, cut into bite size pieces.
  • Preheat the oven to 375 degrees F.
  • Coat a 9 by 13 by 3-inch casserole with olive oil, and spread about 1/2 cup of the bechamel sauce on the bottom of the dish. Lay 3 sheets of pasta across the bottom of the dish and spread 3/4 cup of the bechamel sauce over the pasta. Sprinkle 1/4 of the chicken over the bechamel sauce, then sprinkle with 1/4 cup of the remaining Parmesan. Lay another 3 sheets of pasta over the chicken. Repeat 2 additional times with the remaining bechamel sauce, chicken, Parmesan, and pasta, ending with a layer of pasta covered with bechamel sauce. Sprinkle the remaining 1/2 cup of Parmesan over the bechamel sauce and scatter the butter pieces over the top. Place the casserole on a parchment paper-lined baking sheet and bake, uncovered, until bubbly and well browned, about 45 minutes. Remove from the oven and allow to cool for at least 20 minutes before serving.

4 slices bacon
1 tbsp butter
1 tbsp olive oil
2 lbs chicken breasts, boneless skinless (cut into bite size pieces)
1/2 tsp salt
1/4 tsp ground black pepper
1 cup sliced white mushrooms
3 garlic cloves (minced)
1/2 chicken bouillion cube
3 tbsp water
2 cups half and half (or whole milk)
2 tbsp cornstarch
1/4 cup grated Parmesan cheese
1/2 tsp dried oregano
3 tbsp fresh parsley (chopped, for garnish)
8 oz fettuccine pasta

Steps:

  • Cook pasta according to instructions on the package. Drain, keep warm.
  • In a large deep pan, cook bacon until crispy. Remove onto a paper towel lined plate. Drain most of the bacon grease from pan. Add one tablespoon of butter and one tablespoon of olive oil. Add garlic and cook for about 1 minute, stirring often.
  • Add chicken pieces, salt and pepper. Cook until chicken is no longer pink, about 7 to 9 minutes. Stir often, keep loosely covered most of the time.
  • Add mushrooms to chicken in pan. Cook until soft, stirring often. Add chicken bouillion cube and water. Stir until cube dissolves.
  • In a medium mixing bowl, whisk together half and half, cornstarch, Parmesan and oregano. Whisk well. Add to pan. Bring to boil, lower the heat to simmer and cook for 5 minutes or until the sauce thickens.
  • Crumble or chop bacon. Add pasta and bacon and stir to coat with sauce.Serve garnished with fresh parsley.

1 pint heavy whipping cream
1 ¼ cups butter, divided
¾ cup grated Romano cheese

1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
1 pound of baby portobello (cremini mushrooms, cut in half)
3 cloves of garlic (minced)

1 3/4 cup of low-sodium chicken broth
1 1/2 cups of heavy cream
8 oz uncooked fusilli pasta
2 cups 4 oz of freshly shredded parmesan cheese
kosher salt and freshly ground pepper (to taste)
1/2 cup of fresh flat leaf parsley (minced)

Steps:

  • Season chicken breasts with 1/2 teaspoon of salt and freshly ground pepper.
  • In a large sauté pan over medium high heat, brown chicken pieces in olive oil.

1 1/4 c fresh mushrooms ((cremini), sliced)
2 tsp dried porcini mushrooms
1 Tbsp olive oil
1 onion, (chopped)
2 cloves garlic, (minced)
1/4 cup heavy cream
1/2 c pasta water ((more or less to get desired thickness))
a pinch of nutmeg
60 g (2 oz) pasta
salt, (pepper)
3 Tbsp grated Parmesan cheese + some more for garnish
1 Tbsp chopped fresh parsley

Steps:

  • Soak dry porcini mushrooms in 1/2 cup hot water for about 10 minutes.
  • Cook pasta according to package directions. Drain, reserving about a cup of water.
  • Saute onion and garlic in olive oil for about 2-3 min.
  • Drain soaked mushrooms and add them to the pan together with fresh mushrooms and cook until soft. Add a little bit of water if necessary, a tablespoon at a time.
  • Add cream, some more pasta water (if the sauce is too thick) and a pinch of nutmeg. Season to taste with salt and pepper. Serve sprinkled with Parmesan cheese and parsley.

Make the popular Italian-American pasta dish, chicken alfredo. We've used chicken, spinach and crispy bacon crumbs, but mushrooms are good, too

6 smoked streaky bacon rashers
1 tbsp olive oil
4 boneless, skinless chicken thighs
½ tsp dried oregano
3 garlic cloves, crushed
1 chicken stock cube
1 heaped tbsp plain flour
300ml double cream
500g short pasta (we used rigatoni)
100g parmesan, grated
2 tsp Dijon mustard
100g baby spinach, roughly chopped
large handful of fresh or dried breadcrumbs
3 tomatoes, chopped

Steps:

  • Heat the grill to high. Put the bacon rashers on a baking tray lined with foil and grill for 5 mins on each side until crisp. Leave to cool, then roughly chop.
  • Heat the oil in a large saucepan or high-sided frying pan over a high heat. Season the chicken, then brown on both sides. Sprinkle over the oregano and add the garlic, then stir for another minute. Crumble in the stock cube and add 250ml water.
  • Bring to a simmer, cover and reduce the heat to low-medium. Cook until the chicken is tender, about 15-20 mins, topping up with more water if the pan looks dry. Transfer the chicken to a board using tongs, then shred using two forks. Return the shredded chicken to the pan with the sauce.
  • Whisk the flour into the cooking juices in the pan, turn up the heat and keep stirring until you have a smooth paste that clings to the chicken. Add 500ml water and the cream, then simmer, stirring occasionally for 8-10 mins, or until the sauce has thickened.
  • Meanwhile, cook the pasta in a large pan of boiling salted water for about 10 mins until it is just cooked but retains some bite. Drain.
  • Add most of the parmesan, the mustard, spinach and half the chopped bacon to the sauce, then season to taste, if needed. Stir until the spinach has wilted, then stir in the cooked pasta.
  • Tip the mixture into a large baking dish. Mix the breadcrumbs with the remaining parmesan and scatter over the top along with the tomatoes and remaining chopped bacon. The unbaked dish can now be frozen for up to two months (see below).
  • To cook straightaway, heat the oven to 200C/180C fan/gas 6. Bake for 35-40 mins, or until the top is golden and crunchy and the sauce is bubbling.

400 g (14 oz) penne or another type of short pasta
2 tablespoon olive oil
1 large onion, finely chopped
30 g (1 ounce) dried porcini mushrooms, rehydrated in hot water for at least 30 minutes
300 g (10 oz) chestnut mushrooms (can replace with Forestiere or Portobello)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 cloves of garlic, minced
100 ml (1/2 cup) white wine
120 ml (1/2 cup) vegetarian stock (or mushroom stock)
250 ml (1 cup) double (heavy) cream
75 g (2.5 oz) grated Parmesan
60 g (2 oz) mozzarella cheese, grated
60 g (2 oz) mature cheddar, grated
1/2 bunch parsley, optional

Steps:

  • To make this vegetarian pasta bake, preheat the oven to 190C/375F. Boil the pasta in a large pot of salted water, two minutes less than recommended on the pack. Drain the pasta, reserving 1/2 cup of water.
  • Meanwhile, heat the olive oil in large pan on medium heat and add the chopped onion. Cook for 3-4 minutes, stirring occasionally, until it softens.
  • Add the garlic and cook for 1 minute until fragrant.
  • Next, add the porcini mushrooms and 2 tablespoons of the water they rehydrated in. Allow to bubble and add the other mushrooms. Cook for 3-4 minutes until the mushrooms are soft and tender.
  • Turn up a heat, add the white wine, and allow it to bubble for 2 minutes, then turn the heat back to medium.
  • Add the stock, cream, and half of the parmesan to the pan. Stir well until everything's combined.

  • Bring a large pot of water to boil. Cook the pasta for 5 minutes - it should still be a little firm. Drain, toss with a drizzle of oil, and set aside.
  • Bring a large pot of water to a boil, add the cauliflower, and cook for 5 minutes until tender-crisp. Meanwhile saute the minced garlic with a tablespoon of butter. After some experimentation I came up with this recipe for my Mother-in-Law's birthday party and it was unbelievable. Everyone loved it! I served it over tortellini, but generally I'll just serve it over wheat pasta noodles.

2 cups portabella mushrooms or 2 cups cremini mushrooms
2 -3 garlic cloves, minced
1 small white onion (optional)

1 cup mozzarella cheese
16 ounces thin spaghetti noodles (optional)

Steps:

  • Melt half the butter in medium saucepan over medium/low heat.

1 1/2 C raw cashews, soaked for 20 minutes in hot water
1 C fresh water (1/2 a cup if using tofu instead of cashews)
1 tsp apple cider vinegar
1 tbsp lemon juice
2 tbsp olive oil
1 C finely chopped white onion
2 large portobello mushroom caps, thinly sliced
4 C thinly sliced cremini mushrooms
4 garlic cloves, minced
1/2 tsp sea salt
1/2 tsp ground black pepper
1/2 C dry white wine (vegan friendly)
2 tbsp finely chopped fresh basil
1 tsp dried parsley
4 C fresh baby spinach
1 C low-sodium vegetable stock
2/3 C raw cashews
1/4 C nutritional yeast
1 tsp sea salt

Steps:

  • To make the vegan parmesan, combine ingredients together in a food processor until a fine crumb or meal is formed. Store in a jar or container in the fridge. This will last up to 3 weeks.
  • Bring a large pot of salted water to a boil. Cook noodles to al dente. Drain but do not rinse.
  • Meanwhile, rinse and drain cashews from the soaking water and add to a high-powered blender along with water, apple cider vinegar, and lemon juice. Blend until very smooth.
  • In a large pan over medium heat, sauté onion in olive oil for 2 minutes until soft and fragrant.
  • Add mushrooms and cook for 4 minutes. When mushrooms are half cooked and start to release some moisture, stir in minced garlic, sea salt, and ground black pepper and cook for another 3 to 4 minutes.
  • Once mushrooms have shrunk and released all their water, add in white wine (or replace with an equal amount of low-sodium vegetable stock, plus 1 to 2 teaspoons of lemon juice) and simmer for 7 minutes. Reduce heat to medium-low, stir in fresh basil and dried parsley, and cook for another minute.
  • Stir in the cashew cream, spinach, and slowly stir in 1 cup of low-sodium vegetable stock. Stir for about 4 minutes.
  • Add noodles to the pan and toss to combine everything well, and coat noodles in sauce for 3 minutes.
  • Add 2 to 3 tablespoons of vegan parmesan and toss to combine. Serve with more vegan parmesan and ground black pepper as garnish.

1/4 cup pasta water
2 tbsp butter

  • Heat a large frying pan over medium-low heat and add the oil and minced garlic to the warm pan. Saute the garlic until soft and fragrant, about 3 minutes. Boil salted water for pasta.
  • Add the sliced mushrooms to the pan. Saute until the mushrooms begin to brown, about 5 minutes. Add 1 tsp of salt to the mushrooms and saute for another minute.
  • At this point add the pasta to the boiling water to cook.
  • Add the butter to the pan with the mushrooms and saute until it melts. Once the butter melts pour in the heavy cream and let it simmer with the mushrooms for 4 minutes. Slowly mixing in the parmesan cheese and continuously stir until the cheese melts and mixes in.
  • Reserve 1/4 cup of the pasta water and drain the cooked pasta. Mix the pasta water and cooked pasta in with the sauce. Toss to combine and cook for another 2 minutes. Serve with fresh basil, parmesan cheese and truffle oil
