Here's what you need: ham, eggs, egg yolks, white vinegar, butter, lemon juice, salt, black pepper, english muffins

6 slices ham, canadian-style bacon
6 eggs
3 egg yolks
½ teaspoon white vinegar
½ cup butter, melted
4 tablespoons lemon juice
salt, to taste
black pepper, to taste
3 english muffins, split in halves

Steps:

  • Egg Cups: Grease a large muffin tin. Place a slice of ham in each tin, then crack an egg over each slice of ham. Cover with tin foil, then bake at 350˚F (175˚C) for 8-10 minutes (eight minutes if you like your yolk very runny).
  • Hollandaise sauce: Fill the bottom of a double boiler part-way with water. Make sure that the water doesn't touch the top bowl. Bring water to a gentle simmer. In the top of the double boiler, whisk together three egg yolks and ½ tsp white vinegar until well mixed.
  • Slowly pour the melted butter in the egg yolk mixture, a little at a time, while constantly whisking. If you pour too much too quickly without whisking, the mixture might not thicken or mix properly. If the hollandaise gets too thick, add a teaspoon or two of hot water. Continue whisking until all the butter is incorporated.
  • Remove from heat, whisk in lemon juice, salt, and pepper.
  • Place a toasted English muffin half down, layer the ham and egg cup on top of the English muffin, then drizzle your hollandaise sauce over the egg.
  • Enjoy!

1 red bell pepper, chopped
8 large eggs
2 ¾ ounces fully-cooked bacon pieces (such as Oscar Mayer®)

1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
salt and ground black pepper to taste
½ (8 ounce) package shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.

12 eggs
3 tablespoons nonfat greek yogurt
2 tablespoons relish
1 tablespoon mustard
1 tablespoon hot sauce
salt, to taste
pepper, to taste
paprika, to serve
fresh parsley, chopped, to serve
nonstick vegetable oil cooking spray
aluminum foil

Steps:

  • Crack twelve eggs, and separate the yolks and egg whites into separate bowls.
  • Preheat oven to 300°F (150°C).
  • Spray a mini muffin tin with nonstick spray. Pour each yolk and egg white into its own mini muffin tin hole.
  • Place the tin into a baking dish with a tinfoil ring, wire wrack, or a towel to keep the muffin tin from touching the bottom of the baking dish directly (so the eggs steam gently in the oven and don't turn brown).
  • Cover the eggs and the baking dish tightly with aluminum foil. Make sure the foil tents up so it doesn't touch any of the eggs.
  • Lift one edge of the foil and pour in boiling water ⅓ way up the muffin tin and re-cover with foil.
  • Place the eggs in the oven for 13 minutes. Check to make sure the egg whites and yolks are both fully cooked.
  • Remove foil and muffin tin from baking dish and let cool.
  • With a thin knife, remove the egg yolks and egg whites from the tin. Set the egg whites aside.
  • In a bowl, combine the cooked egg yolks, Greek yogurt, relish, mustard, hot sauce, salt, and pepper. Mix with a fork until well combined.
  • Place the mixture in a piping bag with a desirable tip and pipe the yolk mixture onto the cooked egg whites. Sprinkle with paprika and chopped parsley.
  • Enjoy!

10 large eggs
2 teaspoons kosher salt (see Cook's Note)
8 ounces cooked ground sausage (sweet Italian, spicy, chorizo)
9 mini sweet peppers (about 9 ounces), cut into 1/2-inch pieces, sautéed until tender
12 strips cooked bacon, crumbled into large pieces
6 slices American cheese, crumbled into large pieces
3/4 cup shredded cooked chicken (about 8 ounces)
3 tablespoons Buffalo chicken sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Crack the eggs into a large bowl, add the salt and whisk to combine. Divide the mixture evenly among the muffin cups. Top with desired variation ingredients. Bake until the centers of the muffins no longer jiggle, 17 to 20 minutes.
  • Let the muffins cool in the pan for 5 minutes. Run a knife around the edges of the muffins, unmold and serve. If storing, allow to cool completely, place in a resealable plastic bag and refrigerate or freeze.
  • To reheat, microwave the muffins one at a time for about 30 seconds if refrigerated, 1 minute if frozen. You can also heat them in a 250-degree-F oven until warmed through.

12 eggs
12 slices ham (thin)
6 slices swiss cheese, halved
8 ounces heavy cream
parmesan cheese

Steps:

  • preheat oven to 450 degrees f.
  • Spray muffin tins with nonstick cooking spray.
  • Place 1 ham slice in each tin like a nest.
  • Place 1/2 slice swiss cheese on each ham slice that is partially cooked.
  • Crack one egg over each.
  • Pour about a tablespoons of heavy cream over each.
  • Sprinkle each with a little parmesan cheese to taste.
  • Place back in oven and bake about 10-15 minutes. (Check jiggliness to your liking...don't overdue or will be more hard boiled.)
  • Remove and rest 5 minutes.
  • Serve on toasted English muffins.
  • Note- can cook longer if you like a hard boiled egg rather than soft boiled or even"scramble" egg before pouring into tins.

2 tablespoons unsalted butter, melted
1 teaspoon prepared yellow mustard
1/4 cup diced onion
2 tablespoons olive oil
3 cups fresh Baby Spinach
1/4 cup seeded and diced tomato
salt, to taste
ground black pepper, to taste
red pepper flakes, to taste
6 eggs, room temperature
1 cup shredded swiss cheese
1 cup goat-cheese hollandaise sauce
1 cup unsalted butter
1/3 cup distilled white vinegar
1/3 cup water
1/2 teaspoon black peppercorns, crushed
3 eggs
2 tablespoons goat cheese (room-temperature)

Steps:

  • PREPARE BASKETS:.
  • Preheat oven to 350º; coat a jumbo muffin pan with nonstick spray.
  • Roll the 6 muffin halves a bit larger using a rolling pin to flatten.
  • Place a muffin half in each muffin tin, pressing up the sides to form baskets.
  • Combine the melted butter and mustard ina small bowl, then brush onto the baskets.
  • Toast baskets in the oven until slightly browned about 15 minutes.
  • Sweat onion and garlic in oil in a sauté pan over medium-low heat until softened, about 5 minutes.
  • Add spinach and cook until just starting to wilt: stir in tomatoes.
  • Remove from heat; season to taste (don't forget the red pepper flakes).
  • Place 1 egg into each toasted basket.
  • Divide cheese and spinach mixture evenly among the 6 baskets.
  • Return to oven and bake 15 minutes.
  • Remove from oven and lift baskets from the pan with a knife.
  • Serve immediately with Goat-Cheese Hollandaise sauce if desired.
  • GOAT-CHEESE HOLLANDAISE:.
  • Melt butter in a small saucepan, over low heat; skim off and discard the foam that rises to the top.
  • Remove butter from heat.
  • Boil vinegar, water and peppercornns in a small saucepan over high heat until reduced to 3 T liquid; stain and set aside.
  • Simmer 1 inch of water in a medium saucepan over medium-low heat.
  • Whisk egg yolks in a medium stainless steel bowl; place bowl over simmering water (don't let bowl touch the water) -- add vinegar,reduction and whisk vigorously until the yolks thicken to the point that the whisk leaves trails in them, about 2 minutes.
  • Whisk 1 T room-temperature goat cheese into the thickened egg yolk mixture.
  • Remove bowl from the pan; begin whisking in the warm clarified butter a drop at a time.
  • As it is incorporated add th butter in a thin stream.
  • If mixture gets cold, return bowl to the pan of simmering water and continue whisking in butter; after all the butter is incorporated, whisk in the remaining goat cheese and adjust seasoning to taste.
