Paleo. Breakfast. On-the-go. For some reason individual cupcake liners don't work so well for these little quiches. Grease the tin with olive oil or butter.

2 tablespoons olive oil, divided, or as needed
4 slices bacon, chopped
½ cup diced onion
½ cup chopped spinach
½ cup chopped mushrooms
6 eggs, beaten
¼ cup crumbled feta cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease 12 muffin cups with olive oil.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain.
  • Saute onion, spinach, and mushrooms in the same skillet until onions are soft, 5 to 10 minutes. Remove from heat and cool slightly.
  • Blend onion mixture in a blender until smooth. Beat onion mixture, eggs, feta cheese, and bacon together in a bowl until batter is well-combined. Pour batter into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 35 minutes.

1 bunch green onions, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
8 large eggs
2 ¾ ounces fully-cooked bacon pieces (such as Oscar Mayer®)
¼ cup whole milk
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
salt and ground black pepper to taste
½ (8 ounce) package shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.
  • Pour mixture equally into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.

Number Of Ingredients 9

1 tbsp oil
150g broccoli , finely chopped
1 red pepper , finely chopped
2 spring onions , sliced
6 large eggs
1 tbsp milk
large pinch of smoked paprika
50g cheddar or gruyère, grated
small handful of chives , chopped (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 4. Brush half the oil in an 8-hole muffin tin. Heat the remaining oil in a frying pan and add the broccoli, pepper and spring onions. Fry for 5 mins. Set aside to cool.
  • Whisk the eggs with the milk, smoked paprika and half the cheese in a bowl. Add the cooked veg. Pour the egg mixture into the muffin holes and top each with the remaining cheese and a few chives, if you like. Bake for 15-17 mins or until golden brown and cooked through.

4 large eggs
1/4-1/2 cup cheddar cheese, shredded (I used half cheddar and half pepper jack)
frozen peppers and onions, sliced, enough to suit your personal tastes
1 tablespoon milk (I used whole milk)

Steps:

  • Preheat oven to 350 and spray muffin tin with nonstick cooking spray. (Do NOT be stingy with the spray - be sure to coat it WELL!).
  • Whisk eggs until well beaten and add milk, desired amount of cheese and peppers. Mix well.
  • Fill 6 muffin cups 3/4 full with egg mixture. Bake for about 16 minutes or until just done. DO NOT OVERCOOK AS THIS WILL DRY OUT THE EGGS AND MAKE THEM HARD!

3 teaspoons baking powder
1 teaspoon baking soda

1 cup low-fat milk
1/2 cup applesauce
1 -2 mashed banana
1/2 cup raisins with 1 tsp cinnamon
1/2 cup chocolate chips
1/2 cup blueberries or 1/2 cup fruit

  • 1. Mix all ingredients until combined. Do not overmix!

Nonstick cooking spray
10 large eggs
2 teaspoons kosher salt (see Cook's Note)
8 ounces cooked ground sausage (sweet Italian, spicy, chorizo)
9 mini sweet peppers (about 9 ounces), cut into 1/2-inch pieces, sautéed until tender
12 strips cooked bacon, crumbled into large pieces
6 slices American cheese, crumbled into large pieces
3/4 cup shredded cooked chicken (about 8 ounces)
3 tablespoons Buffalo chicken sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Crack the eggs into a large bowl, add the salt and whisk to combine. Divide the mixture evenly among the muffin cups. Top with desired variation ingredients. Bake until the centers of the muffins no longer jiggle, 17 to 20 minutes.
  • Let the muffins cool in the pan for 5 minutes. Run a knife around the edges of the muffins, unmold and serve. If storing, allow to cool completely, place in a resealable plastic bag and refrigerate or freeze.
  • To reheat, microwave the muffins one at a time for about 30 seconds if refrigerated, 1 minute if frozen. You can also heat them in a 250-degree-F oven until warmed through.

1 tablespoon olive oil
1 cup red pepper
1 cup green pepper
1 cup yellow onion
2 cups Baby Spinach, roughly chopped
1 cup mushroom
2 garlic cloves, minced
1 pinch salt, to taste
4 whole eggs
4 egg whites
hot sauce (optional for drizzling on top)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a standard 12-slot muffin pan with cooking spray and set aside.
  • Heat a large non stick skillet over medium heat.
  • Once hot, add in oil, red pepper, green pepper, and onion.
  • Saute 5-7 minutes, or until peppers are tender.
  • Add in spinach and mushrooms and cook for an additional 2 minutes.
  • In the last 30 seconds, add in minced garlic.
  • Season with salt and remove from heat.
  • Crack eggs/egg whites into a large 4 cup measuring cup and whisk together.
  • Stir in cooked veggies.
  • Pour the egg/veggie mixture evenly into the prepared muffin pan.
  • Bake for 15 minutes, or until the tops are firm to the touch and eggs are cooked.
  • Cool slightly and serve immediately!
  • NOTE: Leftovers can be stored in an airtight container in the fridge for about 4 days. These may also be frozen. To reheat, pop them in the microwave until warm.

6 eggs
2 slices white bread
3 slices bacon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease muffin cups.
  • Fry bacon until crisp. Allow bacon to cool.
  • Butter bread slices with melted butter.
  • Tear bread into pieces and place in muffin cups.
  • Place crumbled bacon on top, then eggs on top that.
  • Drizzle a bit of bacon drippings on top.
  • Bake aproximately 15 minutes until eggs are set, or a bit longer if you liked hard cooked eggs.
  • Remove from oven and serve hot or cooled a bit.
