MAKING CRISPY ONION RINGS
This recipe for onion rings is so easy and so amazingly crispy, you can now make up for all those years of deep-fried denial by making these at home.

Steps:
- Whisk together flour, cornstarch, dry potato flakes, and cayenne pepper in a large bowl. Whisk in club soda to make a smooth batter.
- Place panko bread crumbs in a shallow bowl.
- Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
- Place a few onion rings at a time into the bowl of batter and turn to coat all sides with batter.
- Remove onion rings from batter and place into pan of panko bread crumbs; turn to coat completely with crumbs.
- Cook a few rings at a time in the hot oil until golden brown, about 2 to 3 minutes.
- Transfer to a cooling rack set over paper towels to drain. Season with salt to taste and serve.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

- Slice the shallots VERY THINLY-- cut them in half and julienne your way through-- Heat oil in frying pan-- chuck the shallots in the very hot oil until they turn brown and crunchy-- be sure that there's significant colour change but careful that they don't burn!
- Drain the shallots, place on a plate over paper towel to take out excess oil, and sprinkle with salt.
- When they cool, store in an airtight jar.

Steps:
- Rinse the onion and cut into approximately ¼ inch rings
- Carefully separate the rings from each other (setting aside the smaller ones for other recipes)
- Combine the flour, baking powder, salt and paprika in a medium bowl.
- Coat each onion ring in the flour mixture and set aside
- Combine the remaining flour mixture that you coated the onions with, with the milk, egg, and salt and beat well until no lumps remain
- Coat each onion ring in the above mixture and shake away the excess
- Coat each onion ring in breadcrumbs

- In a very large pot (or deep fryer), heat the oil to 365°.
- In a bowl, whisk the flour with the cornstarch, baking soda and 2 teaspoons of salt.
- Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If needed, add the remaining 1/2 cup of club soda, a few tablespoons at a time.
- Working with 6 or 7 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.
- Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes.
- Drain the onion rings on paper towels.
- Sprinkle the onion rings with salt and serve immediately or keep warm in an oven on low heat while you coat and fry the rest. Enjoy!

CRISPY BAKED ONION RINGS
These crispy baked onion rings are so easy to make and an ideal snack when you are craving something fried. Serve them as a side to burgers, sandwiches, or part of a party food spread.

- Cut off the stem end of the onion, peel back the skin, and cut the onion into 1/2-inch slices. Separate the onion slices into rings and discard or save the ends for making stock.
- Bowl 1: Add the 2 tablespoons of flour to a medium bowl. Set aside.
- Bowl 2: Crack the egg into a medium bowl and scramble slightly. Add the milk, melted butter, and 1/2 cup of flour. Stir to combine and set aside.
- Bowl 3: Combine the panko breadcrumbs, cornmeal, dried parsley, paprika, chili powder, garlic powder, pepper, and salt.
- Preheat the oven to 425˚F, and spray two large baking sheets with cooking spray or layer with parchment paper.
- Drop each onion ring into the flour bowl and coat thoroughly with flour.
- Remove the onion ring from the flour and drop it into the egg mixture. Flip to coat entirely.
- Remove the batter-coated onion ring, let the extra batter drip off, and then drop it into the breadcrumb mixture and coat completely.
- Carefully remove the breaded onion ring without shaking off the coating, and place it on the prepared baking sheet.
- Repeat with the remaining onion rings and place them on the baking sheet without touching each other. You can put little rings inside of big ones to save space.
- Bake the onion rings in a preheated oven until crispy, about 15 to 20 minutes. Turn over about halfway through so each side browns evenly.
- Preheat your air fryer to 425˚F for about 5 minutes. Lay the coated onion rings in a single layer in the air-fryer basket, leaving a little space in between each ring.
- Return the basket to the air fryer and cook 15 to 20 minutes, or until crispy and golden. Flip about halfway through so they cook evenly. Repeat with the remaining onion rings.
- Serve warm with ketchup or your favorite dipping sauce. Serves 2.

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

- Line two baking sheets with parchment paper or foil and and spray or lightly grease with avocado oil.
- Next, set up your dipping station by adding your flour to a large ziplock bag and setting up 2 bowls- one with the egg and one with half of the breadcrumbs and seasoning salt (it works best to do 2 batches of the breadcrumbs, otherwise they get too wet from the egg and clump together).
