Be warned that this recipe is for pumpkin lovers only! I use my homemade pumpkin puree that I make each autumn and freeze in 2-cup increments, but canned solid-pack pumpkin should work just fine. If you find the pumpkin flavor too intense, try adding a frozen banana. You can play around with the flavors easily by adding some vanilla extract or pumpkin or apple pie spice instead of just cinnamon. My 5-year old and 1-year old love it as the recipe is written. Another option is to not freeze the pumpkin and heat everything through to a simmer for a hot drink.

1 (16 ounce) can pumpkin puree
2 cups milk
¼ cup brown sugar
2 teaspoons ground cinnamon

Steps:

  • Place the pumpkin puree in a freezer bag; store in freezer for at least 24 hours.
  • Heat the bag of pumpkin puree in the microwave on HIGH to soften, 1 to 2 minutes.
  • Pour the milk into a blender. Add the brown sugar, cinnamon, and pumpkin; blend until smooth.

  • Combine vanilla soy milk, pumpkin puree, ice, banana, vanilla protein powder, and ground cinnamon in a blender; blend until smooth.

2 cups canned pumpkin
1/2 cup vanilla soy milk
1/2 cup vanilla yogurt
1 tablespoon pumpkin spice
1/2 lemon, juiced
1 dash vanilla extract, plus 2 dashes
1 1/2 cups crushed ice
1 naval orange
1 cup low-fat whipping cream, plus garnish
5 teaspoons powdered sugar
Cinnamon sticks, for garnish

Steps:

  • In a blender, combine pumpkin, soy milk, yogurt, pumpkin spice, juice of half a lemon, and 1 dash of vanilla extract. Blend together until smooth, and begin adding the ice while continuing to blend. When mixture is thick and creamy, stop and hold in refrigerator at least 30 minutes. Cut off the top 1/3 of the orange. Remove the inside of the orange and reserve the rind. In a medium mixing bowl, combine cream, powdered sugar, and the remaining vanilla extract; then whip on high until a stiff peak forms. Transfer the smoothie into the orange rind, and garnish with whipped cream and cinnamon sticks.

  • Freeze the coffee in an ice cube tray. Blend the frozen cold brew cubes and ½ cup regular ice with the pumpkin, banana, milk, brown sugar and pumpkin pie spice in a blender until smooth. Pour into a glass and swirl in the yogurt with a spoon.
