CAROLINA SHE-CRAB SOUP

1 stick (8 tablespoons) unsalted butter
1 medium onion, diced
1 stalk celery, diced
1/3 cup all-purpose flour
1 teaspoon seafood seasoning
1/4 teaspoon grated nutmeg
1 bay leaf
Freshly cracked black pepper
1/3 cup dry sherry
1/3 cup clam juice
3 cups seafood stock
1/2 cup crab roe, plus a little more for garnish, optional
2 cups heavy cream, at room temperature
1 teaspoon Worcestershire sauce
Kosher salt
1 pound lump blue crabmeat

Steps:

  • In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and celery and cook, stirring occasionally, until the onion is soft and translucent, about 10 minutes.
  • Reduce the heat to medium low, whisk in the flour and continue to cook, stirring constantly. You are essentially making a roux without browning it. Stir in the seafood seasoning, nutmeg, bay leaf and pepper, then whisk in the sherry and clam juice. Increase the heat to medium and bring to a simmer. Cook, stirring frequently, until very thick, about 10 minutes. Stir in the seafood stock and crab roe, if using, bring to a simmer and cook for 15 minutes.
  • Add the heavy cream and Worcestershire, return to a simmer and cook until thickened and reduced slightly, another 15 minutes. Remove the bay leaf, then puree the soup with an immersion blender until smooth (or use a regular blender; let cool slightly first, and use caution when blending hot liquids). Season with salt. Stir in the crabmeat and garnish with crab roe if desired.

2 eggs, beaten
2 cups milk
2 cups seasoned croutons
8 ounces shredded Cheddar cheese
1 tablespoon dried minced onion
1 tablespoon dried parsley
1 pound fresh crabmeat
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.

CASSEROLE FILLING
2 lb crab meat, flaked, cartilage removed
1/2 lb velveeta cheese, cut in small cubes
(or use a package of velveeta cheese shreds)
1 Tbsp prepared horseradish
1 tsp tabasco sauce
salt and pepper to taste
1 1/2 tsp old bay seasoning
1/2 c real mayonnaise
2 Tbsp minced onion
1/2 stick (1/4 cup) melted butter
4 large eggs, beaten
TOPPING
1 bag unseasoned pepperidge farm bread crumbs
(or you can use panko bread crumbs)
1 stick (1/2 cup) butter

Steps:

  • 1. Drain crab meat well. Remove any bits of cartilage. Set aside.
  • 2. Preheat oven to 350°. In a large mixing bowl, stir together horseradish, Tabasco, salt, pepper, Old Bay seasoning, mayonnaise, onion, and 1/4 cup melted butter.
  • 3. Fold in beaten eggs, crab meat, and Velveeta cheese, mixing gently until uniform.
  • 4. Place mixture into a lightly oiled 9x13-inch baking dish.
  • 5. For topping, melt 1 stick butter in a skillet. Add crumbs and coat but do not brown.
  • 6. Spread topping on top of casserole. Bake at 350° until bubbly, about 45 minutes to 1 hour.

MRS. TAWES' CRAB CASSEROLE

Mrs. Tawes was the wife of a Maryland governor, many years ago, and my parents lived in Annapolis, MD, where the Chesapeake Bay watermen brought FRESH crabs to be steamed, picked, and sold. This was a meal meant for when the boss was coming to dinner, or non-Marylanders, to be impressed. The egg yolk mixture gave the appearance of lovely yellow crab fat, which every steamed crab lover craved to find inside the shell. This recipe doubles easily, or more, for the dinner party group or hearty eaters. Do not re-heat in microwave.

1 lb blue crab meat, back fin or jumbo lump
6 eggs, hard cooked
1 cup heavy cream
1 tablespoon butter
1 tablespoon flour
1/4 teaspoon dry mustard
1 tablespoon white vinegar
1 teaspoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 cup dry breadcrumbs

Steps:

  • Chop whites of eggs and add to crab meat. Handle gently so that crab lumps are not broken.
  • Add salt and pepper.
  • Mash egg yolks and set aside.
  • Make roux with butter and flour.
  • Add cream, egg yolks, dry mustard, vinegar, and oil, cooking gently and stirring constantly until thickened.
  • Pour while hot over crab and mix gently.
  • Place in buttered 1 quart casserole.
  • Cover top with bread crumbs.
  • Dot with butter.
  • Brown in 350 degree oven until just warm.

1/4 cup mayonnaise
1/4 cup onion, minced
2 eggs, lightly beaten
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound lump crabmeat, picked over
1 cup soda crackers, finely crushed
2 tablespoons unsalted butter
1/4 cup vegetable oil
Lemon wedges

Steps:

  • In a large bowl, combine the mayonnaise, onion, eggs, Worcestershire sauce, dry mustard, salt and cayenne. Fold in the crabmeat and 1/4 cup of the cracker crumbs. Shape the mixture into 16 cakes about 1-inch thick. Coat the crab cakes with the remaining cracker crumbs and transfer to a baking sheet lined with waxed paper. The crab cakes can be refrigerated overnight at this point, if needed.
  • In a large skillet, melt 1 tablespoon of the butter in 2 tablespoons of the oil. When the foam subsides, add half the crab cakes and cook over moderate heat until golden and crisp, 2 to 3 minutes per side. Drain the crab cakes on paper towels, then keep warm in a low oven. Repeat with the remaining 1 tablespoon of butter and 2 tablespoons of oil and cook the remaining crab cakes. Serve with lemon wedges.

Stir in flour, pepper and salt until blended; gradually add milk. Bring to a boil. Cook and stir 2 minutes or until thickened. Stir in crab and soup until blended., Drain pasta. Add crab mixture; toss to coat. Transfer to a greased 13x9-in. baking dish; sprinkle with cracker crumbs. , Bake, uncovered, 25-30 minutes or until bubbly.

2 (7 ounce) packages lump crabmeat, cut bite-size pieces
1/4 teaspoon salt
3 tablespoons butter
1 shallot, finely chopped
1 tablespoon tomato paste
3 garlic cloves, peeled and smashed
1/4 cup brandy or 1/4 cup chicken broth
1 cup water
1/2 cup heavy cream
1/8 teaspoon fresh ground black pepper
1/2 lb medium egg noodles, cooked & drained
1 tablespoon fresh lemon juice
6 fresh thyme sprigs

Steps:

  • Pick the crab meat, removing any shell or cartilage. Set aside. Cook and drain noodles. Set aside. Preheat oven to 350°. Lightly coat four 1-cup-capacity baking dishes or one 9" round baking dish with 1 tablespoon butter and set aside.
  • Melt remaining butter in a medium skillet over medium heat.
  • Add shallots and cook until soft.
  • Add tomato paste and garlic and cook, stirring continuously, for 5 minutes.
  • Move pan away from the heat and add brandy or chicken broth.
  • Return to heat and bring mixture to a boil, whisking continuously.
  • Reduce heat to medium low, add 1 cup water, and simmer until thickened slightly - about 10-12 minutes.
  • Strain mixture and stir in cream, remaining salt, and pepper.
  • Add egg noodles, crab meat, and lemon juice and toss to coat.
  • Divide mixture evenly among the prepared baking dishes, cover with foil, and bake until cooked through and the noodles are hot - about 20 minutes.
  • Garnish with thyme sprigs and serve immediately.
