CHANTILLY POTATOES (POMMES DE TERRE CHANTILLY)

French-style Chantilly potatoes are the ultimate fast and fancy side dish. The addition of whipped cream makes them extra light and fluffy.

6 tablespoons unsalted butter, plus more for the baking dish
2 1/2 pounds Yukon gold potatoes
2 tablepoons kosher salt
2 ounces Parmesan cheese, finely grated (about 1/2 cup)
1/2 cup whole milk
1 cup cold heavy cream

Steps:

  • Cut 6 tablespoons unsalted butter into 12 pieces and let sit at room temperature to soften. Coat an 11x7-inch or other 2-quart baking dish with unsalted butter. Arrange a rack in the middle of the oven and heat the oven to 400ºF. Meanwhile, prepare the potatoes.
  • Peel 2 1/2 pounds Yukon gold potatoes and cut into 1-inch cubes. Place the potatoes and 2 tablespoons kosher salt in a large saucepan, and add enough cold water to cover the potatoes by about an inch. Bring to a boil over high heat. Reduce the heat and simmer until the potatoes are very tender and can be easily pierced with a sharp knife with no resistance, 10 to 12 minutes. Drain and set aside until the potatoes are cool enough to handle but still warm. Meanwhile, finely grate 2 ounces Parmesan cheese (about 1/2 cup).
  • Pass the warm potatoes through a ricer or food mill into a large bowl. Add the butter and 1/2 cup whole milk, and mix well until combined and the butter is melted.
  • Pour 1 cup cold heavy cream into the bowl of a stand mixer fitted with the whisk attachment. (Alternatively, use an electric hand mixer and large bowl). Beat on medium-high speed to stiff peaks, 3 to 5 minutes.
  • Stir 1/3 of the whipped cream into the potatoes. Gently fold the remaining whipped cream into the potatoes with a rubber spatula. Gently transfer the potatoes into the prepared baking dish. Sprinkle the Parmesan over the potatoes in an even layer.
  • Bake until the potatoes are warmed through and the cheese is lightly browned, 20 to 25 minutes. Let rest 10 minutes before serving.

3 large baking potatoes
2 tablespoons butter
3 tablespoons heavy cream
1 egg yolk, well beaten
salt and pepper to taste
1 tablespoon grated Parmesan cheese
1/8 teaspoon anchovy paste
1 tablespoon finely chopped chives

Steps:

  • Heat oven to 400°F. Bake potatoes until fork-tender, about 1 hour. Cut in halves lengthwise, scoop out pulp without breaking shells. Mash pulp thoroughly. Add anchovy paste, chives, butter, cream, and egg yolk. Beat vigorously until light and fluffy. Season with salt and pepper. Spoon mixture into shells, sprinkle tops with cheese. Bake 15 minutes until tops are golden brown. Author's note: Mix some Parmesan cheese with paprika and sprinkle over potatoes for a nice presentation. Add a dollop of butter and place under broiler until mixture turns reddish brown and crunchy for a nice presentation.

4 medium-size baking potatoes
vegetable oil

Steps:

  • Peel potatoes and trim so that all surfaces are regular. Cut lengthwise into long, narrow, very even slices about 1/8-inch thick. Dry slices between pieces of paper toweling. Heat enough oil in a deep saucepan to fill pan half full. Heat oil to 350°F (use a deep-fat thermometer). Drop a handful of potato slices, one at a time, into the oil. Remove pan from heat and shake it to keep pieces moving constantly. When temperature reads 250°F, return pan to heat and shake it until slices begin to swell. Do not let the temperature of oil rise above 300? F Puffing will take about 8 minutes. Skim off potatoes and drain on a tray covered with paper toweling. Just before serving, heat the oil to 400°F. Drop the partially cooked slices into the hot oil. They will puff and rise to the surface. Turn constantly until browned. Drain. Sprinkle with salt. Serve hot.

6 (1 1/2-pounds) lobster
8 cups boiling water
3/4 cup butter or margarine
4 tablespoons flour
1 1/2 teaspoons salt
2 tablespoons dry white wine
4 tablespoons chopped canned mushrooms
1 tablespoon grated Parmesan cheese

Steps:

  • Drop lobsters into rapidly boiling water. When water returns to a boil, cook lobsters 15 minutes; remove and cool. Boil the water rapidly until it is reduced to 2 cups. Place each lobster on its back and with a sharp knife cut membrane the entire length of the body. Remove and discard the stomach portion, which is under the head. Remove meat from claws and body and cut into 1-inch pieces. Place body shells in a shallow baking pan. Melt 4 tablespoons of butter in a saucepan; add flour and salt. Gradually add 2 cups of the reduced liquid stirring constantly until smooth and thickened. Cook 15 minutes, stirring frequently. Add wine, mushrooms, and the remaining butter. Spread a little sauce in the bottom of each shell. Add lobster meat, top with rest of sauce, and sprinkle with cheese. Place 3 to 4 inches from heat in a preheated broiler and broil about 5 minutes, until mixture is hot and lightly browned.

  • Cut 3 large tomatoes into halves crosswise. Arrange on a flat pan. Sprinkle top surfaces with a mixture of 3 tablespoons fine dry bread crumbs and 1 tablespoon grated Parmesan cheese. Dot with a little butter or margarine. Place in a preheated broiler about 4 inches from heat and broil until crumbs are browned. Sprinkle the edges with chopped parsley. Author's note: Substitute bread crumbs with Italian seasoned bread crumbs for a nice touch.

1 cup sherry

Steps:

  • Cook the green peas in boiling, salted water and strain through a fine sieve or an electric blender to get a puree. Reheat. Add 1 tablespoon sweet butter, salt, and white pepper to taste. Blend with the green turtle soup and 1 cup sherry. Heat to just under the boiling point. Put the soup into serving cups. Cover each cup with a spoonful of unsweetened whipped cream and put the cups under the broiler to brown the topping. Serve immediately.

1 tablespoon Worcestershire sauce
2 cups crushed potato chips

Steps:

  • Grease a casserole dish.
  • Mix all ingredients except the potato chips together.

  • Sprinkle with paprika.

commercial sour cream

Steps:

  • Grate the rind from the orange and lemon; add to brown sugar with nutmeg. Cut orange and lemon into very thin slices. Drain and combine fruits. Butter a 1-quart casserole and arrange fruits in layers, sprinkling each layer with some of the brown sugar mixture. Bake 30 minutes at 350°F. Serve warm with a spoonful of sour cream on top. 1 (16-ounce) can red salmon
water
1 (.9-ounce) envelope unflavored gelatin
1 tablespoon onion juice
1/4 cup finely chopped celery
2 tablespoons chopped green peppers
1 cup heavy cream, whipped
1 large cucumber, thinly sliced
1 cup green-tinted mayonnaise

Steps:

  • Drain salmon and measure liquid. Add water to make 1-1/2 cups. Sprinkle gelatin over 1/2 cup of the liquid. Stir over low heat until gelatin is dissolved. Remove from heat, stir in rest of liquid and onion juice. Chill to consistency of unbeaten egg white. Flake fish and combine with celery and green pepper. Fold into chilled gelatin with whipped cream. Turn into a 1-quart mold. Chill until firm. Unmold onto a serving plate. Garnish with cucumber. Serve with mayonnaise tinted pale green with food coloring.
