This is an absolutely great quick and heated appetizer for any social event.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Beat egg in a small bowl. Place flour in a separate small bowl. Toss bread crumbs and Parmesan cheese together in a another separate bowl.
- Gently press each cheese stick into flour to coat and shake off excess flour. Dip into egg, then press into bread crumb mixture. Place the breaded cheese sticks onto a baking sheet while breading the rest; do not stack. Coat each cheese stick with olive oil; cover baking sheet with aluminum foil.
- Bake in the preheated oven until crisp, about 4 minutes.

HEALTHY MOZZARELLA STICKS
A fun crispy, oozy appetizer for the whole family-and one that has calcium goodness. The pizza flavor profile makes them extra tasty for kids' palates.

Steps:
- Pulse the melba toasts in a food processor to make semi-coarse crumbs; transfer to a medium bowl or dish. Mix in the breadcrumbs, oregano, 1/4 teaspoon each salt and pepper and the cayenne if using.
- Whisk together the egg whites, whole egg, garlic and 1/4 teaspoon each salt and pepper in another bowl.
- Put the flour and 1/4 teaspoon salt in a resealable plastic bag. Add the cheese pieces to the bag, close and shake to coat. Dip one piece of the cheese at a time in the egg mixture first, and then roll firmly in the breadcrumb mixture; then dip the same piece again in the egg mixture followed by the breadcrumb mixture. (Note: Use one hand with the dry mixture and the other with the wet mixture.) Place on a parchment paper-lined plate or baking sheet. Freeze for 15 minutes, or up to overnight.
- Preheat the oven to 475 degrees F. Transfer the frozen cheese sticks to another baking sheet. Fully coat the cheese sticks with the olive oil cooking spray. Bake until golden, about 12 minutes. Sprinkle with additional salt and pepper to taste.
- Serve immediately with the warm marinara sauce.

At the request of my lovely 12 year old daughter, I am posting these, one of her favorite foods. We searched for a recipe together and ended up adapting one to suit our tastes. Enjoy!

Steps:
- Whisk eggs and milk together.
- Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
- Dip in egg and crumbs again.
- Freeze before frying.
- Heat oil in skillet and cook sticks for about a minute on each side, or until golden and before cheese starts to leak.
- Drain on paper towels.
- Serve with sauce for dipping.

- Cut the string cheese in half ( which makes 16 pieces) and place in the freezer for 30-45 minutes. Beat egg in a small and set aside. In a separate bowl mix the Parmesan cheese and breadcrumbs and set aside.
- Dip 1 string cheese in breadcrumb mixture than in egg mixture and than back in breadcrumb mixture. Repeat this for all the pieces. Place sticks on a greased foil or pan. Return the cheese stick back to the freezer for at LEAST 30-45 minutes ( Do not skip this step because the cheese will melt if they are not frozen).
- After the cheese is finished freezing heat oven t0 375 degrees. Spray the cheese lightly with cooking spray and place in the oven. After 4 minutes flip the cheese sticks and continue baking for another 3- minutes or until they are golden. Do not overbake because the cheese will melt. Serve Hot with your favorite marinara sauce. Enjoy!
