MULLED WHITE WINE WITH PEAR BRANDY

Mulled White Wine with Pear Brandy image

WHAT: White wine infused with cardamom and star anise, as well as the more traditional triumvirate of cinnamon, ginger, and cloves, and amped up with pear brandy. HOW: A slice of Asian pear is added to each drink as a garnish-the pear softens slightly as it absorbs the warm booze and makes for a yummy treat once you've sipped the last of the wine. WHY WE LOVE IT: Like a delicate warm sangria, this drink is the perfect accompaniment to a cozy evening indoors.

Provided by Amanda Hesser

Yield Serves 4

Number Of Ingredients 8

One 750-ml bottle dry or off-dry white wine, preferably Riesling or Grüner Veltliner
1 piece star anise
Two 1/4-inch-thick slices fresh ginger
3 green cardamom pods
3 whole cloves
3 to 4 tablespoons honey, or to taste
1/4 cup pear brandy, such as Poire Williams
4 slices Asian pear

Steps:

  • 1. Put the wine in a medium heavy saucepan with the star anise, ginger, cardamom, cloves, and honey (start with 3 tablespoons and adjust later if necessary). Set the pan over medium heat and bring just to a simmer, stirring occasionally. Turn off the heat and let the wine mull for at least 15 minutes.
  • 2. Taste and add more honey if you like. Gently reheat the wine until it starts to steam, then turn off the heat and stir in the brandy.
  • 3. Divide among 4 mugs or heatproof glasses, putting a few of the whole spices in each mug if you like, and add a slice of Asian pear. Toddy away!

MULLED WHITE WINE

Mulled White Wine image

A twist on traditional German Glühwein, Mulled White Wine is light and refreshing - but still packed with holiday spices and warmth. Made from white wine instead of red, this mulled wine recipe has hints of citrus as well as cinnamon, and makes for the perfect holiday drink!

Provided by Recipes From Europe

Categories     Drinks

Time 50m

Number Of Ingredients 9

1 bottle dry white wine (750 ml)
2 cinnamon sticks
1 organic orange
1 organic lemon
2 tablespoons orange juice
5 cloves
3 tablespoons sugar (more to taste)
2 tablespoons rum (optional)
star anise (optional)

Steps:

  • Wash and cut the orange and lemon. You can set aside a few slices for decoration.
  • Add the wine, fruit slices, cinnamon, orange juice, cloves, sugar, rum (optional), and star anise (optional) to a medium-sized pot.
  • Heat the wine on low heat for around 45 minutes. It's important that the wine doesn't come to a boil or else this will evaporate the alcohol. Give the mixture a stir occasionally.
  • Before serving, taste the mulled wine and add more sugar to taste. Pour the mulled wine through a sifter before serving. You can garnish the wine glasses with those extra citrus slices and a cinnamon stick (optional) before serving.

MULLED WHITE WINE

Mulled White Wine image

This warming drink has the flavorful depth of the classic red version but is lighter in body. Choose a white that's not too acidic, such as a Viognier or an oaked Chardonnay (wines that are more astringent can develop a harsh edge when heated).

Provided by Martha Stewart

Categories     Food & Cooking     Drink Recipes

Time 45m

Number Of Ingredients 7

1 orange
5 whole cloves
3 whole star anise pods
1 piece (1 inch) peeled fresh ginger, thinly sliced
1 cup water
1/4 cup sugar
1 bottle (750 mL) medium-bodied white wine

Steps:

  • Peel orange in strips using a vegetable peeler, being careful not to remove any pith (the white part). Push cloves into peel.
  • Combine clove-studded orange peel, the star anise, ginger, water, and sugar in a saucepan over medium heat. Bring to a simmer, stirring to dissolve sugar, and cook for 10 minutes. Remove from heat, and add wine. Let stand for 20 minutes to mull.
  • Just before serving, gently reheat mulled wine over medium heat until just beginning to simmer. Serve warm.

  • Using a vegetable peeler, remove peel in wide strips from 2 oranges and from half of the lemon. Juice lemon to equal 2 tablespoons juice; set juice aside.
  • Heat orange peels, lemon peels, ginger, and 1/2 cup sugar in a large saucepan over medium-high. Cook, stirring and scraping bottom and sides of pan constantly with a wooden spoon, until sugar crystallizes and turns golden brown, 7 to 9 minutes. (The sugar will melt and then crystallize, forming small pebbles.) Slowly stir in 1 bottle of wine. Slowly stir in second bottle of wine; add star anise, cinnamon sticks, vanilla, and reserved 2 tablespoons lemon juice. Reduce heat to medium-low, partially cover, and bring mixture to a vigorous simmer. Reduce heat to low, and simmer 10 minutes. Remove pan from heat, and let mixture steep 20 minutes.
  • Meanwhile, grate remaining orange to equal 1 packed tablespoon grated zest. Combine orange zest, salt, and remaining 1/2 cup sugar in a small bowl. Using the back of a spoon, stir and crush mixture until mixture is fragrant and has an orange tint; set aside.
