- Start by pouring the white wine and Madeira into a large saucepan. Add the lemon, dried apricots, cardamom pods, star anise, vanilla pod and honey. Bring to a simmer then strain into a jug through a fine sieve. Stir in the rosewater before serving.

- Combine 2 bottles dry white wine, 1/2 cup honey and 1/4 cup calvados or brandy in a large dutch oven. Add 6 each allspice berries, black peppercorns and star anise pods, 4 slices fresh ginger, 2 cinnamon sticks and 2 wide strips each lemon and orange zest. Bring to a low simmer and cook 10 to 15 minutes (do not boil). Add a few lemon and orange slices to the pot before serving.
SLOW-COOKER MULLED WINE

- Wrap the cloves, star anise and cinnamon in a small square of cheesecloth and secure it with kitchen twine.
- Combine the wine, sugar if using, orange zest, orange juice, rosemary and the spice pouch in a slow cooker. Cook on low heat until hot, about 1 hour. Adjust the slow cooker to the "warm" setting. Serve in mugs with a rosemary sprig as garnish.
MULLED WHITE WINE WITH PEAR BRANDY
WHAT: White wine infused with cardamom and star anise, as well as the more traditional triumvirate of cinnamon, ginger, and cloves, and amped up with pear brandy. HOW: A slice of Asian pear is added to each drink as a garnish-the pear softens slightly as it absorbs the warm booze and makes for a yummy treat once you've sipped the last of the wine. - 1. Put the wine in a medium heavy saucepan with the star anise, ginger, cardamom, cloves, and honey (start with 3 tablespoons and adjust later if necessary). Set the pan over medium heat and bring just to a simmer, stirring occasionally. Turn off the heat and let the wine mull for at least 15 minutes.
- 2. Taste and add more honey if you like. Gently reheat the wine until it starts to steam, then turn off the heat and stir in the brandy.
- 3. Divide among 4 mugs or heatproof glasses, putting a few of the whole spices in each mug if you like, and add a slice of Asian pear. Toddy away!

- Wash and cut the orange and lemon. You can set aside a few slices for decoration.
- Add the wine, fruit slices, cinnamon, orange juice, cloves, sugar, rum (optional), and star anise (optional) to a medium-sized pot.
- Heat the wine on low heat for around 45 minutes. It's important that the wine doesn't come to a boil or else this will evaporate the alcohol. Give the mixture a stir occasionally.
- Before serving, taste the mulled wine and add more sugar to taste. Pour the mulled wine through a sifter before serving. You can garnish the wine glasses with those extra citrus slices and a cinnamon stick (optional) before serving.

MULLED WHITE WINE

- Peel orange in strips using a vegetable peeler, being careful not to remove any pith (the white part). Push cloves into peel.
- Combine clove-studded orange peel, the star anise, ginger, water, and sugar in a saucepan over medium heat. Bring to a simmer, stirring to dissolve sugar, and cook for 10 minutes. Remove from heat, and add wine. Let stand for 20 minutes to mull.
- Just before serving, gently reheat mulled wine over medium heat until just beginning to simmer. Serve warm.

- Using a vegetable peeler, remove peel in wide strips from 2 oranges and from half of the lemon. Juice lemon to equal 2 tablespoons juice; set juice aside.
