Bruschetta with Mozzarella image

This bruschetta with mozzarella recipe is the perfect appetizer. Easy to make, super fresh, and tastes fantastic. Everyone will fall in love with this combination of tomato, basil, and mozzarella. And the aromatics of this dish are incredible.

1 lb tomatoes (cherry or roma- perfectly ripe)
1/2 lb mozzarella (fresh)
8 leaves basil (large)
1 tbsp olive oil
2 cloves garlic
1 baguette
1/4 cup butter (melted)
salt to taste
black pepper to taste
balsamic vinegar or balsamic glaze (to drizzle )

Steps:

  • Slice the top off of the tomatoes, then cut in half. Remove as many seeds as you can, then cut the tomatoes into small pieces and put them in a large bowl.
  • Gather all the basil leaves together, then slice thinly into small ribbons and add to the tomatoes, mozzarella, and garlic. Drizzle with olive oil, sprinkle with some salt and pepper and toss together well. Put the bowl in the fridge while you toast the baguette.
  • Slice the baguette at an angle into ¾" pieces. Brush on both sides with some butter and either broil in the oven (be sure to turn them over once during cooking) or you can sear them in a hot skillet until golden brown.
  • Scoop a heaping amount of the tomato mixture onto each piece of baguette, sprinkle with a little more salt, drizzle with balsamic glaze and serve.

This is my different twist on typical Bruschettas. Everytime I go to a party or pot luck at work, I am asked to bring this dish. Not only does it taste great and get outstanding compliments... It is pretty and colorful! Especially for Christmas!

32 ounces marinated fresh mozzarella balls in oil, with basil, oregano, garlic, and sun dried tomatoes. (From Costco)
8 ounces roasted red peppers packed in oil
2 freshly baked French baguettes
italian seasoning
oregano
parmesan cheese

Steps:

  • Slice baguettes into 1" pieces and place on platter.
  • Cut mozzarella balls in half and place 3 to 4 on each slice of bread to cover.
  • Top the mozzarella with sliced grilled red peppers.
  • Drizzle olive oil with fresh green basil, garlic, and sundried tomatoes with a spoon onto each bruchetta.
  • Sprinkle generously with Parmesean Cheese.
  • Shake on some Italian Seasoning and Oregano.
  • Cover and refrigerate until ready to serve.
  • You will get rave reviews!

1 (32-ounce) can whole tomatoes, drained
1 cup fresh basil leaves, washed and spun dry
4 tablespoons extra-virgin olive oil
6 cloves garlic, peeled
Kosher salt and freshly ground black pepper
2 large French baquettes, sliced 1-inch thick (about 36 slices)
1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick

Steps:

  • Preheat oven to 375 degrees F.
  • In the bowl of a food processor, add drained tomatoes, 1 cup basil leaves, olive oil and 2 cloves garlic. Pulse until smooth, but somewhat chunky. Season with salt and pepper.
  • On a baking sheet, line up baguette slices. Toast in oven for about 3 minutes or until light golden brown. Working quickly, rub the remaining garlic on the toasted side of each slice and then lay a piece of mozzarella cheese on top. Place bread back in oven and melt cheese slightly, about 45 seconds. Remove from oven and spread one tablespoon of the tomato mixture on each piece.
  • Place bruschetta on decorative platter and garnish with basil leaves.

1 loaf French baguette (or other French bread with a small diameter)
2 tablespoons olive oil
2 cups fresh tomatoes, finely chopped, seeds and pulp removed
1/2 teaspoon italian seasoning
2 garlic cloves, crushed
2 cups fresh mozzarella cheese, shredded
salt (optional)

Steps:

  • Preheat oven to 425 degreesF.
  • Slice French bread or baguette into 1/2-inch slices.
  • Brush both sides lightly with 2 T olive oil.
  • Place on baking sheet.
  • Sprinkle lightly with salt, if desired.
  • Combine chopped tomatoes, Italian seasoning and crushed garlic.
  • Set aside.
  • Bake French bread slices in oven for 3 minutes.
  • Turn each slice over and bake an additional 2 minutes.
  • Remove from oven.
  • Spread each slice with a tablespoon of the tomato mixture.
  • Sprinkle with mozzarella cheese.
  • Return to oven for 3 minutes or until cheese is melted.
  • Serve immediately.

1 pkg. (8 oz.) POLLY-O Whole Milk Mozzarella Cheese, cut into 24 thin slices
6 plum tomatoes, chopped
2 Tbsp. chopped fresh oregano

Steps:

  • Heat broiler.
  • Mix oil and garlic. Brush both sides of bread slices lightly with oil mixture. Place on baking sheet. Broil 1 to 2 min. on each side or until lightly toasted on both sides.
  • Cover each toast slice with 1 cheese slice; top evenly with tomatoes.
  • Broil, 4 inches from heat, 1 to 2 min. or until cheese is melted. Sprinkle with oregano.

1 medium fresh mozzarella cheese
1 medium red onion
2 garlic cloves
4 medium tomatoes
1/4 cup olive oil
1/4 cup balsamic rice wine vinegar
salt
ground pepper
2 basil
balsamic glaze
1 (12 ounce) jar multi-color roasted peppers

Steps:

  • dice tomatoes, red onions and garlic and combine in a medium mixing bowl.
  • add olive oil, balsamic rice wine vinegar and mix well.
  • add salt and pepper to taste.
  • Let sit in refrigerator for a half hour.
  • slice fresh mozzarella in 1/2 inch slices.
  • put 7 slices of the mozzarella on a large plate, place mixture on top of each one.
  • top each piece with a pepper.
  • garnish with basil and drizzle with balsamic glaze.
  • enjoy.

2 -3 large fresh tomatoes, diced
1/4 sweet onion, diced
2 -4 ounces fresh basil leaves, chopped coarsely with stems removed
3 fresh garlic cloves, diced
salt and pepper
3 teaspoons olive oil

Steps:

  • Mix together diced tomatoes, sweet onion, chopped basil leaves, fresh garlic, olive oil to taste, and salt and pepper to taste. Allow to marinate for 10-15 minutes.

  • Cut the loaf into eight 1/2" pieces. Turn on the broiler. You can alternatively grill the bread. See below for instructions.
  • While it's heating up, make the tomato mixture. In a medium bowl, mix together the basil, garlic, 1/4 teaspoon salt, pepper, 1 teaspoon olive oil, and balsamic vinegar. Once combined, add the tomatoes and halved mozzarella balls. Set aside, while prepring the bread, but not for too long - it gets watery. It's good to let it sit for 10-15 minutes for the flavors to meld but I don't recommend letting it sit much longer.
  • Pour 2 tablespoon of olive oil in a little bowl and brush the bread with olive oil (if grilling, oil both sides). Use more oil, if needed. Sprinkle the tops of the bread slices with a little salt. Place the bread under the broiler. You'll need 2–4 minutes, or until the edges are golden brown and the tops feel crisp to the touch.
  • If grilling, grill the bread slices over indirect heat, on both sides, until golden brown. Remove from the grill.
