Transform leftover turkey in this spiced filo pastry parcel, inspired by a Moroccan pastilla - a perfect main course for Boxing Day

2 tsp coriander seeds
2 tsp cumin seeds
pinch of ground cinnamon
2 tbsp olive oil
2 aubergines , cut into small dice
2 banana shallots , halved and sliced
2 tbsp harissa
2 peppers (any colours will do), deseeded and diced
227g can chopped tomatoes
1 chicken stock cube
500g leftover turkey (a mix of leg and breast is best), chopped
100g butter , melted, plus extra for greasing
250g pack (about 10 large sheets) filo pastry
25g flaked almonds

Steps:

  • Heat a large non-stick pan over a medium heat and toast the coriander and cumin seeds for 1-2 mins until fragrant. Add the cinnamon, olive oil, aubergine and shallots. Coat the veg in the spices and cook on a medium-low heat for about 10 mins until the aubergine has softened slightly.
  • Add the harissa and peppers. Give everything a good stir, then add the tomatoes and crumble over the stock cube. Simmer, uncovered, for 20 mins until the veg is tender and the mixture is nice and thick.
  • Stir through the turkey meat and season well. Set aside to cool.
  • Heat oven to 200C/180C fan/gas 6 and grease a 23cm springform tin with a little butter. Lay two sheets of filo over the base of the tin and brush with the melted butter. Cross over another two layers of filo and brush again with butter. Repeat once more, then put the cooled filling in the centre. Using the remaining four pastry sheets, cover the filling and brush with more melted butter. Scrunch the top of the pie together and bake for 30-35 mins.
  • Remove from the oven and scatter the pie with the flaked almonds. Cook for a final 10 mins until the pie is golden and piping hot. Serve straight away.

2 tsp each coriander and cumin seeds
1 tsp paprika, plus extra for dusting
½ tsp ground cinnamon
150ml/¼ pint olive oil
900g squash, peeled and cut into small chunks (about 2cm)
12 shallots, quartered
4cm/1½ in piece root ginger, finely chopped
140g whole blanched almonds
140g shelled pistachios
75g pack dried cranberries
6 tbsp clear honey
225g pack fresh spinach
400g can chickpeas, drained and rinsed
2 garlic cloves
1 tsp ground cumin
3 tbsp lemon juice
4 tbsp chopped fresh coriander
100g butter
8 large sheets of filo pastry
lemon wedges to serve
200g carton Greek yogurt
6 tbsp milk
3 large sprigs mint, leaves chopped
2-3 tbsp harissa paste

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Dry fry the seeds briefly in a small pan over a medium heat until toasty - don't let them burn. Grind coarsely using a pestle and mortar (or a bowl and the end of a rolling pin), then mix in the paprika, cinnamon, 1⁄2 tsp salt and 4 tbsp oil. Tip the squash into a roasting tin, pour over the spiced oil and toss. Roast for 20 minutes.
  • Meanwhile, heat 2 tbsp of oil in a frying pan, add the shallots and cook, stirring, until they start to brown. Stir in the ginger and 100g/4oz each almonds and pistachios.When brown, toss in the cranberries, 2 tbsp honey, and the spinach so it wilts. Take off the heat and stir into the squash, when it comes out of the oven. Set aside.
  • In a food processor, whizz the chickpeas with the garlic, cumin, remaining oil, lemon juice, 2 tbsp water and salt and pepper to make houmous. Stir in the coriander.
  • Melt the butter in a small pan. Put a loose-bottomed 28cm quiche tin on a baking sheet and brush with some butter. Keeping the filo covered with a damp cloth so it doesn't dry out, lay one sheet over half of the tin so that it hangs over the edge by about 10cm. Lay another sheet on the other side, so it overlaps the first in the centre and hangs over the opposite edge. Brush with butter. Lay two more filo sheets in the opposite direction in the same way and brush with more butter.
  • Build up two more layers in this way, so you use a total of eight sheets of filo. Pile half the squash mixture in the centre of the pastry. Spread over the houmous and then the rest of the squash mixture.One at a time, bring the edge of each filo sheet up to the centre to cover the filling, creating voluptuous folds as you go. Brush carefully with more butter. (If making a day ahead, cover now with cling film and chill. To reheat, remove the pie from the fridge, heat the oven, then bake for 35-40 minutes.)
  • Bake for 30-35 minutes, until crisp and golden. Just before the pie is ready, reheat any remaining butter in the pan, tip in the rest of the nuts and fry until golden. Spoon in the 4 remaining tbsps of honey and, when it melts, take off the heat and pour over the pie. Serve with Harissa yogurt sauce (mix the yogurt and milk together to make a thin sauce, stir in the herbs and season. Swirl in harissa to taste) and lemon wedges.

Savoury Moroccan Pie image

In Morocco, this dish is known as Pastilla and is traditionally made with pigeon meat but chicken works equally well. The flaky layers of pastry, tender meat and sugar-cinnamon topping make a delightful combination. If you want to make this for a dinner party, just prepare it ahead of time, then freeze until a few hours before you need to serve it.

12 -15 sheets phyllo dough
salt and pepper
3 lbs chicken pieces
3 onions, finely chopped
1 cup vegetable oil or 1 cup butter, melted
1 tablespoon fresh coriander, finely chopped
1/4 teaspoon turmeric
1 1/4 teaspoons cinnamon
1 teaspoon ground ginger
1 pinch saffron, in
1/2 cup water
1/2 teaspoon allspice
2 cups water (or more)
12 ounces blanched almonds
2 tablespoons sugar
8 eggs, beaten
icing sugar (to garnish)
cinnamon (to garnish)

Steps:

  • About 2 hours before starting, remove the phyllo from the freezer but keep tightly covered.
  • Salt and pepper the chicken.
  • Brown in its own juices in a heavy skillet.
  • Remove to a plate.
  • Add the onions and parsley to the skillet.
  • Sauté in 2 tbsp vegetable oil or margarine until golden, stirring frequently.
  • Return chicken to the skillet and add coriander, turmeric, 1 teaspoon cinnamon, ginger, saffron in water, allspice, and 2 cups water or more if you think it is needed.
  • Bring to a slow boil.
  • Cover and simmer about 45 minutes, or until the chicken is done.
  • Meanwhile, sauté the almonds in 4 tbsp oil until brown.
  • Remove to dry on paper towels.
  • When cool and dry, chop coarsely and combine with the sugar and the remaining 1/4 teaspoon cinnamon.
  • If you are going to cook the pastilla immediately, preheat oven to 375°F.
  • When chicken is done, remove from pot and let cool.
  • If you wish, skim off some of the fat from the sauce and leave sauce over small flame to reduce the stock to about 1 1/2 cups.
  • When the chicken is cool, debone it and, using your fingers, break it into small chunks, about 1/4 inch each.
  • Place on a plate.
  • When the sauce is reduced, slowly add the beaten eggs and stir for a minute or two until eggs become custard like.
  • Do not let the sauce become too dry.
  • You can assemble the pie several ways, using either a round quiche pan or a 9x13-inch dish.
  • Brush oil on the bottom of either pan you use.
  • For the rectangular method, place 1 phyllo sheet in the pan and brush with oil.
  • Repeat with 5 more sheets.
  • Over them, spread 1/2 the nuts, 1/2 the egg mixture, all the chicken the remaining egg mixture, and the remaining nuts.
  • Cover with 5-6 sheets of phyllo, again brushing with oil each time.
  • Fold over any loose ends and brush the tops with oil.
  • Take a last leaf of phyllo, fold under so that it neatly covers the pie, and brush with oil. (You can also layer the phyllo between the different foods).
  • For the circular method, place one sheet of phyllo in the middle of the quiche pan.
  • Brush with oil and then repeat with 5 more phyllo sheets, moving the pan a bit so that the phyllo fans the entire pan.
  • Fold 2 pieces of phyllo and place in center.
  • In a circle 9 inches in diameter, sprinkle 1/2 the almonds on top, then 1/2 the egg mixture, all the chicken, the remaining egg mixture and finally the remaining almonds.
  • Cover with the extended edges of the 6 phyllo sheets, brushing the edges first.
  • Seal down, then place 2 more sheets of phyllo on top.
  • Fold over and seal underneath, so that an enclosed circular crust is formed.
  • Bake the pie 30-45 minutes, until top is evenly browned.
  • When ready to serve, sprinkle the top with confectioners' sugar and cinnamon, almonds, or both, in crisscross fashion over the entire pastilla.
  • If preparing in advance, make up the pie, then layer with aluminum foil and freeze.
  • Remove a few hours before cooking and cook as normal.
  • You may need to bake it a bit longer.

2 lbs winter squash, peeled and cut into small chunks (3/4-inch - 1-inch)
12 shallots, quartered
1 inch piece gingerroot, peeled and finely chopped
5 ounces blanched almonds
5 ounces pistachios, shelled
3 ounces craisins
6 tablespoons clear honey
8 ounces fresh spinach
1 (14 ounce) can chickpeas, drained and rinsed
2 whole garlic cloves
1 teaspoon ground cumin
3 tablespoons lemon juice
4 tablespoons fresh cilantro, chopped
4 ounces butter
8 sheets phyllo pastry
6 lemon wedges, to serve
7 ounces low-fat Greek yogurt
6 tablespoons milk
3 sprigs fresh mint leaves, chopped
1/2 cup fresh cilantro, chopped
3 teaspoons harissa

Steps:

  • First, make the harissa yoghurt sauce. Mix the yoghurt and the milk together to make a thin sauce. Stir in the mint and cilantro and season to taste with salt and pepper. Lightly stir in the harissa paste, and set the sauce aside.
  • Preheat oven to 200°C (390°F).
  • Heat a small skillet over medium heat and dry-roast the coriander and cumin seeds, taking care not to burn them. Grind them coarsely with a mortar and pestle or an electric spice grinder, then transfer to a small bowl. Mix in the paprika, cinnamon, 1/2 teaspoon salt and 4 tablespoons of the olive oil.
  • Place the winter squash in a roasting tin, then pour over the spiced oil and toss well to ensure each piece of squash is coated with the oil. Roast for 20 minutes in the pre-heated oven, then set aside.
  • Meanwhile, heat 2 tablespoons of the olive oil in a skillet, then add the shallots and cook, stirring, until they start to brown. Stir in the chopped ginger and 3 1/2 oz each of the almonds and pistachios, reserving the remainder. When the nuts are golden brown, add the craisins, 2 tablespoons of honey, and the spinach. When the spinach wilts, remove the skillet from the heat and stir in the roasted winter squash. Set aside.
  • Process the chickpeas, garlic, cumin, the remaining oil, lemon juice, 2 tablespoons of water, and salt and pepper to taste, in a processor or with a stick blender. Stir in the chopped cilantro.
  • Melt the butter in a small pan. Place a loose-bottomed 11 inch quiche tin on a baking sheet and brush with some butter. Keeping the phyllo covered with a damp cloth so it doesn't dry out, lay one sheet over half of the tin so that it hangs over the edge by about 4 inches.   • Put the turkey on the rack of a roasting pan. Season the turkey cavity with salt and pepper and stuff the lemon quarters and sage sprigs inside. Tie the legs together, season the turkey all over with salt and pepper and let stand at room temperature for about 1 hour.
  • Meanwhile, preheat the oven to 400°. Wrap the garlic in foil and roast for 1 hour, until very tender. Let cool completely, then squeeze the cloves into a medium bowl. Whisk in the citrus juices along with the ras el hanout and chopped sage.
  • Brush the turkey all over with the citrus-garlic mixture. Roast in the lower third of the oven for 30 minutes, then baste with the citrus-garlic mixture. Reduce the oven temperature to 325° and continue to roast, basting every 30 minutes, for 2 hours and 15 minutes longer, until an instant-read thermometer inserted in an inner thigh registers 165°. Transfer the turkey to a board; let rest for at least 30 minutes or up to 1 hour. Carve the turkey, drizzle with any pan juices and serve with chutney.

  • In a large skillet heat 2 Tbsp of olive oil over medium high heat. Sauté the onions until soft, about 5 minutes. Add the garlic, chile, Moroccan spice blend, lemon zest and turkey meat and cook for 2 minutes.
  • On a work surface, arrange a sheet of phyllo (keep remaining phyllo under damp tea towel). Brush phyllo with olive oil and lay in the middle of pie dish allowing excess phyllo to hang over edge.
  • Stir beaten egg and coriander into turkey mixture and spoon into prepared pie dish. Fold the phyllo pieces that are hanging over the edge of the pie dish, one at a time into middle of pie, sprinkling some of the almond mixture between each layer.
  • Brush 1 sheet of phyllo with olive oil and place on top of pie, tucking in any overhang. Repeat with remaining phyllo and almond mixture. (Do these one by one, not stacked together, to achieve a light, blossomy top.)
  • Bake for 20 minutes until top is browned and crisp. Let stand for 5 minutes before cutting into wedges.
