1 chocolate crumb crust (9 inches)
5 Oreo cookies, chopped
1/3 cup chocolate-covered peppermint candies

Steps:

  • Spread ice cream into crust. Sprinkle with cookies and candies; drizzle with ice cream topping. Freeze until firm. Remove from the freezer 15 minutes before serving.

1 container (8 oz.) reduced fat frozen whipped, topping, thawed
Chocolate curls (optional)
2 tablespoons margarine
1/4 cup light corn syrup
1/2 cup semi-sweet chocolate chips
2 cups KELLOGG'S® COCOA KRISPIES® cereal
1 envelope unflavored gelatin
1/4 cup cold water
1 jar (7 oz.) marshmallow creme
1 to 1 1/2 teaspoon peppermint flavoring

Steps:

  • Place margarine, corn syrup and chocolate chips in 2-quart saucepan. Cook over low heat, stirring constantly, until melted and smooth. Remove from heat.
  • Add KELLOGG'S® COCOA KRISPIES® cereal to chocolate mixture. Stir until cereal is coated. With back of spoon, shape mixture evenly in bottom and on side of 9-inch pie pan coated with cooking spray. (If mixture is too soft, refrigerate about 5 minutes). Chill crust.
  • Combine gelatin and water in small saucepan. Let stand 1 minute. Place over low heat, stirring constantly, until gelatin has dissolved. Remove from heat.
  • In large mixing bowl, combine marshmallow creme, flavoring, color and warm gelatin, mixing until smooth. Gently fold in thawed whipped topping.
  • Spoon filling into chilled crust. Refrigerate 3 hours or until firm. Serve garnished with additional whipped topping and chocolate curls, if desired

2 cups heavy cream
1 cup whole milk
1/2 cup plus 2 tablespoons (125 grams) sugar
1/4 teaspoon (1 gram) kosher salt
6 large egg yolks
1 1/2 teaspoons mint extract
1/2 cup (60 grams) dark chocolate chips (72% cacao)

Steps:

  • 1. Pour the cream and milk into a double boiler or a heatproof bowl set over a saucepan of simmering water (the bottom of the bowl should not touch the water). Whisk in 1/2 cup (100 grams) of the sugar and the salt and stir until they have dissolved. Warm the mixture until you see steam rising from the top.
  • 2. Meanwhile, prepare an ice bath in a large bowl and set another bowl over it. Set aside.
  • 3. In a medium bowl, with a kitchen towel underneath it to prevent slipping, whisk together the egg yolks with the remaining 2 tablespoons (25 grams) sugar until uniform. While whisking, add a splash of the hot dairy mixture to the yolks. Continue to add the dairy mixture, whisking it in bit by bit, until you've added about half. Add the yolk mixture to the remaining dairy mixture in the double boiler. Set the heat under the double boiler to medium and cook the custard, stirring continuously with a wooden spoon and reducing the heat to medium-low as necessary, until steam begins to rise from the surface and the custard thickens enough to coat the back of the spoon. Hold the spoon horizontally and run your fingers through the custard. If the trail left by your finger stays separated, the custard is ready to be cooled.
  • 4. Strain the custard into the bowl sitting over the prepared ice bath and stir for 3 to 5 minutes, or until the custard has cooled. Transfer the custard to a quart-sized container, cover, and refrigerate for at least 4 hours or, preferably, overnight.
  • 5. Add the mint extract to the chilled custard. Pour the custard into an ice cream maker and freeze according to the manufacturer's instructions. Place the container in which you refrigerated the custard in the freezer so you can use it to store the finished ice cream. Churn the ice cream until the texture resembles "soft serve." In the last minute of churning, fold in the chocolate chips and churn until incorporated. Transfer the ice cream to the chilled storage container and freeze until hardened to your desired consistency. Alternatively, you can serve it immediately-it will be the consistency of gelato. The ice cream will keep, frozen, for up to 7 days.

1 (8 ounce) container of cool whip fat-free whipped topping (the 12 oz will make a higher pie)
2 -3 drops green food coloring (color to desired shade)
2 -3 drops peppermint extract (use according to taste. It is very strong. Be careful)
1/2-3/4 cup miniature sugar-free chocolate chips (Chop up Sugar free Hersheys chunks or order Goldlite sugar free mini chocolate chips online. These a)

  • Fold in coloring and extract. Do not beat. You do not want to deflate the Cool Whip.
  • Gently mix in sugar free chocolate chips.

1 envelope unflavored gelatin
1 (12 ounce) can evaporated low-fat milk
1 egg white
1 egg
2 1/2 cups skim milk
1 tablespoon white creme de menthe (or a few drops mint extract)
2 teaspoons vanilla
green food coloring (optional)
1 1/2 ounces semisweet chocolate, chopped

Steps:

  • In a large saucepan stir together the sugar and gelatin.
  • Stir in evaporated milk.
  • Cook and stir over medium heat until sugar and gelatin dissolve and mixture almost boils.
  • Remove from heat.
  • In a small bowl slightly beat the egg white and egg.
  • Stir about 1/2 cup of the hot gelatin mixture into the egg mixture; return all to saucepan.
  • Cook and stir over low heat for 2 minutes more.
  • Do not boil.
  • Stir in the skim milk, creme de menthe or mint extract, and vanilla.
  • Cover and refrigerate 1 hour.
  • If mixture isn't smooth, strain mixture.
  • If desired, stir food colouring into mixture.
  • Stir in chopped chocolate.
  • Freeze mixture in a 4- or 5-quart ice cream freezer according to manufacturer's directions.

1-3/4 cups whole milk
3/4 cup sugar
Pinch salt
3 large eggs, room temperature, lightly beaten
1-3/4 cups heavy whipping cream
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
4 drops green food coloring, optional
1/2 cup miniature semisweet chocolate chips

Steps:

  • In a small saucepan, heat the milk to 175°; stir in the sugar and salt until dissolved. Whisk in a small amount of the hot mixture to the eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture coats the back of a metal spoon and reaches at least 160°, 2-3 minutes. Remove from the heat. , Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in whipping cream, extracts and food coloring if desired. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir in the chocolate chips. Fill ice cream freezer cylinder two-thirds full; freeze according to the manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Transfer ice cream to a freezer container; freeze for 2-4 hours before serving.

1/2 cup chocolate syrup
1/3 cup chocolate chips, semisweet
2 cups crispy rice cereal
1/4 cup sour cream
1 quart chocolate chip ice cream, softened

Steps:

  • butter a 8-ince pie plate.
  • in a small mirowave-safe bowl mix chocolate syrup and chocolate chips microwave on high until hot around (40 seconds) mixture should be smooth. set aside 1/4 cup of mixture.
  • mix the remaining chocolate mixture and cereal in a medium mixing bowl you are coating the cereal with chocolate. press the mixture over bottom and sides of the pie plate. freeze until firm this should take around 10-15 minutes.
  • now combine the chocolate you set aside and the sour cream in a small bowl and mix well. Now on the pie crust spread 1/2 the ice cream in the pie pan. now drizzle about 1/2 the sour cream mixture onto it. top the rest of the ice cream on it and drizzle the remaining sour cream mixture onto it. freeze pie until firm. This should take about an hour.

4 ounces pastuerized egg substitute (Egg Beaters)
1/2-1 teaspoon peppermint extract
3/4-1 cup semi-sweet chocolate chips or 3/4-1 cup miniature semisweet chocolate chips

Steps:

  • Stir together egg substitute, sugar, and mint extract and combine well.
  • Add half-n-half and milk and stir until incorporated.
  • Chill for at least 30 minutes.
  • Pour chilled liquid into your ice cream maker.
  • Five minutes before freezing is complete, add the chocolate chips.
  • Enjoy!

1 ½ cups crushed chocolate sandwich cookies
¼ cup butter, melted
1 quart mint chocolate chip ice cream
4 tablespoons creme de menthe liqueur
1 cup crushed chocolate sandwich cookies
3 egg whites
salt to taste
¼ teaspoon cream of tartar
2 teaspoons creme de menthe liqueur
⅓ cup white sugar

Steps:

  • Combine 1 1/2 cups cookie crumbs and melted butter or margarine. Press firmly over bottom and up the sides of a 9 inch pie pan. Freeze.
  • Spread half of softened ice cream in crust. Drizzle 2 tablespoons creme de menthe and sprinkle 1/2 cup cookie crumbs over the ice cream. Repeat. Freeze till firm.
  • In a clean bowl, beat egg whites until foamy. Add salt and cream of tartar, and beat until slightly stiff. Gradually beat in sugar until peaks form. Fold in 2 teaspoons creme de menthe. Spread meringue over pie, and seal to edges. Freeze up to 24 hours.
  • Just before serving, broil until top is golden.
