MOROCCAN MARINATED FISH

Steps:
- Wipe the fish dry with paper towels.
- Combine all the ingredients in a blender and mix until smooth. Coat the fish, inside and out, with the marinade and leave for an hour at room temperature.
- Preheat oven to 375 degrees.
- Bake the fish for 20 to 30 minutes or until cooked.

MOROCCAN FISH TAGINE (MQUALLI)
Steps:
- Gather the ingredients.
- Make chermoula marinade . Reserve and refrigerate half of the chermoula, and mix remaining half with fish.
- Cover fish and refrigerate, allowing it to marinate for two hours or overnight.
- Roast peppers , peel and seed them, and cut them into strips. Or, alternatively, slice raw pepper into rings. Set aside.
- Pour olive oil into a tagine , and distribute onion slices across bottom. Criss-cross celery or carrot sticks in center to form a bed for the fish.
- Mix potato slices with ginger, salt, pepper, turmeric, and saffron, and arrange potatoes around perimeter of tagine. Top potato with tomato slices, then distribute reserved chermoula over vegetables.
- Add fish and its marinade to center of tagine, and arrange strips of pepper on top of fish in a decorative manner. Garnish tagine with lemon and olives, and sprinkle salt and pepper over all.
- Cover tagine and cook over low to medium-low heat for 1 to 1 1/2 hours, or until the fish and potatoes are finished. Reduce sauce if necessary until it is quite thick.
- Serve tagine directly from dish in which it was cooked, with Moroccan bread for scooping up the fish and sauce.

MOROCCAN GRILLED SALMON

- Stir together the yogurt, lemon juice, olive oil, garlic, coriander, cumin, 1/4 teaspoon salt, and pepper to taste in a small bowl. Pour half of the sauce into a large resealable plastic bag; cover and refrigerate the remaining sauce. Add the salmon to the bag and turn to coat with the marinade. Refrigerate for 20 to 30 minutes, turning the bag over once.
- Preheat a grill to medium-high. Remove the salmon from the marinade and blot off excess yogurt with paper towels. Lightly oil the grill and add the salmon; cook, turning once, until browned on the outside and opaque in the center, 4 to 6 minutes per side, depending on the thickness. Serve with the reserved yogurt sauce and garnish with the herbs and lemon wedges.
MOROCCAN-SPICED TUNA
Jazz up tuna with Moroccan spices for a super fast meal

- Put the coriander, garlic, spices and lemon juice into a blender and blitz to a purée. With the motor running, slowly add the olive oil until you get a smooth, thick sauce. Set aside.
- Sit the tuna steaks in a non-metallic dish and cover with two-thirds of the sauce. Cover with cling film, then leave to marinate in the fridge for about 20 mins (or for up to 4hrs).
- Heat a griddle pan or grill. Shake off any excess marinade, season the tuna steaks, then cook for 2-4 mins, depending on thickness for medium rare, turning once (cook 2 mins more for well done). Drizzle over the remaining sauce paste to finish. Try serving with new potatoes; for a Moroccan twist, toss melted butter, harissa spice mix and chopped coriander leaves through the potatoes.

- Heat a large skillet on medium-high heat. Add the oil, then cook and stir the onion and garlic, until slightly tender.
- Add the bell peppers, carrots, tomatoes, olives, and garbanzo beans.
- Continue to cook until the peppers are slightly tender.
- Sprinkle the parsley, paprika, cumin, cayenne, and chicken bouillon over the vegetables.
- Season with salt to taste.
- Stir to incorporate.
- Place the fish on top of the vegetables and add enough water to cover the vegetables. Reduce the heat to low, cover, and cook for 40 minutes.
CLASSIC MOROCCAN CHARMOULA FOR FISH
Moroccan Charmoula sauce is a delightful lemony, garlicky, herby marinade and topping made a little exotic with the addition of cumin and cilantro.
