MOOSEWOOD RED, GOLD, BLACK, AND GREEN CHILI
This is from "Moosewood Restaurant Cooks at Home" Cookbook. An incredible vegetarian chili. Very quick to make. I add no salt to this recipe and you would never miss it. It is a personal favorite that even my carnivore friends love. This makes a big pot and freezes extremely well.

Steps:
- Place the bulghur, hot water, and about a cup of the juice from the canned tomatoes in a small saucepan.
- Cover and bring to a boil on high heat, then lower the heat and simmer gently.
- Heat the olive oil in a large saucepan.
- Saute the onions, garlic, cumin, chili powder, and Tabasco or cayenne.
- When the onions are soft, stir in the bell peppers and saute for 2 to 3 minutes more.
- Chop the tomatoes right in the can and add them to the pan (I used canned diced tomatoes instead).
- Stir the corn and beans, and heat thoroughly on low heat.
- Taste the bulghur. When it is cooked but still chewy, add it to the pan with its liquid.
- Cover and simmer for a few minutes for the flavors to meld.
- Add salt to taste.
- Serve plain or topped with grated cheese and fresh cilantro.
QUICK RISOTTO WITH CARROTS AND FETA
A Moosewood recipe from the "Cooks at Home" cookbook. My toddler loves this and will eat extremely well so it is a good recipe to use if they are hitting a fussy phase. I don't bother matchsticking the carrots - I just grate them if the meal is just for us. Good quick recipe for a weeknight.

Steps:
- Bring the stock to a boil in a covered pot.
- Put the carrots in the stock water, lower the heat and very gently simmer.
- In a large wok or saucepan, saute the onions until softened but not brown.
- Carefully add the rice and stir genly unil the grains are thoroughly coated with oil.
- Add the dill.
- Ladle 1 cup of the carrot stock into the saucepan with the rice and stir.
- When it is absorbed, ladle in another cup worth.
- Keep stirring in the stock and carrots like this until all the stock has been absorbed and the rice is ender but al dente[15-20 minutes].
- When the risotto is ready, remove it from the heat and stir in the lemon juice, feta and optional parsley.
- Serve immediately.

MEXICAN SEITAN
Adapted from Moosewood Restaurant Cooks at Home. I love this as a burrito with beans and a whole wheat tortilla. I use beer instead of oil- it tastes great and is lower in fat. I also used home-made seitan.

Steps:
- Saute the onions and garlic in the oil for about 4 minutes, until softened.
- Chop the pepper and add it to the pan. Coarsely grate or chop the seitan. Mix it into the vegetables along with the chili powder, oregano, basil or soy sauce and Tabasco.
- Saute for a minute, stirring constantly to prevent sticking.
- Stir in the tomatoes, reduce the heat, and simmer uncovered for about 5 minutes.
- It should be moist but not too juicy.

CAULIFLOWER PAPRIKASH
This is from the "moosewood restaurant cooks at home" and I decided to post it since it was such a big hit with my husband who usually avoids cauliflower. Serve with egg noodles or spatzle.

Steps:
- In a large soup pan, saute the onions and peppers in oil for 3 minutes.
- Stir in the paprika, sherry and water.
- Cook on high for a minute.
- Add the mushrooms and pinch of salt.
- Lower the heat to medium, cover and cook for 5 minutes.
- Mix in the florets and simmer until the cauliflower is tender but still firm- about 7 minutes.
- Remove the pan from the heat and stir in the sour cream.
- Add salt and pepper to taste.
- Cover the paprikash and keep warm until ready to serve but do not allow it to simmer or it may curdle.

SIMPLE GARLIC BROTH (MOOSEWOOD)
From Moosewood Restaurant Cooks at Home. Says that this is a great start to many different kinds of soup, as well as great for cooking rice and potatoes. The recipe says that the broth will keep in the fridge for about a week and freezes well. Yield and cooking times are estimates.

- Bring the stock or water to boil in a large covered pot.
- In a soup pot on low heat, gently saute the garlic in the olive oil until golden, taking care not to let it brown.
- Add boiling stock and stir in the paprika.
- Tie the sage, thyme, and parsley into a little bundle with a sting and add it to the pot.
- Bring the broth to a boil and simmer for 10-15 minutes, up to 30 minutes for a more intense flavor.

Steps:
- Soak the eggplant in salted water for 30 minutes. Drain and pat each slice dry.
- Brush a cookie sheet with olive oil. Place the eggplant in one layer on the sheet and brush each slice with olive oil.
- Broil for 7-10 minutes until cooked through and browned. No need to flip them. Sprinkle on fresh salt and pepper.
- Whisk together miso and water. Whisk in vinegar, ginger and lime juice.
- Drizzle sauce over eggplants and garnish with scallion.

GREEK SCAMPI
This is a very easy and delicious dish I got from Moosewood Restaurant: Cooks at Home. It can be served over couscous (my choice), rice, or orzo. Goes great with a side of cooked broccoli or asparagus. If you are serving more than two I suggest doubling the recipe! ENJOY!

Steps:
- Shell and devein shrimp, if necessary, rinse them and set aside.
- Prepare ingredients - Have all the ingredients prepared and at hand before beginning to sauté.
- Sauté the garlic in the oil briefly, and then add the shrimp. Cook on medium heat for a minute.
- Add tomatoes, feta, lemon juice, and dill.
- Stir so the shrimp cook on both sides.
- When the shrimp are pink and the tomatoes and feta have made a sauce, it's ready. Sprinkle with salt and pepper to taste and serve at once.
