Lemon Sauce for Salmon Patties image

A slightly spicy, lemony sauce for salmon patties. Makes enough for about eight salmon patties.

2 tablespoons butter
4 teaspoons all-purpose flour
¾ cup milk
2 tablespoons lemon juice
¼ teaspoon salt
⅛ teaspoon cayenne pepper

Steps:

  • Melt butter in a saucepan over medium heat. Stir in the flour to form a smooth paste. Gradually stir in milk; bring to a boil over medium heat, stirring constantly. Cook for 2 minutes or until thickened. Remove from heat, and stir in lemon juice, salt, and cayenne pepper.

Salmon with sauce verte and crushed new potatoes image

Sauce verte may sound fancy but you can quickly whip it up in a blender, transforming a simple salmon supper into something special.

10 new potatoes, peeled
100-150ml/3½-5fl oz milk
100-150ml/3½-5fl oz olive oil
1 garlic clove, crushed
pinch salt flakes
50g/1¾oz spinach
50g/1¾oz watercress
50g/1¾oz flatleaf parsley, leaves only
1 small bunch tarragon, leaves picked
1 small bunch chervil, leaves picked
2 basil stalks, chopped
250g/9oz mayonnaise
1 lemon, juice only
4 salmon fillets, skinned

Steps:

  • For the potatoes, put all of the ingredients in a saucepan. Bring to the boil and cook for 10-15 minutes, until cooked through. Strain and reserve the cooking liquid.
  • For the sauce verte, bring a pan of water to the boil and blanch the spinach and watercress. Remove, plunge into ice-cold water and drain.
  • Put the spinach, watercress and herbs in a blender and blend until fine. Add the mayonnaise and lemon juice and blend until bright green. Season with salt and pepper.
  • For the salmon, heat a griddle pan to a very high heat, sear the salmon for 3-4 minutes on both sides. Remove the skin before serving.
  • Just before serving, crush the potatoes with a fork adding any reserved liquid to make them as moist as you like.
  • Serve the salmon on top of the potatoes and dribble the sauce verte over.

2 tbsp avocado oil, divided + additional for cooking
1 lb wild salmon fillet, skin removed
1¼ tsp sea salt, divided
½ tsp ground black pepper, divided
2 shallots, minced
2 stalks celery, minced
2 cloves garlic, minced
¾ cup almond flour
2 tbsp arrowroot powder
1 large egg
1 tbsp lemon zest + 2 tbsp fresh lemon juice
¼ cup extra-virgin olive oil
1 shallot, minced
1 tbsp fresh lemon juice
2 tbsp capers
2 oil-packed anchovy fillets
¼ cup fresh flat-leaf parsley leaves
1 tbsp Dijon mustard
ground black pepper, to taste

Steps:

  • 1. Preheat oven to 425ºF; line a baking dish with parchment. Rub 1 tbsp avocado oil over salmon and season with ¼ tsp each salt and pepper. Place salmon on baking sheet. Roast until cooked through, 12 to 14 minutes. Set aside to cool. Reduce oven temperature to 200ºF. 2. In a small skillet on medium, heat 1 tbsp avocado oil. Add 2 minced shallots, celery, garlic and ¼ tsp salt. Sauté until celery is tender and veggies are fragrant, about 5 minutes; transfer to a large bowl. 3. Meanwhile, make sauce: In a small skillet, combine olive oil and 1 minced shallot; place over low heat and cook until shallot sizzles. Sauté 1 minute, then transfer to a food processor. Add 1 tbsp lemon juice, caper, anchovies, parsley and Dijon. Season with pepper; set aside. 4. Flake salmon into bowl with shallot mixture. Add almond flour, arrowroot, egg, lemon zest and juice, remaining ¾ tsp salt and remaining ¼ tsp pepper. Stir well, mashing with a fork. Scoop ¼ cup mixture; form into a 2½-inch round patty. Repeat to make 12 patties total. 5. In a large nonstick skillet on medium, heat ¼ inch avocado oil. Working in batches, cook patties until golden and cooked through, 2 to 3 minutes per side. Place a wire rack over baking sheet. After cooking, transfer patties to rack; keep warm in oven while you cook remaining patties. Serve with sauce.

1 small garlic clove, minced
1-1/2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest

SALMON:
4 frozen salmon fillets (4 ounces each), thawed
1/2 teaspoon salt
1/4 teaspoon pepper
3 large eggs
1-1/2 cups panko bread crumbs
4 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
2 tablespoons olive oil

Steps:

  • In a small bowl, mix the first seven ingredients. Refrigerate until serving., Preheat oven to 350°. Sprinkle salmon with salt and pepper. Bake until fish just begins to flake easily with a fork, 6-8 minutes. Cool slightly; remove skin if necessary. In a small bowl, combine eggs, bread crumbs, green onions, garlic and salt. Flake salmon; add to bread crumb mixture, mixing thoroughly. Shape into twelve 2-1/2-in. patties. Refrigerate, covered, 30 minutes., In a large skillet, heat oil over medium-high heat. Add patties in batches; cook until golden brown, 3-4 minutes on each side. Serve with dipping sauce.
