MOO SHU CHICKEN
There is no need to order take-out when you can make this classic moo shu chicken at home. It is simple and bursting with flavor. Serve over rice or Chinese mandarin pancakes if desired.

Steps:
- Whisk 2 tablespoons water, 2 teaspoons sesame oil, and cornstarch together in a large bowl. Stir in chicken and set aside.
- Whisk remaining 4 tablespoons water, 1 teaspoon sesame oil, hoisin sauce, oyster sauce, and soy sauce together in a separate bowl. Set aside.
- Heat 1 teaspoon vegetable oil in a skillet over medium heat. Add eggs and cook 3 minutes; flip and cook until firm and set, about 3 minutes more. Transfer to a cutting board and slice into thin strips.
- Add chicken mixture to the same skillet over medium-high heat. Cook chicken for 6 minutes; flip and cook until chicken is golden brown and juices run clear, about 6 minutes more. Remove from heat and set aside.
- Heat remaining teaspoon vegetable oil in a large skillet over medium-high heat. Add cabbage, shiitake mushrooms, garlic, and sherry. Cook until cabbage starts to wilt, about 2 minutes.
- Add chicken, eggs, and sauce mixture to cabbage mixture. Cook and stir until sauce has thickened, about 5 minutes. Toss in green onions and serve immediately.

Steps:
- Thinly slice green onions reserving 1/4 cup for garnish.
- Coursely chop water chestnuts with a food chopper.
- Combine hoisen sauce and 2 teaspoons of oil in a cup and set aside.
- For the pancakes, heat remaining teaspoon oil over medium-high heat for 1-3 minutes or until shimmering.
- Lightly beat eggs in a coating tray.
- Dip 1 tortilla into eggs, and place tortilla in skillet.
- Cook 20-30 seconds or until lightly golden brown, turning once.
- Repeat with remaining tortillas.
- Cover pancakes and keep them warm.
- Flatten pork with toothed end of a meat tenderizer, and cut into 1/4 inch strips.
- Add pork to skillet, cook 2-3 minutes over medium heat or until no longer pink.
- Add remaining green onions, water chestnuts, cole slaw mix, and hoisen sauce mixture.
- Cook 2-3 minutes or until heated through, tossing to coat.
- Spoon pork mixture into pancakes, and garnish with reserved onions.
MU SHU PORK AND MANDARIN PANCAKES

Steps:
- Combine soy sauce, sherry and hoisin sauce in a bowl.
- Add the pork, toss to coat evenly, cover, refrigerate and marinate for 30 minutes.
- Meanwhile, soak the mushrooms in enough hot water to cover for 20 minutes (no soaking if using button mushrooms).
- Drain and thinly slice.
- Set aside on a plate, along with the cabbage, carrot and scallions.
- Heat a wok or large skillet over medium-high heat.
- Add 1 tablespoon of the peanut oil and swirl to coat.
- Pour in the eggs, swirling and tilting the wok to form a thin film.
- Cook just until the eggs are set and feel dry on top, about 1 minute.
- Transfer to a platter, let cool slightly and cut into 1 inch strips.
- Return the wok to high heat, and swirl in the remaining 2 tablespoons oil.
- Add the garlic, and ginger, and stir-fry to release the aromas, about 1 minute.
- Add the pork and stir-fry until lightly browned, about 2 minutes.
- Add the reserved mushrooms, cabbage, carrot, bean sprouts, and scallions, along with the chicken stock, and stir-fry another 2 minutes.
- Stir in soy sauce, sherry, sesame oil, and sugar, and cook, stirring until sauce boils, about 1 minute.
- Add egg strips and mix well.
- To serve, spread a small amount of hoisin sauce on a warm Mandarin Pancake.
- Spoon about 1/2 cup mu shu mixture in center of pancake, wrap like a burrito, folding the ends to close, and serve.

- Before you begin, if you use dried wood ear mushrooms and shiitake, they need to be reconstituted first. Soak the wood ear in room temperature water for 30-40 minutes (check after 20 minutes as you might need to add more water). Soak the shiitake in hot water for 1 - 1.5 hours. They will puff up and return to the original texture. This dish is all about preparation. The actual cook time is fairly short so please read through the recipe first before you begin.
- Chicken - Halve the chicken breast then slice to thin strips. Add them to a bowl with the seasonings. Set it aside in the fridge.
- Preheat a large saute pan or wok over medium heat until it feels warm to your palm, when placing it 2-3 inches away. Add 1 tbsp oil. Add the eggs and swirl it around the pan. As soon as the eggs form shape, break it up to make soft scrambled eggs. Scrop out the eggs and set them aside.

- Mix the sliced chicken and marinade ingredients in a bowl until well-incorporated, and set aside for 15 minutes.
- Pour 1 tablespoon oil into a heated frying pan and pour in the beaten eggs to make an omelet. Transfer to a cutting board, and cut the egg omelet into thin strips. Set aside. Combine the hot water, 1 tablespoon hoisin sauce, 1 tablespoon oyster sauce, 1 teaspoon light soy sauce, and 1/2 teaspoon sesame oil in a bowl. Stir until well-combined and set aside.
- Heat another tablespoon of oil in your wok or large skillet until it's almost smoking, and add the chicken. Lightly sear on all sides until about 80% done, and remove from the wok. Set aside.
- Add an additional tablespoon of oil to the wok, and turn the heat up to high. Stir in the garlic, followed immediately by the cabbage, shiitake mushrooms, wood ear mushrooms, bamboo shoots, and lily flowers. Give everything a good stir for 1 minute. Add the Shaoxing wine, and stir-fry for another 20 seconds.
