I loved the flavors in this recipe. The cumin really made this burger special. Plus, I hardly ever meet a guac that I didn't like!

1/2 lb chopped turkey
1/2 lb chopped meat (beef)
1 Tbsp cumin
1 tsp chili powder
1 large chipotle pepper from a can of chipotle in adobo sauce (choppd fine)
1/2 tsp salt
1/4 tsp black pepper
4 2" pieces of monterey jack cheese
4 hamburger buns
MY GUACAMOLE
2 ripe avocados scooped out n slightly mashed
1/8 c chopped tomatoes
1/4 c chopped purple onion
1 tsp chopped cilantro (optional)
2 pinch cayenne pepper (maybe more)
1/4 tsp salt
1 tsp lime juice

Steps:

  • 1. In a large bowl mix together chopped turkey, chopped meat, cumin, chili pwdr, chopped fine chipotle pepper, salt, blk pepper.
  • 2. Divide mixture into 4 sections...n grab one n place chunk of cheese in middle n cover with meat then form into patty.
  • 3. Repeat with remaining meat mixture until all 4 are formed. Now place on hot bbq 5 min. Per side.
  • 4. While burgers r grilln...lets make guac! In med bowl put scooped out avacados, add chopped onion, chopped cilantro, chopped tomato, cayenne pepper, salt, lime juice n mash together (i like my guac chunky so i only smash slightly)
  • 5. Last step place hamburger on bun n top with guacamole n......enjoy :)

Sizzling with flavour! This Tex-Mex Burger has a lot of taste appeal and the visual isn't half-bad, either. Your mouth will explode with the flavours of spicy-hot Tex-Mex cuisine, tempered with a guacamole dressing. Members of the Kitchen Tourists suggested ingredients suitable for this delectable treat and so: Ed&Theresa - avocado; Muffin Goddess - lime; MA HIKER - hot sauce; fluffernutter - chipotle in adobo; Melody Ashcraft - tomato; Mandy from Oz - scallions; Laffer - cilantro; ms.susan - chili powder; TansGram - monterey jack cheese; and I provided the pickled jalapeno rings as per Recipe #170474. I'm sure you'll agree that these ingredients all came together sublimely to make the best burger ever. I would also like to thank Rita L, without whom this burger would just not have been possible. If Rita hadn't sent me a tin of chipotle in adobo last Fall, and if I hadn't frozen what I hadn't used then, this burger would just not have been possible! THANK YOU RITA!!! (this recipe is based on one I have already posted but seriously adapted)

1 avocado
1 tablespoon mayonnaise
3 teaspoons fresh lime juice (or 2 tsps fresh lemon juice)
1 dash hot sauce (not too much, more heat will come with the minced chipotle)
salt
1 plum tomato, seeded and chopped
1 tablespoon minced chipotle chile in adobo
1/4 cup thinly sliced scallion
1 tablespoon minced fresh cilantro, to taste
1 1/2 lbs lean ground beef
1 1/2 teaspoons chili powder
salt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
4 slices monterey jack cheese or 4 slices cheddar cheese
4 whole wheat hamburger buns, we like them toasted on the grill (if you can get bakery, seeded rolls, so much the better)
pickled jalapeno pepper, rings (store bought or Pickled Jalapeno Rings)
4 buttery-crisp lettuce leaves

Steps:

  • Halve, pit and peel avocado.
  • Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
  • Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
  • Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.
  • Heat a well-seasoned, ridged, cast-iron pan over moderately-high heat (or grill on bbq) until hot and cook the hamburgers 5 ½ minutes per side for rare.
  • Top with cheese slices and cook, covered, for 1 minute, to melt cheese.
  • Transfer to a plate and let stand, tented loosely with foil, for 3 minutes, to finish cooking.
  • Transfer to hamburger buns; top with guacamole dressing, sliced, pickled jalapeno rings (to taste) and lettuce.

Ground beef is mixed together with shredded Monterey Jack cheese, chopped onion and seasonings, grilled on the barbecue grill and served on a toasted sesame seed bun. Add toppings of your choice. Moist and delicious!

2 lbs lean ground beef
1/2 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon pepper
8 hamburger buns with sesame seeds
melted butter

Steps:

  • Combine shredded cheese, pepper sauce, ground beef, chopped onion, and salt and pepper.
  • Mix well, let stand for about 10 minutes and then shape into 8 burgers.
  • Grill for about 5 to 6 minutes per side or to desired doneness.
  • Brush inside of buns with butter and place cut side down on grill to brown very lightly.
  • Serve burgers on warm buns with your favorite toppings.

  • Divide one portion in half; knead one half into a patty 4 inches in diameter (about ½ inch thick). Place on a working surface and gently press in the middle of the patty to create a slight indentation.
  • Spoon 1 tablespoon of the refried beans into the indentation. Gently spread with a spoon or your fingers to create a circle, leaving about 3/4” of ground beef around the circle on the outside. This is necessary to marry the bottom and top portions of the burger with room to pinch them together.
