1 * pounds monkfish, cut into 3-inch pieces
1 1/2 cups chopped celery
1 1/2 tablespoons sliced scallions
1 1/2 tablespoons sliced chives
1 teaspoon chopped tarragon
1/3 cup mayonnaise
1 tablespoon lemon juice
Zest of one lemon
Freshly ground black pepper
2 tablespoons butter, softened
4 hot-dog rolls

Steps:

  • Bring a large saucepan of salted water to a boil. Lower the heat to a simmer, add the monkfish and poach for 8 to 10 minutes, or until fully cooked. Drain, then remove the dark veins and membrane and discard. Pull the monkfish into bite-size pieces and place them in a large bowl.
  • Add the celery, scallions, chives, tarragon, mayonnaise, lemon juice and zest. Season with salt and pepper. Blend until the fish is evenly coated with the dressing.
  • Butter the cut sides of the hot-dog buns and toast either under a broiler or in a nonstick pan over medium heat. Fill each roll with a helping of monkfish salad.

ROASTED MONKFISH WITH ROUILLE



Roasted Monkfish with Rouille image

1/2 cup dry white wine
1/2 red bell pepper, stemmed, seeded, and roasted (see Note)
3 dashes Tabasco
1 medium potato, peeled, halved, and boiled until tender
6 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 tablespoons fruity olive oil
1 teaspoon white vinegar
4 small white or red rose potatoes, unpeeled
1 tablespoon olive oil
1 medium onion, cut into 1 inch slices
2 cloves garlic, finely chopped
2 sprigs fresh rosemary
1 1/2 pounds monkfish tails, on the bone, skin and membranes removed
Salt and freshly ground black pepper

Steps:

  • To make the rouille, in a small saucepan, bring the wine to a simmer and reduce it by half. Set aside. In a food processor, combine the roasted pepper, Tabasco, potato, garlic, salt and pepper and process until almost smooth. Do not over process or the potato will become gummy. Add the olive oil and vinegar in a thin stream while the machine is running, then transfer the mixture to a bowl. Just before serving, heat the reduced wine slightly and beat it into the rouille, drop by drop, to loosen it. Bring a medium saucepan of lightly salted water to a boil. Add the whole potatoes and simmer for 10 minutes.
  • Drain well, cut in half, and set aside. Preheat the oven to 350 degrees. Heat a heavy 12 inch skillet, preferably cast iron, over medium high heat and add half the olive oil. Sear the onion slices until almost charred, pressing them down with the back of a spatula and turning to the other side when blackened.
  • Separate the onions into rings and add the garlic and rosemary. Cook, stirring frequently, for 1 minute. Transfer the vegetables to a plate and wipe the pan with a paper towel. Add the remaining olive oil and, again over medium high heat, lightly season and then sear the monkfish tails, turning with tongs to be sure all sides brown evenly. Return the onion mixture to the skillet around the fish and add the potatoes. Season generously with salt and pepper. The fish should not be crowded or it will steam rather than roast. Transfer the skillet to the oven and roast for about 15 minutes, or until the fish is cooked through and the potatoes are tender. Serve the rouille on the side.

Wok-Cooked Monkfish with Sesame Soy Sauce image

Fish is traditionally eaten on Chinese New Year because the Mandarin word for fish is 'Yu' and during the festival there is a phrase called 'Nian nian you yu', which translates as 'Every year you have abundance' - whether it's wealth, luck, happiness, good health or all of the above! In addition to the usual 'Gong xi fa cai' (wishing good fortune), this is a popular phrase. The Chinese serve the fish whole, as it symbolises unity and 'completeness'. When using fillets, the 'incompleteness' can be compensated for by serving uncut whole wheat noodles (uncut noodles symbolise longevity) with a soy, sesame and spring onion sauce to drizzle over the dish.

3 tablespoons groundnut oil
2 (12-ounce) monkfish fillets or 2 cod fillets, washed, seasoned with salt and pepper and cut into 6 smaller fillets*
4 cloves garlic, crushed and finely chopped
1 (1-inch) piece fresh ginger, peeled and finely chopped
1 medium red chile, seeded and finely chopped
4 to 5 tablespoons light soy sauce
2 tablespoons toasted sesame oil
2 spring onions (green), sliced into thin strips
1 tablespoon coarsely chopped fresh cilantro leaves
Serving suggestion: Steamed asparagus and broccoli florets, scented rice and dressed whole wheat noodles

Steps:

  • Heat some groundnut oil in a large wok over high heat. Add the fish to the wok, pressing lightly on the fillets as they cook. Cook for 3 to 4 minutes. Turn the heat down to medium.
  • Turn the fish over and sprinkle the garlic, ginger and chile over the fillets. Cook for a further 3 to 4 minutes, depending on the size of the fillet, until the flesh has turned opaque and flakes when poked at with a fork or a pair of chopsticks.
  • Season the fish with the soy sauce and sesame oil. Add the spring onion strips and chopped cilantro and cook until the herbs have wilted slightly.
  • To serve, garnish the fillets with the wilted herbs and serve immediately with the steamed vegetables or the scented rice and noodles if using.
