This banana bar recipe is soft and moist with browned butter icing. Think of the best banana bread made into easy to eat bars.

1 ½ cups sugar
1 cup sour cream
½ cup unsalted butter, softened
2 large eggs
1 ¾ cups 3 or 4 ripe bananas, mashed
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts ((optional))
½ cup unsalted butter
3 3/4 cups powdered sugar
1 teaspoon vanilla
about 3 tablespoons milk or half and half

Steps:

  • Heat oven to 375 degrees. Grease and flour 10x15 jelly roll pan or line with parchment paper (for thicker bars use a 9x13 pan and bake for 10 minutes longer than directed). In a large mixing bowl, beat first four wet ingredients with an electric mixer or stand mixture with the paddle attachment until creamy.until creamy. Blend in the mashed bananas and vanilla for one minute. Add dry ingredients and blend flour mixture for one minute. Stir in nuts and pour batter into the pan. Bake 20 to 25 minutes until golden brown. Cool slighty until warm but not hot and frost with Browned Butter Frosting (recipe below).
  • For the Browned Butter Frosting Recipe: Heat butter in saucepan over medium heat past the melting point until it is boiling and a delicate brown. Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze and thinner than frosting. You can add milk to get it to the correct consistency. Using a spatula smooth over the top of the banana bars immediately for the best results. The frosting will be easier to spread once it's on the warm bread.

4 cups confectioners' sugar
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15x10-inch jelly roll pan.
  • Beat white sugar, sour cream, 1/2 cup softened butter, and eggs in a bowl with an electric mixer until creamy. Beat in bananas and 2 teaspoons vanilla extract. Add flour, baking soda, and salt; mix for 1 minute. Stir walnuts into batter until evenly incorporated. Spread batter in prepared pan.
  • Bake in the preheated oven until golden, about 27 minutes. Cool.
  • Melt 1/2 cup butter in a large saucepan over medium heat until bubbling and golden brown, 3 to 5 minutes. Remove from heat.
  • Whisk confectioners' sugar, milk, and vanilla extract into melted butter until a smooth frosting consistency is reached. Spread frosting over cooled banana bars.

½ cup unsalted butter, (softened)
1 cup sugar
3/4 cup brown sugar
3 eggs
1 ½ cups mashed ripe bananas, (about 3-4 bananas)
1 teaspoon vanilla extract
2 cups all-purpose flour or gluten free all-purpose flour, ((I recommend using Cup 4 Cup gluten free flour))
1 teaspoon baking soda
1/4 teaspoon salt
½ cup (1 stick) unsalted butter
2 ½ cups powdered sugar
¼ teaspoon salt
3 tablespoons milk

Steps:

  • Preheat oven to 350°F. Grease a 15X10 jellyroll baking pan (see recipe notes for 9x13 pan).
  • In a large bowl, cream butter, sugar, and brown sugar until light and fluffy, about 3-5 minutes. Beat in the eggs, mashed bananas and vanilla until well combined. Add flour, baking soda and salt; mix into creamed mixture until just blended.
  • Pour batter into prepared baking pan. Bake 20-25 minutes, rotating pan 1/2 through baking. Bars are done when toothpick inserted in middle comes out clean.

BANANA BREAD BARS
1 1/2 c sugar
1 c sour cream
2 eggs
1/2 c butter, softened
1 3/4 c mashed ripe bananas (3-4 bananas)
2 tsp vanilla extract
2 c all purpose flour
1 tsp baking soda
3/4 tsp salt
1/2 c chopped walnuts (optional)
BROWN BUTTER FROSTING
1/2 c butter
4 c powdered sugar
1 1/2 tsp vanilla extract
3 Tbsp milk

Steps:

  • 1. 1. Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
  • 2. 2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
  • 3. 3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
  • 4. 4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

4 tablespoons salted butter (softened or even melted and cooled)
1/4 cup lightly packed brown sugar
1/2 cup granulated sugar
1/2 cup sour cream
1 large egg
1 teaspoon vanilla extract
2/3 - 1 cup mashed ripe bananas ((about 2 large bananas))
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter
2 cups powdered sugar
1/2 teaspoon vanilla extract
1-2 tablespoons milk or cream (see note)

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan (see note) with cooking spray and set aside.
  • For the bars, in a large bowl, cream together the butter, brown and granulated sugars, sour cream, egg, and vanilla until well-mixed, 1-2 minutes.
  • Blend in the bananas and mix.
  • Stir in the flour, baking soda and salt and mix for just a minute or two until combined.
  • Pour the batter evenly into the prepared pan and bake for 15-20 minutes until a toothpick inserted in the center comes out clean and the top springs back to the touch.
  • While the bars are baking, make the frosting by melting the butter in a saucepan or stainless steel (not nonstick) skillet over medium heat (here's a quick tutorial on browning butter). Bring the butter to a gentle simmer, turning the heat down if needed, until the solids lightly brown and the butter smells caramelly and fragrant. Immediately remove from the heat and add the powdered sugar, vanilla and milk, whisking until smooth and creamy. Add more milk if needed to achieve a thick but spreadable consistency.
  • Let the bars cool for 5-10 minutes and then dollop the frosting over the warm bars and spread in an even layer.
  • Cool the bars to room temperature. Cut into squares and serve. These keep well-covered for 1-2 days at room temp or refrigerated.

I got this great recipe from a site called CaramelPotatoes.com. So yummy. The sour cream helps to keep these light, like cake, but the bananas make it super moist. This is a great way to use up over-ripe bananas. I put them in the freezer and just thaw them when I'm ready to bake. Works great!

  • Heat butter in saucepan over medium heat past the melting point until it boils and turns a delicate brown.Remove from the heat and immediately wisk in the remaining ingredients. This should make a thick glaze. Using a spatula smooth over the top of the Monkey Bars immediately. Work quickly, it hardens fast!

1/3 cup vegetable oil
1 large egg
1 cup nuts, chopped (I used pecans)
1 (14 ounce) can sweetened condensed milk
1 cup banana, mashed (about 2 medium)
1 cup butterscotch chips or 1 cup milk chocolate chips
1 1/3 cups sweetened flaked coconut

Steps:

  • Preheat oven to 350°F
  • Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
  • In a large bowl beat cake mix, oil and egg until well blended and crumbly.
  • Stir in nuts.
  • Set aside 1 cup of the crumb mixture.
  • Firmly press remaining crumb mixture on bottom of prepared pan.
  • In a small bowl, combine condensed milk and mashed banana; pour evenly over crust.
  • Top with butterscotch chips and coconut; press down firmly.
  • Sprinkle with reserved crumb mixture.
  • Bake 25-28 minutes or until lightly browned.
