MOM'S TURKEY STUFFING

Turkey stuffing recipe made with ground beef, onion, celery and stuffing mix. The perfect stuffing for holiday dinners like christmas and thanksgiving. This is enough stuffing for a 14 pound turkey.

1 pound lean ground beef
1 medium onion (diced)
2 stalks celery (diced)
2 packages turkey stuffing mix (6oz (170g) per package)
3 cups water

Steps:

  • Brown the ground beef in a pot of dutch oven over medium heat. Use a wooden spoon to break the beef into little chunks. Drain the grease.
  • Stir in the diced onion and celery and cook until tender and soft. Turn off the heat and let cool slightly.
  • Stir in the stuffing mix. Slowly pour in the water, stirring so that all the dry bread pieces soak up the water evenly.
  • Let the stuffing sit for about 10-15 minutes to allow the bread to soften from the water.
  • Spoon the stuffing into the cavity of a turkey that is ready to be roasted. As you are stuffing the turkey, you can gently press the stuffing into the cavity with the back of the spoon. This can allow you to get more stuffing into the cavity.
  • Roast the turkey according to the temperature and time for the size and weight of your turkey.

Traditional turkey/chicken stuffing recipe my mom, Agnes, has been making since before I was born. Can also be cooked outside the bird in an oven baking dish. Excellent cold, sliced on turkey sandwiches!

4 cups dried or toasted bread, cubed (good for an 8 - 10 lb. roasting chicken or turkey)
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon poultry seasoning
1 egg, slightly beaten
3 tablespoons butter
3 tablespoons onions, chopped
1 1/2 cups celery, chopped
2 tablespoons cooking oil

Steps:

  • Moisten bread cubes with milk or hot water.
  • Add salt, pepper, poultry seasoning, and egg.
  • Combine mixture.
  • Melt butter in frying pan and add onions until slightly browned, then add celery.
  • Stir, then add to bread cube mixture.
  • Stuff turkey or chicken lightly with stuffing, being careful not to pack stuffing in tightly.
  • Rub turkey or chicken well with oil, salt, and pepper.
  • Put in 300 degree oven for 2 1/2 hours.
  • After 1 1/2 hour turn oven down to 250 degrees.

This is my mom's recipe. I was raised on stuffing (my parents are from up north but now live in the south), not dressing so if I want stuffing when I have a turkey I either have to go to my mom's house or I have to make it myself. My mom is not a recipe kind of person but I helped her make it (so I could learn) and wrote it down as we went. These are all appoximations since I tend to vary the amounts as I cook it just like she does in her cooking. One thing is for sure, it's delicious!!! Oh yeah, it makes enough for an army... I am not sure about the cooking time, it could be more, depending if you cook it in a turkey or less if not, for the most part everything is cooked except the vegetables. ENJOY!

2 lbs hot pork sausage
1 stalk celery
2 -3 portabella mushrooms (cutup, 10 pieces)
3 large onions
1 zucchini
2 yellow squash
5 -7 slices whole wheat bread (cut into small cubes)
1 (16 ounce) package pepperidge farm herb seasoned stuffing mix
poultry seasoning (lots of it!)
sage (lots!)
cranberries (if you desire)
apple (Granny Smith is good but your choice)

Steps:

  • Brown sausage and drain partially. (Keep some grease for stuffing).
  • Cook Pepperidge Farm stuffing according to directions on package.
  • Mix sausage, part of grease, cooked stuffing and all other ingredients, cooking on low on stovetop, continue to cook a while and taste, cook and taste.
  • When it taste to your liking, you can either put it in the oven for 350 degrees for an hour or hour and a half or the best way is to stuff the turkey loosely with it. Don't forget to sew the turkey. If you do stuff the turkey, you will most likely have extra stuffing so you will have to bake some of it in a oven safe dish like I was talking about before.
  • If you cook it in a dish in the stove, make sure you stir it every 20-30 minutes.

4 -5 cups Texas toast thick bread
2 small onions, chopped
3 celery ribs, sliced thinly
1/2 cup butter
3/4 teaspoon dried sage
1 teaspoon poultry seasoning
3 cups chicken broth
2 eggs, beaten
1 (8 ounce) package peppridge farm herb seasoned stuffing mix

Steps:

  • Remove crust and cube the Texas Toast.
  • Toast cubes in the oven at 350 until golden brown about 10 minutes.
  • Melt butter in a large skillet, over moderate heat.
  • Saute onion, celery and herbs in butter until celery is softened about 20 minutes.
  • Add toasted bread cubes to the vegetable mixture to soak up butter.
  • Place bread and vegetable mixture in a large mixing bowl.
  • Add chicken broth, eggs, and Pepperidge Farm Stuffing Mix to the mixing bowl.
  • Mix thoroughly.
  • Add salt and pepper to taste.

Most Americans no doubt love their family's traditional Thanksgiving stuffing. Here's my mom's recipe that I have used and adapted for many years. It's always been my favorite part of the holiday meal. I hope you enjoy it! This is a good amount for an 18 pound turkey. The amounts may be easily increased or decreased. I make bread crumbs by slicing and cutting different types of bread, like whole wheat, sourdough, and potato. I usually dry the bread in a large, deep pan in the oven, stirring often for about 15-20 minutes at around 350 degrees. My mom used to prepare the bread cubes on the Monday evening before Thanksgiving, putting them in bowls or pans, covering them with cloths, and stirring occasionally to achieve a dry texture in a few days.

1 cup sliced mushrooms (optional)

12 ounces bulk sausage or 12 ounces sausage links
1/2 cup butter
3 cups onions, chopped
1 cup celery, chopped
3 cups mushrooms, chopped
6 cups cornbread stuffing mix
6 cups bread cubes
1 teaspoon rubbed sage
1 teaspoon dried thyme
1 tablespoon poultry seasoning
1 teaspoon salt
1 teaspoon fresh ground pepper
1 cup pecans, chopped
1 1/2 cups turkey broth or 1 1/2 cups chicken broth
2 eggs

Steps:

  • Saute sausage until brown; remove from pan and cut into small bites.
  • In a large skillet, melt butter and cook onion, celery, and mushrooms over medium heat for 3 minutes or until softened.
  • Transfer sausage and veggies, including any butter that is left in the pan to a bowl.
  • Add stuffing mix, bread cubes, sage, thyme, poultry seasoning, salt, pepper, pecans, turkey stock, and eggs.
  • Toss well and adjust seasoning.
  • Stuffing should be moist but not soggy. Add more stock if needed.
  • Transfer to a baking dish.
  • Bake in a 325 degree Fahrenheit oven for 20 minutes covered and 10 minutes uncovered until heated through and crust forms on top.

My Family's Meat Stuffing for a Turkey image

This is a meat stuffing my family has used all my life and before. This was given to my mother by her mother, and I imagine, her mother. Our whole family used this recipe. My daughter makes this stuffing as well, and now my granddaughters have the recipe so they will eventually use it. It is a very tasty stuffing so we make "tons" of it to freeze or use over the holidays. It's good on toast with gravy as a hot open sandwich. Or with turkey slices and gravy as a leftovers meal. You can make it a day or so ahead, but you must bring it to room temp if you are going to stuff your bird with it. ETA: I have always made the stuffing and put it into the turkey HOT. That way there is no problems with the turkey being overdone to make sure the stuffing is heated through. IN RESPONSE THE THE REVIEW DATED NOV 20 2007 ---- I appreciate your FYI, however, I have been making my turkey just this way for over 40 years, and have yet to lose a family member or friend. I have eaten it this way from "birth" since this recipe and method has been used by my mother and my grandmother before her.

2 1/2 lbs ground beef, your choice of cut
1 lb ground pork, I use Jones Sausage Roll*
1 cup large dice celery
1 cup large dice onion
6 -12 ounces pepperidge farm onion and garlic croutons
1 lb butter, you may not need it all
poultry seasoning
salt
pepper

Steps:

  • First, have a very large bowl or pot close to stove top so you can put ingredients in as they are cooked.
  • Second, you need a good sized fry pan, preferabley with deep, straight sides.
  • Third, a good pair of tongs and spoonula.
  • Fourth, are the ingredients. These are estimations, I don't really measure.
  • Fifth, you might want to do the prep ahead so as to be able to cook and stuff all at once. Or not!
  • *you could use just ground pork but the sausage gives a better taste.
  • Heat fry pan and oil lightly with a pat of butter.
  • Fry 1/2 the beef and 1/2 the sausage together. Make sure to break it all up and mix it well until all is cooked. Dump it all into the pot/bowl you have waiting. Juices and all.
  • Do the same to the rest of the beef and sausage. Mix thoroughly.
  • Melt 1/4 cup (4 Tbs) butter in fry pan and saute the celery until almost cooked. Dump it all into the pot/bowl and mix thoroughly.
  • Melt 1/4 cup (4 Tbs) butter in fry pan and saute the onion until wilted, but not brown. Dump all into the pot/bowl and mix thoroughly.
  • Add seasonings at this point. Use the amount that is to your liking. Mix very well.
  • If it seems too dry at this point, melt more butter in the fry pan and add to the mix.
  • Finally, add the 1 box of croutons and mix several times over the next 15-20 minutes.
  • There should be little or no liquid in the bottom of the pot/bowl after this time. The croutons should have absorbed it. If not, add more croutons and repeat.
  • Now you can either put the stuffing in a casserole dish, roaster or other baking pan , and cook separately from the turkey.
  • I stuff my turkey, both neck and cavity immediately, while the stuffing is hot, and put it into the oven to roast. The extra stuffing goes in a separate pan to cook along side the turkey.
  • If you use a spearate casserole to do cook the stuffing, you may want to use some pan drippings to mix into the casserole and give it more flavor.
  • With this we serve mashed potatoes, peas, my special turnip/carrot mash, cranberry sauce, and Polish rye or sisal bread. Of course, the gravy, too!
