  • 1. In a large bowl, mix together ingredients in order given
  • 2. Divide mixture into 3 greased loaf pans.

2 teaspoons baking powder
½ teaspoon soda
1 teaspoon salt

2 eggs
¼ cup butter
1 cup chopped nuts

Steps:

  • Preheat oven to 350 degrees
  • Grease a 9" x 5" x 3" loaf pan.
  • In a medium bowl, sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • Combine in a separate medium bowl the pumpkin, sugar, milk and eggs.
  • Add dry ingredients and butter; mix only until flour is moistened.
  • Stir in nuts.
  • Bake in a greased 9x5 loaf pan 65 minutes at 350 degrees, until toothpick comes out clean. Cool 10 minutes.
  • Remove from pan to a cooling rack and cool completely.

3/4 teaspoon ground allspice

Steps:

  • In a large bowl, beat the pumpkin, sugar, milk, egg whites, oil and applesauce until well blended. In a small bowl, combine the flour, baking soda, cinnamon, baking powder, allspice and salt; gradually beat into pumpkin mixture until blended. Stir in pecans., Transfer to two 9x5-in. loaf pans coated with cooking spray. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. 2 teaspoons pumpkin pie spice
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup fat-free evaporated milk
1 large egg
1 large egg white
1 tablespoon vegetable oil
1/4 cup chopped nuts

Steps:

  • PREHEAT oven to 350°F Grease 9 x 5-inch loaf pan.
  • Combine flour, pumpkin pie spice, baking powder, salt and baking soda in medium bowl. Blend pumpkin, granulated sugar, brown sugar, evaporated milk, egg, egg white and oil in large mixer bowl. Add flour mixture; mix just until moistened. Pour into prepared loaf pan; sprinkle with nuts.

Closer to Christmas I make tons for friends, neighbors and my hubbys golf buddys!!! This is probably my favorite thing to make for the Christmas holidays. Tie it with red and green ribbon and it makes a sweet gift.

1 (16 ounce) can solid-pack pumpkin
1 teaspoon vanilla

1 teaspoon clove
1/2 teaspoon nutmeg
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees.

There is NO pumpkin bread recipe that comes close to this one!!! My mom and I like to add plenty of cinnamon, which makes this super moist bread very flavorful. If you make mini loaves, they make great Christmas or hostess gifts.

4 eggs
1 c pumpkin (canned)
1 c vegetable oil
1 c water
3 c sugar
3 c flour
2 tsp cinnamon (generous tsps!!)
2 tsp baking soda
1 tsp cloves
1/2 tsp baking powder
1/2 tsp salt
1 dash(es) nutmeg

Steps:

  • 1. Preheat oven to 325 degrees. Grease loaf pans - use 3 9x5 inch pans or 4 8.5x4.5 inch pans and divide the batter evenly.
  • 2. Beat together eggs, pumpkin, oil and water. Add remaining ingredients and beat well.
  • 3. Pour batter into loaf pans - the larger pans will be about 1/3 full and the smaller pans about 1/2 full.
  • 4. Bake for 50 minutes, then rotate pans (move middle pans to outside) and bake for 10 minutes. If bread is not done after 60 minutes, continue baking and check for doneness every 5 minutes. Bread is done when the surface looks dry and the top springs back when gently pushed with your finger.
  • 5. Allow bread to cool for about 15 minutes, then gently pop out of the pans. Bread is the best when warm and fresh, but it will last a week or two wrapped in foil and refrigerated. Wait until the bread is completely cool before wrapping so it doesn't get soggy. ENJOY!!!

1/2 tsp ground ginger
1/4 tsp baking soda

1/3 c shortening
2 large eggs
1 c canned libby's pumpkin
1/4 c whole milk
1/2 c coarsely chopped walnuts (optional)
1/2 c raisins (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a mixing bowl, stir together flour, baking powder, salt, ginger, baking soda, and cloves; set aside. In a large mixer bowl beat together brown sugar and shortening until well combined; beat in eggs. Add pumpkin and milk; mix well. Add flour mixture to sugar-pumpkin mixture, mixing well. Stir in chopped nuts and the raisins, if using.
  • 3. Turn batter into a greased 9x5x3-inch loaf pan. Bake in a 350 degree oven for 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan 10 minutes. Remove from pan; cool thoroughly on a wire rack. Wrap in aluminum foil and place in a zip-lock bag and store overnight before slicing. Makes 1 loaf.

Simply the perfect Banana Bread recipe. Moist, quick and easy to make with a soft, tender crumb. Truly the best Banana Bread I've ever had and our favorite way to use up ripe bananas!

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 to 4 ripe bananas (mashed should be about 1 ¼ cups (anywhere from 1 to 1 ½ cups will work))
3/4 cup granulated sugar (can use a combination of brown sugar and granulated sugar (see post))
2 large eggs
6 tablespoons unsalted butter (melted and cooled)
1/3 cup sour cream (plain Greek yogurt can be used instead)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Spray with nonstick cooking spray or grease and flour the bottom and sides of an 8½ x 4½ inch loaf pan. (Can also butter pan and sprinkle with sugar or a combination of sugar and cinnamon.) Set aside.
  • Whisk together flour, baking soda and salt in a medium bowl.
  • Mash bananas in a large bowl using a potato masher, fork, or a mixer. There can be some small chunks remaining, it doesn't have to be completely smooth.
  • Whisk in sugar, eggs, melted butter, sour cream and vanilla extract.
  • Add flour mixture and stir in gently just until combined. Transfer to the prepared loaf pan and use the spatula to smooth the top.
  • Bake for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If bread starts to get too brown on top, tent with foil for the last 10 minutes.
  • Let bread cool on cooling rack in loaf pan for 15 to 20 minutes. Invert the loaf pan and carefully remove banana bread. Let bread continue to cool on the rack for another hour or more. Slice and serve.

  • Bake for about an hour (if using standard loaf pans) but start checking for doneness after 45 minutes — the loaves are done when the center springs back when touched. Note: When using the small pans, the loaves should be done in under 45 minutes. Start checking after 30 minutes.
