A simple one-pan meal with boneless pork chops, sauerkraut, potatoes, apples and caraway seeds.

1.5 - 2 lb boneless pork chops (about 1/2 inch thick)
2 Tablespoon olive oil
4-6 medium russet potatoes
1 apple
18 ounces sauerkraut (undrained)
1 teaspoons caraway seeds
1 onion (optional)

Steps:

  • Peel and dice the potatoes, apple, and onion, if using. Set them aside.
  • Preheat the oven to 350°F (176°C).
  • While the oven preheats, pat the pork chops dry with a paper towel and season very lightly with salt and pepper. Heat a large dutch oven on the stovetop over medium-high heat.
  • Add the oil. Once the oil is shimmering (about 1 minute), add the pork chops. Brown on each side for about 3 minutes per side. They should easily release once they're ready to be flipped.
  • Set the pork chops aside and add the saurkraut to the hot dutch oven. With a wooden spoon, gently scrape the bottom to deglaze it. Add the onion, potatoes and apples and then lay the pork chops on top. Sprinkle the caraway seeds.
  • Cover and bake in the oven for one hour. Remove the dutch oven, allow to cool slightly, and serve!

6 (6 ounce) boneless pork chops
1 (32 ounce) jar sauerkraut, drained
6 potatoes, sliced
4 Golden Delicious apples, chopped
8 carrots, peeled and sliced
1 large sweet onion (such as Vidalia®), chopped
⅓ cup red wine
¼ teaspoon ground cinnamon
1 bay leaf, or to taste
freshly ground black pepper to taste
1 tablespoon water, or as needed

Steps:

  • Heat a large skillet over medium-high heat. Cook pork chops until browned, 3 to 4 minutes per side.
  • Combine sauerkraut, potatoes, apples, carrots, onion, red wine, cinnamon, bay leaf, and black pepper in a slow cooker. Add the browned pork chop. Pour 1 tablespoon water into the skillet, scrape up the glaze, and transfer to the slow cooker.
  • Cook on High until pork and vegetables are fork-tender, 6 to 8 hours.

This is a recipe that is similar to my Pennsylvania Dutch grandmother's but was modified by me. She used a pressure cooker but I prefer the crock pot. I always serve this with a side of mashed potatoes and applesauce to accompany it.

1 pound pork roast, cut into 1 inch cubes
1 (32 ounce) jar sauerkraut with juice
½ (12 fluid ounce) can or bottle beer
½ apple, peeled and cored
1 tablespoon minced garlic
½ tablespoon fresh dill weed
1 teaspoon onion salt
1 teaspoon dry mustard

Steps:

  • Combine all ingredients in a slow cooker and stir well. Submerse the apple under the other ingredients.
  • Cook on High for one hour, reduce heat to Low and continue cooking for 5 hours or until pork is cooked through. Discard apple and serve.

"I learned how to make this dish from my grandfather Pap. When I was a kid, we ate it on New Year's Day, but now I make it all the time," says Michael.

2 tablespoons unsalted butter
1 yellow onion, diced
1 head green cabbage, diced
Kosher salt
1 quart apple cider
1 12-ounce can or bottle IPA
1 tablespoon red pepper flakes
1 tablespoon coriander seeds
1 cup sauerkraut, pureed
1 ham hock
1/2 rack bone-in smoked pork loin (about 3 1/2 pounds)
2 pounds garlic sausage or kielbasa
1 bunch parsley leaves, roughly chopped or torn
1/4 cup hot mustard
Freshly cracked black pepper

Steps:

  • Melt the butter in a large Dutch oven over medium-high heat. Add the onion and cabbage, season with a large pinch of salt and cook until the vegetables begin to melt and break down, 10 to 12 minutes. Stir in the cider, beer, red pepper flakes, coriander, pureed sauerkraut and ham hock. Bring to a simmer and cook for 30 minutes to let the flavors meld.
  • Nestle the pork and sausage in the Dutch oven and continue to simmer for 45 minutes, until all of the meat is cooked through and tender. After 45 minutes, remove the ham hock, pork and sausage to a cutting board. Slice all of the meat and add it back into the pot. Mix in the parsley and mustard and additional salt and pepper, if needed.

3-4 pounds boneless pork ((loin, shoulder, butt, or tenderloin))
2 pounds sauerkraut (drained)
1 apple (peeled & diced)
1 small sweet yellow onion (diced)
1 cup apple juice
salt & pepper

Steps:

  • If desired, trim excess fat off of the pork. Place meat in the slow cooker.
  • Top with the sauerkraut, onion, and apple, then season with salt & pepper.
  • Cook on high 4-6 hours, or low 8-10 hours. Until pork is cooked through and shreds easily.
  • Remove the pork and shred. Serve with the sauerkraut.

Having married into a Polish family, I had to learn to cook sauerkraut "properly," as it was frequently served as an accompaniment to pork, ham and homemade kielbasa. This is how my M-I-L taught me to make it.

2 tablespoons butter
1/2 cup chopped onion
1 quart sauerkraut, well rinsed and squeezed dry
1 potato, peeled and grated
1 teaspoon caraway seed
2 -3 cups boiling water

Steps:

  • Melt butter in a Dutch oven or a heavy saucepan.
  • Add onion and cook until golden yellow.
  • Stir in sauerkraut and 1/2 cup water, cook for about 8 minutes.
  • Add potato and caraway seed, mix well.
  • Pour in about 2 cups of boiling water.
  • Cook uncovered over low heat for 30 minutes.
  • Cover, and continue cooking for 30 minutes longer.
  • If it starts to dry out, add the additional 1/2 cup of boiling water.

3 cups sauerkraut
1 cup dill, chopped
2 cups cabbage, chopped
1 (28 ounce) can tomatoes, chopped
1 teaspoon peppercorn

2 chili peppers
3 potatoes
1 teaspoon salt
1 medium onion, chopped

Steps:

  • Boil chicken in water with bay leaf, chili peppers, peppercorns and salt, until done. Remove chicken, separate meat from the bones, and add it back into the broth. Add remaining ingredients, and cook until the potatoes and onion are tender.
