MOM'S FUDGE
Posted in reply to a request. I didn't see any similar to this when searching. My mom got it from a church magazine in the early 1960's. Great for the biceps & triceps!

Steps:
- Place chocolate chips and butter in a pan (I use an 8 quart to have plenty of room for stirring).
- Use the butter wrappers to grease a 9 x 13 pan.
- Cut up 20 large marshmallows into the pan.
- (Can use 2 C mini) Put in the freezer.
- Place 20 large marshmallows, canned milk and sugar in 6-8 quart heavy pan.
- Stirring, bring to a boil.
- Continue to boil exactly 5 minutes, stirring constantly (Don't worry if there are some darker streaks, just stir better).
- Pour mixture over chocolate chips and butter.
- Continue stirring until mixture looses it's shine and becomes glossy.
- This can take anywhere from 15-30 minutes.
- Stir in vanilla and frozen marshmallows.
- (You can also add nuts at this point).
- Return to the buttered pan and refrigerate.
- I've made this in small tins for gifts by lining them with plastic wrap and placing a piece of cardboard, covered with parchment, on the bottom (inside the plastic wrap).

INDIAN FUDGE
Steps:
- Grease an 8-by-8-inch square pan.
- Melt the butter in a saucepan over medium heat and add the dry milk powder, ground cashews, chopped cashews, 1/4 cup chopped pistachios and ground cardamom. Stir and cook until the mixture begins to turn golden, about 10 minutes.
- In a separate pot, heat the sweetened condensed milk over low heat. Pour into the nut mixture and turn the heat off. Stir to combine, and then pour into the prepared pan. Sprinkle with the remaining 2 tablespoons chopped pistachios and let set for at least 20 minutes. Cut into 1 1/2-inch pieces and serve.
PERFECT FUDGE
My mom has been on a search for the perfect fudge, and I think she finally found it! This fudge is so EASY to make because no candy themometer is needed. The fudge is creamy, rich and delicious and it comes out PERFECT everytime!

Steps:
- Prepare two 8X12-inch baking pans, by coating them with butter.
- In a large 4-quart pot, combine sugar, evaporated milk, salt and butter.
- Bring to a boil.
- Cook for 5 minutes, stirring constantly.
- Add both chocolates, marshmallow creme, pecans and vanilla.
- Stir until chocolate is melted and ingredients are well blended.
- Pour into prepared pans and allow to cool for about 30 minutes before cutting.
MOTHER'S FUDGE
Steps:
- Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.
MOM'S PERFECT THERITIPAAL (SOUTH INDIAN MILK "FUDGE")
This is a rich South Indian sweet that my mom makes perfectly every time! Thertipaal is a type of "fudge" made of basically 3 ingredients: milk, milk powder, and sugar. It is often made during Indian festivals as a holy offering to the Gods. Unlike American fudges, this does not "set", and has the texture of rather gooey fudge. It is rather time-consuming, but well worth the effort! Caution: It's rather heavy on your tummy, so go easy on it... even though you won't want to stop eating this! :-)

Steps:
- Boil milk in a heavy-bottomed pot and then lower the flame to medium.
- Let the milk simmer till it reduces to one-fourth of the original quantity (about 30 minutes), stirring every 5 minutes for a whole minute.
- Make a thick paste of the milk powder with 1 cup water.
- Add it to the reduced milk and again bring it to a boil, stirring continuously.
- Simmer again for 10 minutes.
- Now add sugar, mix well, bring to a boil, and then reduce flame to a simmer.
- After about 20 minutes, when the mixture reduces into a coarse, thick batter (almost lumpy, like dense muffin-batter), remove from flame.
- Let it stand until cooled to room temperature.
- Spoon into dessert bowls and serve warm, or chilled.
