FRENCH CANADIAN TOURTIERE
Traditional French Canadian Tourtiere (meat pie), served on Reveillon (Christmas Eve).

Steps:
- In a saucepan, combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper and cloves. Cook over medium heat until mixture boils; stirring occasionally. Reduce heat to low and simmer until meat is cooked, about 5 minutes. Allow to cool to room temperature.
- Preheat oven to 425 degrees F (220 degrees C).
- Spoon the meat mixture into the pie crust. Place top crust on top of pie and pinch edges to seal. Cut slits in top crust so steam can escape. Cover edges of pie with strips of aluminum foil.
- Bake in preheated oven for 20 minutes; remove foil and return to oven. Bake for an additional 15 to 20 minutes, or until golden brown. Let cool 10 minutes before slicing.

MOM'S MEAT PIES
This is a recipe that my mom made up when we were kids, she would make it often and we all loved them!

Steps:
- Cut pie crust to make 4 pieces.
- For each pie crust put equal amounts ground beef, onion and potato, season with salt and pepper to your liking. All ingredients should be raw.
- Fold each individual pie to make a little pocket.
- Bake at 350 for 30 minutes or until crust is light brown.
- When we were kids we would eat this with ketchup, my husband likes it with gravy.

GOOD OLD MEAT PIE
A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

- Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
- Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
- Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

FRENCH MEAT PIE
French Canadian Meat pie. Tourtière, which is also known as meat pie is traditionally made with ground meat, onions, spices, and herbs baked in a pie crust.

- Dissolve the Better Than Bouillon chicken into the hot water. Set aside.
- In a large pot or Dutch oven, over medium heat. Cook the onion and celery for about 5 minutes to slightly soften. Stir with a wooden spoon to not burn.
- Add the chicken stock mixture, ground pork, ground beef, and poultry seasoning. Cook over medium heat until the meat is cooked, about 20 minutes.
- Add the breadcrumbs, allspice, ground cloves, and black pepper. Stir to combine. Let cook another 10 minutes.
- Add salt to taste. Should only need a pinch of salt. (remember bouillon and breadcrumbs already have salt in them)
- Let cool completely. Add to unbaked pie shells. Either homemade pie crust or store-bought. Top with pie crust. Roll edges under and pinch around the entire pie. Use a sharp knife to slice a slit in the top of each pie.
- Brush with egg wash. Bake in a preheated 400 degree oven until the crust is nicely browned. About 30 to 45 minutes.
- Makes two 9-inch pies.

Here's a meat pie (tourtière) my mother made in our family for many years. This wonderful recipe has been passed on to me and my sisters to enjoy and remember at christmas. This recipe is great for it's simplicity in the ingredients, good meat, good spices and your favorite pie crust. Hope you enjoy!

Steps:
- In a large pan, mix together meats, spices and water.
- Bring to a boil, cook at medium heat uncovered until mixture is cooked but still moist (approximately 20 minutes).
- Line pie pan with one crust and fill with meat mix.
- Top with second crust and pinch to seal.
- Cut slits in top of crust to vent, at this point you might want to get creative by adding any christmas decoration with leftover pie crust using a cookie cutter.
- Brush crust with beaten egg and place filled pie pan on cookie sheet to catch any drips.
- Bake at 350F for 30 minutes until crust is golden.

TRADITIONAL MEAT PIE

- Preheat the oven to 400 degrees F.
- Pie Crust: Mix flour and shortening. Add salt and cold water. Add all the cold water at once and mix delicately. Form a ball and refrigerate for 2 hours.
- Once dough is chilled, flour your worktop. Divide dough in half. Roll out 2 pie crusts. One should be slightly larger than the other, this will be your bottom crust.
- Meat Filling: Heat the oil in a large pot. Add the pork and onion and cook over medium-low heat for 45 minutes, stirring often. When pork is cooked remove fat from pan. Add grated potato, salt, pepper, and allspice, to taste. Stir well, and let mixture rest for 20 minutes.
- Preheat the oven to 400 degrees F. Butter the bottom of 9-inch pie plate. Place the bottom crust in the pie plate and poke several holes in the crust with a fork. Make sure an ample amount of crust spills over the edges of the pie plate. Fill the crust with the meat mixture. Level with a spatula. Wet edges of bottom crust and place top crust over meat mixture. Press top crust onto meat mixture to eliminate any air holes. Beat together the egg and the milk to make an egg wash. Pinch the crust edges together and brush the top crust with the egg wash.
- Bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 15 minutes or until crust is golden brown.
- Slice and serve hot or cold.
MOM'S MEAT PIE FROM GRANDMA'S KITCHEN
Steps:
- Simmer the hamburger, onions, garlic, and shredded potatoes until the potatoes are tender, and the beef is browned. Drain in colander, remove, and add Worcestershire sauce.
- Pre-bake bottom pie shell until light brown at 350 degrees F. Fill shell with mixture, and cover with top pie crust. Bake until crust is done on top....brown at 325 degrees F.
- Top slice with brown gravy to individual taste to serve. May also serve Worcestershire sauce on the side, to taste. Serve with steamed vegetables and biscuits.

TOURTIERE A L'ORIGNAL (FRENCH CANADIAN MOOSE MEAT PIE)
This is my Memere's tourtiere recipe, tweaked a bit, but don't tell her that. One does not mess with a French woman's meat pie recipe, lol. All the men in my family are moose hunters. This is one way we use the ground moose meat. Moose meat is very lean so do not cut back on the ground pork.

- Combine Pork, moose, onion, garlic, spices, water and sauces in a skillet and bring to a boil.
- Reduce heat and cook uncovered for 20 minutes, or long enough to remove pink from meat. Mixture should be moist, not watery.
- Add enough potatoes to absorb the liquid. Cool.
- Fill crust, cover with top crust and seal edges. Cut vent holes.
- Combine egg and water and brush over pastry crust.
- Bake at 425 for 10 minutes, reduce heat to 350 and bake 30 minutes or until lightly browned.
