This was the very first cake I ever made with my Grandma Effie. I must have been about 10 years old then. We both knew how much my daddy loved Lemon Pie and I wanted to make him something different using lemon....and this is the cake I made. It was yummy! But what made it all worth it....was to see my daddy smile and lick his lips. Well since then Grandma Effie died in 1982 and daddy died in 2001....but every time I make it I SMILE and LICK my lips....memories are a wonderful thing! Google pic

Ingredients

1 box(es) lemon cake mix
1 box(es) gelatin, lime
1 large cool whip

Steps:

Follow directions on cake box. Bake. While cake is baking.... Dissolve gelatin in 3/4 cup boiling water; add 1/2 cup cold water and set aside at room temperature. When cake is done remove from oven and poke holes in cake with end of wooden spoon, about 1 1/2 inches a part; with cup, slowly pour gelatin mixture into holes. Top with cool whip and refrigerate at least 2 hours. Enjoy!

1 can(s) crushed or chunk pineapple
2 pkg lime jello (1 large box or 2 small boxes)
1 container of cool whip
1 large container of cottage cheese, small curd

Steps:

1. Drain pineapple and throw into medium size bowl, add cottage cheese, cool whip and dump the jello powder into the mix. Mix well and refrigerate about an hour before serving and enjoy!

1 pkg dunkin hines white cake
1 4 oz. lime jello
1 c water
3/4 c oil
4 extra large eggs

Steps:

1. 1. Preheat oven at 350 degrees.
2. 2. Spray bundt pan with cooking spray.
3. 3. Mix all ingredients as directed on cake package and add to pan.
4. 4. Bake for 45-50 minutes or until toothpick comes out clean will be light brown on top. When cooled, sprinkle with powdered sugar if desired.

1 package (.3 ounce) sugar-free lime gelatin
1 cup boiling water
1 prepared angel food cake (8 inches), cut into 1-inch cubes
1 package (8 ounces) reduced-fat cream cheese, cubed
1/2 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest
1 carton (8 ounces) reduced-fat whipped topping, thawed, divided

Steps:

In a small bowl, dissolve gelatin in boiling water. Refrigerate until mixture just begins to thicken, about 35 minutes. Place cake cubes in a 13x9-in. dish coated with cooking spray; set aside., In a small bowl, beat cream cheese until smooth. Beat in the sugar, lemon juice and zest. Add gelatin mixture; beat until combined. Fold in 1-1/2 cups whipped topping. , Spread over top of cake, covering completely. Refrigerate for at least 2 hours or until firm. Cut into squares; top with remaining whipped topping.

Awesomely moist and tart cake. My mom makes this from a recipe she found and I'm posting it here because it's a favorite of mine to make too. If you like lime, you'll love it.

Ingredients

1 (18 1/4 ounce) package lemon cake mix
1 cup vegetable oil
4 eggs
1 (3 ounce) package lime flavored gelatin powder
1 cup orange juice
1/2 cup butter
1 (8 ounce) package cream cheese (I use fat free with great results)
3 tablespoons fresh key lime juice (I used bottled key lime)
4 cups confectioners' sugar
lime zest

Steps:

Combine cake mix, gelatin mix, oil, eggs and orange juice.
Pour into three 8 inch cake pans.
Bake according to instructions on box.
Allow to cool, then poke holes in cakes while in pans and pour key lime juice over layers.
To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Add lime juice and confectioners sugar. Add lime zest if desired. Mix well and ice cakes.
You can substitute ingredients for a lighter cake and it still turns out well.

In a large bowl, combine cake mix, jello powder, eggs, oil and water. Beat until well blended. Pour batter into a GREASED and FLOURED 13 x 9 inch cake pan. Bake at 350 degrees for 35 minutes (or until a toothpick inserted into center of cake comes out clean).
While cake is baking, make the icing, by mixing the powdered sugar with the fresh lemon juice and lemon zest (rind), until fully combined.
When cake is done, remove pan to a wire rack. While cake is still hot, poke holes over the entire surface of the cake, using a chop stick, a straw, or the handle end of a spoon. Make holes every inch or so across the top of cake. Pour on the lemon glaze, and spread it evenly across top of cake, to cover. Let cake cool down to room temperature (so glaze will firm up), then cut into pieces and serve. Enjoy!
