GREEN BEANS AND BACON

Steps:
- Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
- Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.
OMA'S COUNTRY GREEN BEANS WITH BACON & ONION (GRUENE BOHNEN)
Our family favorite country-style green beans, with bacon and onion. These are just like my German grandmother made (the lemon is my addition) -- she always used fresh green beans from the farmer's market -- but canned green beans will do just fine. Delicious! A really great side dish (can be made ahead) for the holidays, or anytime.

Steps:
- In a large heavy skillet (I use my large cast iron pan or Le Creuset) over medium heat, cook the bacon and onion,stirring often, until bacon is lightly browned and the onion is softened (about 15 to 20 minutes).
- In a large measuring cup, stir the flour into the reserved liquid (or 1 1/2 cups water), whisking briskly with a fork until smooth.
- Pour the flour mixture all at once into the bacon and onion mixture; use a wire whisk and whisk briskly to combine. Use a wooden spoon to gently scrape browned bits from bottom of pan and incorporate them into the sauce.
- Cook and stir constantly (I use a wire whisk or wooden spoon) over medium-high heat until mixture comes to a boil. When mixture comes to a boil, continue to cook and stir on medium-high heat for 3 minutes more (at this stage you may want to add a touch more of water or flour, depending on how thick you want the sauce to be).
- Add the green beans, lemon zest, salt and pepper, and the fresh parsley (except one tablespoon snipped parsley, for garnish); stir to combine. Reduce heat to medium, stir occasionally until beans are hot (8 to 10 minutes).
- Remove from heat. Finish with a squeeze of fresh lemon juice and garnish with snipped parsley. Serve immediately.
- If making beans ahead, to serve later:.
- At this point, spoon hot bean mixture into a 1 1/2 to 2-quart size casserole dish; let cool slightly then cover and refrigerate. About 1 hour prior to serving, remove from fridge and let sit at room temp for 15 to 30 minutes. Place the covered casserole into a preheated 350 degree F oven for 30 to 40 minutes, until hot. Garnish with snipped parsley and serve hot.

MOM'S GREEN BEANS AND BACON
Steps:
- Pre-heat a medium to large saucepan to medium high heat on the stove top. While pan is heating cut bacon into bite size pieces and seperate them.(it will stick together if cutting more than one slice at a time) Once pan is heated cook bacon until crispy. Remove from heat once crispy and put onto a plate with paper towel layed on top and cover with another paper towel (to collet the fat) Leave about a 1/4 cup of bacon grease in sauce pan. Open both cans of green beans. Drain one can completely of all water in the can. Drain second can leaving about half the water left over in can. Turn saucepan down to medium and then add both cans of green beans to pan. Let cook alone (stirring often) for just a minute or two. Add ketchup directly into the saucepan. Add brown sugar to sauce pan. Mix everything through and through and turn heat up to medium high to get mixture to boil. Stir often to keep it from burning. Once boiling add precooked bacon pieces back into sauce pan with green beans. Turn heat back down to medium and let simmer for about 30 minutes. Once done should have a semi-thick sauce.
GREEN BEANS WITH BACON
Steps:
- Bring a large pot of salted water to a boil. Add the green beans and cook until bright green and tender, 4 to 5 minutes. Drain in a colander in the sink and run under cold water, while tossing, in order to stop cooking. Pat dry with paper towels.
- Add the bacon to a large heavy skillet set over medium heat and cook until crisp, about 5 minutes. With a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Pour off some of the bacon fat from the skillet, if needed, and add the shallot. Saute until tender, about 3 minutes. Toss in the green beans and continue sauteing for 5 minutes. Season with salt and pepper, then add the bacon back to the skillet and stir to combine.
GREEN BEANS AND BACON
A delicious, easy bean recipe. I've never done this exactly as described with fresh beans, but I'm sure it would work well. The recipe is from Julie Trusler's cookbook, "JT's - Volume 1"

Steps:
- Fry bacon in a skillet over medium-high heat until partially cooked.
- Drain off most (but not all) of the fat.
- Add onion and continue to cook until bacon is brown and onion is clear.
- Add vinegar and 1 t of the seasoned salt.
- Cook until most of the vinegar has cooked down and remove from heat.
- In a large saucepan, cook beans in water, covered, until done (5-7 minutes).
- Do not drain.
- Add bacon mixture and cook uncovered for another five minutes' or so.
- Add additional seasoned salt to taste.
- There should be little liquid left at serving time.

MOM'S GREAT GREEN BEANS

Steps:
- Drain the green beans, reserving 1/2 of the liquid. Dissolve the bouillon cube in the reserved liquid.
- Place green beans and liquid in a saucepan. Add Worcestershire sauce, soy sauce, butter or margarine and garlic pepper seasoning to taste. Simmer gently for 15 minutes.
- Remove to serving bowl leaving beans sitting in their liquid. Use a slotted spoon to serve.

- Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
- Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

- Savannah Guthrie and her mother cook up fried chicken, "Kentucky Wonder" green beans with bacon, cheesy spoon bread and spiced smashed apples
- Place a large saucepan over medium heat and cook bacon until almost crisp. Add onion and cook until golden. Add garlic and continue to cook, adding tomato sauce or tomatoes. Cook one minute until garlic is soft.
- Add beans to pan, along with chicken broth and seasonings. Bring temperature to high and then lower to a simmer. Cook slowly for about 1 1/2 hours. Taste and season again. Cook further until beans are soft, about 30 minutes.
- Serve beans with the leftover liquid (it's called pot liquor and contains all the vitamins) to use for sopping up with cornbread or thick bread or to pour over spoon bread.
