MOM'S CLASSIC MEATLOAF RECIPE
It's an oldie, but a goodie-- Meatloaf! There's not a whole lot better than a tender and moist meatloaf and this is the PERFECT recipe in my book.

Steps:
- Preheat oven to 350 degrees Fahrenheit
- Combine the milk and crushed saltine crackers in a small bowl. Allow to soak for about 5 minutes or until the crackers are soft. Whisk in the egg, salt, sage, dill, and pepper.
- Place ground beef in a large bowl and add in onion and milk mixture. Gently mix until just combined.
- Line a baking sheet with parchment paper or aluminum foil and shape meat into a loaf shape. Dip fingers in water and smooth out the cracks with your if needed.
- Place in oven and bake for about 20 minutes.
- Combine ketchup, sugar and Worcestershire sauce and spoon half of it over the partially cooked loaf. Return to the oven.
- Cook for 5-7 minutes longer and spoon the remainder of the sauce over meatloaf. Continue to cook until the internal temperature reaches 160 degrees-- about 10-15 additional for a total of 35-45 minutes total cooking time.

MOM'S FAVORITE MEATLOAF
I don't really like meatloaf at all, but when mom made this one, she really had a hit with the entire family! Not your typical meatloaf -- very tasty! Use fresh sausage, not frozen! Use more crackers if the loaf seems too moist before cooking. Excellent for sandwiches the next day!!

MOM'S GOOD OL' MEATLOAF
This is a very basic yet delicious meatloaf that is pretty much fool proof. I like to mix ground beef with ground venison for less grease and you won't need to drain it. However, all beef is just fine. Nothing fancy here, just good old fashion meatloaf that will please your tastebuds.

- Preheat oven to 350 degrees F.
- Mix ground beef and/or venison mixture with next 8 ingredients and 1/4 cup ketchup. Mix thoroughly but not excessively.
- Place meatloaf mixture into a greased baking pan. I like to use the speckled metal roasting pans.
- Top with remaining ketchup and green pepper slices.
- Cover and bake for approximately 1 1/2 hours or till meat is done. May need to drain some grease after an hour of baking.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MOM'S GOOD MEATLOAF
This is my mom's recipe for meatloaf. It is very simple but good. The only thing I do different is I add 1/2 cup Open Pit Barbecue Sauce over the top of the meatloaf before I bake it.

- Preheat oven to 375 degrees
- In a small bowl mix together 1/4 cup of the ketchup and 1 tablespoon Worcestershire sauce, mix together and set aside for later basting.
- Throw 1 pound of ground beef 80/20 fat content into a big bowl. Break up into chunks and salt and pepper. Just give the salt shaker a couple of good shakes, and a little more with the pepper. If you like garlic shake in a bit of garlic powder, NOT garlic salt.
- Dice up ½ a medium onion and toss into the bowl.
- Squirt in ketchup, probably about ¼ cup to start.
- Shake in Worcestershire sauce until it just smells right, about 1 tablespoon. It's a personal preference with the amount. If you really have no idea how much to use then give the bottle a couple of good shakes to start.
- In a small bowl, lightly beat two eggs and mix into the ground beef mixture
- Pour in a ½ cup of plain bread crumbs.
- Use a wooden spoon to get everything mixed up nicely. Compress into a big ball.
- Line a baking sheet with parchment paper and plop the meatloaf onto the lined baking sheet and mold the meatloaf into a rectangle.
- Put the meatloaf into the oven and bake for about 15 minutes then baste with the ketchup Worcestershire sauce. Continue cooking for a total of 60 minutes. Use a thermometer to check the internal temperature reaches 165 degrees to ensure it's fully cooked.
- I like a little crispy to the sides so I broil at the end for a couple of minutes. Watch it so you don't burn the top.

BETTER THAN MOM'S MEATLOAF
My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.

- Preheat oven to 350*.
- In large bowl mix beef, chopped onions, bread and half of the milk with hands.
- Slowly add the remainder of the milk if needed - too much will make the mixture to runny and it won't form the loaf.
- Shape into loaf and place in a glass 8x8 or 9x13 baking dish, I add just a little water to the bottom of the pan.
- Bake at 350* for 45 min, cover the top of the loaf with the glaze and finish baking for 15-20 min longer.

- Preheat the oven to 375°. In a medium skillet, heat the olive oil. Add the onion and garlic and cook over moderate heat until softened, about 8 minutes. Let stand until cooled to room temperature, about 15 minutes.

Bake for about 1 hour and 10 minutes, until the glaze is browned and an instant read thermometer inserted in the center of the meat loaf registers 160°. Let the meatloaf rest for 10 minutes. Cut into slices and serve.
