GRANDMA'S GINGERSNAP COOKIES
This melt-in-your-mouth ginger cookie recipe that I received from my grandmother has been enjoyed in my family since 1899.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Sift the flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture to blend evenly, and sift a second time into another bowl.
- Place the shortening into a mixing bowl and beat until creamy. Gradually beat in the white sugar. Beat in the egg, and dark molasses. Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture, and mix together until a soft dough forms. Pinch off small amounts of dough and roll into 1 inch diameter balls between your hands. Roll each ball in cinnamon sugar, and place 2 inches apart on an ungreased baking sheet.
- Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes. Cool cookies on a wire rack. Store in an air tight container.

Steps:
- Preheat oven to 350F degrees.
- Combine dry ingredients and set aside.
- In a large bowl beat butter till soft, gradually add sugar.
- Beat in egg and molasses.
- Stir in flour mixture.
- Roll into balls, then roll in sugar.
- Bake 10- 12 minutes.
- Cooking time depends on the size of cookie.
- I have small children so I make them quite small and the baking time decreases.
- The yield is not correct- It depends on the size of the cookie- I do not know the amount it will make?

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Place the flour, ginger, cinnamon, cloves, salt, and baking soda in a medium-size bowl and stir to mix.
- Place the butter and brown sugar in a large mixing bowl and, using an electric mixer, beat them on high speed until very light and fluffy, about 3 minutes. Scrape down the side of the bowl and add the egg, continuing to beat on high speed until the mixture is very light and somewhat shiny, about 2 minutes. Reduce the mixer speed to medium, then blend in the molasses. Cover the dough and refrigerate it for at least 30 minutes or up to 4 days.

Arrange the balls about 3 inches apart on ungreased baking sheets and press them with the palm of your hand to flatten them slightly. You’ll probably fit 12 cookies on each baking sheet so this will take at least three baking sheets to bake all the cookies. You’ll want to bake two sheets at a time, placing one on the top rack and one on the bottom. Refrigerate the remaining dough until you are ready to bake it.
