My neighbor and I discovered these delicious low-fat burritos a few years ago. On nights my husband or I have a meeting, we can have a satisfying supper on the table in minutes. -Angela Studebaker, Goshen, Indiana

1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

4 flour tortillas
1 15 oz. can of low sodium chicken broth
1 15 oz. can of drained and rinsed Black Beans
½ cup of chopped onion
1 cup of chopped tomatoes
1 finely chopped jalapeño pepper (opt.)
4 Cups of shredded Kale

Steps:

  • In a skillet add the chicken broth, black beans, and onions to boil. After 5 minutes add the tomatoes and jalapeño (opt.). After 2 minutes add the kale. Cover and simmer for a few more minutes before kale wilts. Warm up tortillas and with a slotted spoon add the black bean / kale filling to the center of the tortilla to fold into a burrito. Additional add-ins can include: shredded cheese, shredded chicken or sour cream. (To fold a burrito, fold 2 opposite sides in, then gently roll up unfolded sides being careful to hold filling in)

2 cups cooked rice
2 tablespoons olive oil
1 medium onion, diced
3 garlic cloves, finely minced
1 jalapeno, seeds and membrane removed, finely diced (can substitute 1 can of green chiles)
1 teaspoon cumin
3 tablespoons tomato paste
2 (15 ounce) cans pinto beans, drained and rinsed (or use 1 can pinto beans, 1 can black beans)
1 1/2 cups water
10 ounces frozen corn
6 green onions, white and green parts finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
16 flour tortillas
2 cups monterey jack cheese

Steps:

  • Cook rice; set aside. Meanwhile, heat oil in large saucepan over medium heat. Add onion, garlic, jalapeno and cumin; season with salt and pepper. Cook, stirring occasionally, until onions are softened and golden, being careful not to let the garlic burn. Add tomato paste and cook, stirring for 1 minute.
  • Add one can of beans and mash gently in the pan (a potato masher or fork works great here). Add the second can of beans and the water and stir to combine. Bring to a boil, reduce heat to medium and simmer, stirring occasionally, until thickened, 10-12 minutes, being careful not to let the mixture stick to the bottom of the pot. Add corn; cook to heat through, 2-3 minutes. Stir in onion and garlic powders. Remove from heat; stir in green onions and cooked rice.
  • Heat tortillas in microwave for about 30-45 seconds or until all are warmed through.
  • Fill each tortilla with about 2/3 cup bean and rice mixture and 1/4 cup cheese on one side of tortilla. Fold, and hold in sides. Starting from filled end, holding sides in as you work, tightly roll into a bundle. Place on a baking sheet, seam side down, and prepare remaining burritos.
  • Serve warm immediately, with salsa and sour cream if desired - or, to freeze for later consumption, put the baking sheet of burritos into the freezer for at least 30 minutes, or until very cold so that they don't come apart in the wrapping process. Remove them from the freezer and wrap each burrito individually in plastic wrap and place all the wrapped burritos in a freezer-safe resealable bag and freeze up to three months.
  • NOTES.
  • To reheat from frozen: Remove plastic wrap from the burrito. Poke holes in the top several times with a fork. Microwave on high for two minutes. Gently poke a few more holes in the burrito and microwave for another minute. Be careful as the burrito will be piping hot!

1 cup baby spinach leaves (or any other green)
1 egg
1 egg white
1/4 cup tomatoes, diced
1/4 cup black beans (canned, drained and rinsed)
1 tablespoon grated low-fat cheddar cheese or 1 tablespoon mozzarella cheese
1 tablespoon salsa
1 whole wheat tortilla

Steps:

  • Pre-heat the oven to 350 degrees.
  • Mix the egg and egg white and scramble them quickly in a small frying pan. Fold in all the other ingredients.
  • Place this mixture in the middle of the tortilla. Wrap the two sides over tightly and place the roll, seam side down, on a lightly oiled cookie sheet.
  • Bake at 350 for about 6 minutes until the tortilla is crisp and the filling is heated through.
  • Serve with a green salad and/or tomatoes tossed in a light vinaigrette.

  • In a bowl, combine the kale, cilantro, jalapeño, lime juice, olive oil, cumin, chili powder and sea salt. Mix well and set the bowl aside to marinate.
  • Warm the beans and minced garlic with a couple of tablespoons of water. You can do this in your smallest sauce pan on the stove over medium-low heat (sauté the garlic in a drizzle of olive oil before adding the beans) or in a bowl in the microwave. Add little splashes of water as necessary. Use a fork to mash up the beans a little and add salt to taste, if necessary.
  • Warm the tortilla in a skillet or in the microwave for a few seconds. Top the tortilla with the black bean mixture, sliced avocado and marinated kale (you may end up with more kale than will fit in your burrito, which you can serve on the side as a salad). Top with red onion and feta.
  • Roll up the burrito by first folding the tortilla over from the bottom to partially cover the beans and greens, then fold in the 2 sides; finish rolling and put the burrito seam side down on a plate. Slice in half, if desired, and serve with sour cream or plain Greek yogurt on the side if you’d like.
