FLUFFY BUTTERCREAM "BAKERY-STYLE" FROSTING



Fluffy Buttercream

Frosting that is not-too-sweet, fluffy, and so spreadable. A "bakery-style" vanilla buttercream frosting that mixes together in minutes and holds its shape on any dessert like cakes or cupcakes.

Number Of Ingredients 6

1 cup salted butter ((2 sticks, room temperature))
1/2 cup vegetable shortening
5 cups powder sugar (confectioners sugar)
2 tablespoons hot water
2 teaspoons vanilla extract
1/4 teaspoon almond extract

Steps:

  • Beat soft butter and shortening in an electric mixer on high speed with the whisk attachment until creamy for 5 minutes. Scrape down the sides of the bowl.
  • At low speed, add powder sugar 1 cup at a time until smooth into the mixing bowl.
  • On high speed, mix in vanilla, almond extract, and hot water for 5 minutes until fluffy and smooth.
  • Place a dollop of frosting on a small piece of cardboard or on a tray, and set the cake on top. This keeps the cake from sliding around while decorating.
  • Fill a large piping bag with frosting, set the bag in a tall sturdy glass measuring cup. Load it down inside the pastry bag with a spatula, when 3/4 full, push inside the bag toward the tip. Fold the top down and decorate your cake. Don't overfill or it will squeeze out of the top of the bag.
  • Frost the cake using a small offset spatula, smooth out as best you can all over the top and sides of the cake. This frosting is so easy to spread, and you don't have to clean your spatula while decorating. Then create beautiful designs using a piping bag fitted with tips.

The Best Buttercream Frosting really lives up to it's name, it definitely is the best we've ever tried and so easy to make. This Buttercream Frosting will make anything you put it on taste better - we promise!

4 cups Powdered Sugar (or 1 pound)
1 cup Butter (Softened Salted Sweet Cream)
2-3 teaspoons Vanilla
1-2 tablespoons Milk
Decorating Bags

Steps:

  • Add softened butter and vanilla to the mixing bowl and mix until completely combined.
  • Add Powdered Sugar and beat on low until it is incorporated. Then move mixer up to medium-high speed. Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.
  • Add milk a little bit at a time until frosting is the proper consistency.

I decided on a whim yesterday that I wanted to make cupcakes for Canada Day. I didn't have time to buy frosting before getting ready for the fireworks show, so I ended up making my own with ingredients I already had. I was shocked at how quick and easy this was! This basic vanilla recipe makes enough to cover a dozen cupcakes, but feel free to double it (for cakes), triple it, add food coloring or different flavor extracts. If you find this too sweet, you can add a dash of salt to the milk or the vanilla. Personally I like it sweet, and I used salted butter, so I didn't find it necessary.

5 tablespoons salted butter
5 tablespoons shortening
¾ teaspoon vanilla extract
2 cups confectioners' sugar
2 tablespoons milk

Steps:

  • Beat butter and shortening together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat the vanilla extract into the butter mixture. Add sugar, one cup at a time, beating on medium speed until fully incorporated. Add milk, one tablespoon at a time, beating on high until fully incorporated and you have frosting.

After failing to find the perfect recipe for buttercream icing, I found one that worked for me and then added my own two cents.

½ cup unsalted butter, softened
1 ½ teaspoons vanilla extract
2 cups confectioners' sugar, sifted
2 tablespoons milk
3 drops food coloring, or as needed

Steps:

  • Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
  • Pour in milk and beat for an additional 3 to 4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

4 eggs, room temperature*
1/2 cup sugar
1/2 cup dark corn syrup
10 ounces butter, cubed and at room temperature

Steps:

  • In a large mixing bowl, whip the eggs until light and fluffy.
  • In a small saucepan bring the sugar and the corn syrup to a boil. Lubricate the inside of a metal baster with a small amount of vegetable oil and dispense it completely. Then use this to drizzle the sugar mixture into the mixing bowl with the eggs. The mixer should be on low speed until you finish drizzling in all of the sugar mixture.
  • Once the entire mixture of the sugar is incorporated, slowly add the butter pieces. Only add more butter when you can no longer see the previously added pieces. It will go fast at first and then slow down. Continue to whip until the mixture is creamy.

600g icing sugar, sifted
300g unsalted or salted butter, softened
finely grated lemon zest
finely grated orange zest
a dash of vanilla extract
few drops food colouring
cocoa powder, to taste

Steps:

  • Beat 600g sifted icing sugar and 300g butter together with your chosen flavouring and colouring if using, add 2-3 tablespoons of boiling water to loosen and beat until smooth.
  • Fill a piping bag with a star nozzle and pipe onto cupcakes or smear in the middle and over the top of a 20cm cake using a palette knife.
