- Preheat the oven to 350 degrees F. Coat an 8-inch oval baking dish with cooking spray and set aside.
- Mix together the ricotta, spinach, Parmesan, Italian seasoning, onion powder, salt, pepper, garlic, egg and lemon juice in a large bowl.
- Lay out the cooked noodles and cut each one in half widthwise. Spread about 2 tablespoons of filling on each noodle. Tightly roll the filling in the noodle and place seam-side down in the prepared baking dish. Arrange the rolls in a row and top each with a spoonful of sauce and sprinkle of mozzarella.
- Bake until the filling is warm and the cheese is melted, 15 to 20 minutes. Serve the rolls on toothpicks with any remaining tomato sauce on the side for dipping.
FRIED LASAGNA BITES

Steps:
- Bring a large pot of water to a boil and add the pasta, cook for 6 minutes, then drain and spread out on a sheet pan to cool.
- Heat a large saute pan with 1 tablespoon of vegetable oil over medium-high heat. Add sausage, ground beef and onions; saute for 3 minutes. Add the Italian seasoning, basil and black pepper. Cook for about 8 more minutes, until the meat has browned. Stir in 1/2 cup of canned tomato sauce and cook until heated through. Set mixture aside to cool in a large bowl.
- Add the rest of the canned sauce into saute pan and stir in the red pepper flakes.
- Fold the mozzarella and cottage cheese and into the cooled meat mixture. Stuff each cannelloni shell with the meat mixture and then place the shells in the freezer for 5 minutes to firm up. When ready to fry, slice shells into thirds.
- Preheat oil to 350 degrees F.
- Place the flour, eggs and bread crumbs into separate bowls.
- Dredge the shells in the flour, then eggs, and then bread crumbs.
- Fry the bites until they are golden brown and crispy; about 4 to 5 minutes. Drain on paper towels and serve with the spicy tomato sauce.

- Slice lasagna into 14-15 bite size pieces. You can also use package spinach lasagna. cook and then refrigerate for 20 minutes so it is easy to cut into pieces.
- Set oil to heat in a dutch pan or deep fryer. In three medium bowls/plates, add flour, eggs, an breadcrumbs seperatly. Season breadcrumbs with Italian seasoning, salt and pepper. Also season flour and eggs with generous 1/4 tsp each of salt and black peppers.
- Dredge each lasagna bite into flour, then egg wash. Shake off access and then roll in bread crumbs.
- Fry lasagna bites until these are golden brown and crispy from all sides; about 4 to 5 minutes.
- Drain on plate lined with paper towel. Repeat for all sliced lasagna. Garnish with fresh chopped basil and Parmesan cheese.
- For marinara dipping sauce, heat olive oil in a pan. Add minced garlic and perfume the oil for 30 seconds. (don't let garlic burn). Add marinara sauce, half of chopped basil and let it heat through. Remove in serving bowl. Serve family-style in a big platter with sauce. Or serve family movie-style in individual cups with a few tbsp of marinara sauce at bottom of each cup. Serve and enjoy the movie!

- Preheat the oven to 300 degrees F (150 degrees C). Grease a baking sheet.
- Heat a skillet over medium heat. Add ground beef, garlic salt, dried parsley, and Italian seasoning. Cook and stir until beef is browned, 5 to 7 minutes. Mix in spaghetti sauce. Reduce heat to low and cook until sauce is thickened and resembles a Bolognese, 15 to 20 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil; add oil. Cook pasta shells in the boiling water, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Transfer shells to a baking dish and let cool briefly.

- Set a wire rack inside a baking sheet.
- Cut the chilled lasagna into 12 equal pieces, then cut the pieces into 4 triangles, for a total of 48 pieces. Set the triangles on the wire rack and cover with plastic wrap. Freeze for at least 4 hours, until solid.
- Heat the vegetable oil in a large heavy-bottomed pot fitted with a deep fry thermometer over medium heat until it reaches 350°F (180°C).
- Add the flour, eggs, and bread crumbs to 3 separate shallow bowls.
- Remove the lasagna triangles from the freezer and dredge in the flour, then the eggs, then the bread crumbs.
- Working in batches, fry the lasagna triangles in the hot oil for approximately 1 minute, until golden brown. Transfer to a paper towel-lined baking sheet to drain and let cool for about 10 minutes.
- Serve the lasagna bites warm with marinara sauce alongside.

- Brown bacon and onion in a large pan over medium heat. Stir in fennel seed, 1 teaspoon oregano, Italian seasoning, and tomato sauce. Cover, and simmer on low for 4 to 6 hours, or until thick.
- Brown sausage links in a large skillet. Drain on paper towels. Cut into 1 inch pieces.
- Mix together ricotta cheese, egg, milk, parsley, and 1 teaspoon oregano in a medium bowl.
- Layer 1 cup of sauce on the bottom of a 9 x 13 inch pan. Layer with 1/3 uncooked lasagna noodles, 1/2 ricotta cheese mixture, 1/2 sausage pieces, 1/3 mozzarella, and 1/2 provolone cheese. Top with 1/3 sauce. Repeat layers. Top with remaining 1/3 noodles. Spread remaining sauce over the top, and sprinkle with remaining 1/3 mozzarella cheese.
- Bake at 350 degrees F (175 degrees C) for 1 1/2 hours.

ONE BITE MINI LASAGNA ROLL UPS RECIPE

- Heat the oven to 375°F.
- Sprinkle a bit of cheese into the bottoms of a non-stick mini muffin tray. As it melts and gets crispy, the cheese will help hold your lasagna roll together so you can just pick it up and eat it.
- Cook the noodles according to the package and drain. Cut noodles into strips about 1 inch in height and 4-5 inches in length. I used fresh lasagna noodles sliced into eight width-wise. Regular lasagna noodles would work too, sliced in half length-wise, then again in half width-wise.
- On the lasagna strip, spread on a bit of bolognese, then béchamel, then a light sprinkling of parmesan. Roll up tightly then pop into the prepared mini muffin tin. Repeat until all of your sauce and noodles are finished. Top generously with shredded mozzarella and whatever parmesan you might have left.
- Bake for 30 minutes or until the cheese is golden and toasty. Let cool in the pan for at least 5-10 minutes, then use a plastic offset spatula to pull them out. Top with flat leaf parsley if desired and enjoy!
- In a small sauté pan or skillet, melt the butter over medium heat. Add the flour and stir constantly for 1-3 minutes, until completely smooth and incorporated. Pour in the milk in a thin stream while whisking. It might start out lumpy, but keep adding the milk and whisking and it will smooth out. Keep on medium heat, stirring occasionally, for about 5-8 minutes, or until the sauce thickens.
