MY MOTHER'S BREAD
Steps:
- Stir the yeast into the warm water and let stand until creamy and foamy, about 10 minutes. Add the yeast mixture to the flour and mix well. Add in the salt. Add as much water as needed, until dough comes together and is smooth. Move to a lightly oiled bowl. Cover with towel and let rise in a warm spot until double in size, about 30 minutes.
- Preheat the oven to 350 degrees F.
- Butter and flour 3 bread pans. Remove risen dough from bowl and punch down. Divide dough and put into prepared pans.
- Bake bread for 45 minutes, until it is blond in color. Lower the oven temperature to 275 degrees F and continue baking for another 45 minutes, or until nicely browned.

- Preheat oven to 350º.
- Beat butter and sugars until smooth and creamy.
- Beat in eggs, one at a time.
- Beat in bananas and vanilla.
- In a separate bowl, mix dry ingredients together.
- Fold the dry ingredients into the wet, until well blended.
- Fold the nuts and sour cream into batter until just blended. Do not over-mix.
- Butter a cast iron skillet. Pour batter into skillet-bake in oven until toothpick inserted in the center comes out clean-45 minutes to an hour.

Steps:
- Generously grease 1 1/2 or 2 quart casserole dish or 9x5" loaf pan.
- Lightly spoon flour into measuring cup; level off.
- In large bowl, combine 1 1/2 cups flour, cheese, sugar,salt and yeast; blend well.
- In small saucepan, heat milk and margarine until very warm (120 to 130 degrees F.).
- Add warm liquid and eggs to flour mixture.
- Blend at low speed until moistened; beat 3 minutes at medium speed.
- By hand, stir in remaining 1 cup flour.
- Cover loosely with plastic wrap and cloth towel.
- Let rise in warm place (80 to 85 degrees F.) until light and doubled in size, about 45-60 minutes.
- Stir down dough to remove all air bubbles. Turn into prepared casserole dish.
- Cover; let rise in warm place until ight and doubled in size, 20-25 minutes.
- Heat oven to 350 degrees.
- Uncover dough.
- Bake 40-45 minutes or until deep golden brown.
- Remove from casserole dish immediately; cool on wire rack.

MOM'S BEST PUMPKIN BREAD
My mom has a cookbook that my aunt bought her from a church social back in the 70's. This pumpkin bread recipe is from that cookbook with some changes my mom has made thru the years. A very easy to make and moist, wonderful bread that my mom makes in loaf pans, tart pans, or her bundt pan. Hope you enjoy it as much as we do!

A yeasty, single rise, white bread baked in a casserole bowl. This was my mother's go-to recipe to accompany a hearty soup, stew, or chili. Good for a pot-luck dinner. I've been known to pair it with a strong cheese and nice wine.. for a romantic picnic.

Steps:
- Using a large bowl, dissolve yeast in warm water.
- Stir in sugar, salt, softened butter or margarine, and 3 cups of the flour. Blend until smooth.
- Using a wooden spoon, beat in remaining cup of flour.
- Cover bowl with wax paper, or plastic wrap. loosely. Not tight. Let bowl sit in warm, dry place , out of a draft, to rise for about 45 minutes. It will more than double in bulk.
- Again using a wooden spoon, beat down the mixture for about a half minute. Place in a greased glass or ceramic bowl for baking.
- Bake at 375°F for 50 - 55 minutes.
- Remove from oven and cool on rack for a few minutes. Pop out of bowl, and let cool a bit more. Serve warm in wedges with butter. or your favorite soup, stew, or chili. Or maybe with a hunk of great cheese and a bottle of wine!

This is my Mom's recipe. It is so good, very light and fluffy with a crispy crust on the bottom. Very simple too. Can be used to make rolls, or loaves. You can easily double it. You can also add 1c. raisins and/or slivered almonds,orange/lemon zest and vanilla extract to a loaf for a festive holiday bread. The options are endless!

Steps:
- Combine warm water, yeast, oil and honey in a large bowl, let sit for 5 minutes then add the salt and egg. Stir all together.
- Add the flour one cup at a time, stirring together after each cup. Around the 5th cup your dough will begin to come together pulling away from the sides of the bowl and forming a ball.
- Empty the dough onto a clean, floured surface and begin kneading the dough adding a little more flour as it becomes sticky. It should be slightly sticky. Knead for 3-5 minutes until smooth, firm and elastic.
- Set aside to rise until double.
- Divide dough into 2 loaves or 1 loaf and 12 rolls or all rolls if you like. Place in well greased loaf pan or rolls on a greased cookie sheet.
- Preheat oven to 375°F
- Set aside to rise until almost double once more.
- Bake loaves for 25-30 minutes, or rolls for 15 minutes. They should be golden brown on top and bottom when done.
MOM'S ENGLISH MUFFIN BREAD

- Warm the milk and water in a small saucepan until very warm (110'-120' degrees F) Lightly grease a 8x4 inch loaf pan; sprinkle cornmeal inside pan.
- In a large bowl, mix together 1 1/2 cups of the flour, yeast, sugar, salt and soda.
- Stir milk into the flour mixture; beat well.
- Stir in the remaining flour, 1 cup at a time, until a stiff batter is formed.
- Spoon batter into prepared pan.

MOM'S BEER-BATTERED CHEESE BREAD
Mark loves this bread with beef stew or meatloaf.

- 1. Adjust oven rack to middle position and heat oven to 375 degrees. Grease 9x5-inch loaf pan.
- 2. Combine shredded and cubed cheese, flour, sugar, baking powder, salt and pepper in large bowl. Stir in beer and mix until well combined. Pour into loaf pan, spreading batter to corners. Drizzle melted butter evenly over top of batter.
- 3. Bake until deep golden brown and toothpick inserted into center of loaf comes out clean, 45 to 50 minutes. Cool bread in pan for 5 minutes, then turn out onto rack. Cool completely and slice as desired. (Although this bread can be kept in an airtight container at room temperature for up to 3 days, after the second day the bread is best toasted.)
- 4. Beer-Batter Bread with Smoked Gouda and Bacon: substitute 8 ounces smoked Gouda for Gruyere. Stir 8 slices bacon, cooked until crisp and crumbled, into bowl with cheese.
- 5. Beer-Battered Bread with Cheddar and Jalapeno: substitute 8 ounces extra-sharp cheddar for Gruyere. Stir 2 seeded and minced jalapeno chilies into bowl with cheese.
