MAMA'S SCALLOPED POTATOES

Steps:
- Preheat the oven to 375 degrees F. Spray a 3-quart baking dish with cooking spray.
- In a large bowl, combine the evaporated milk, flour, paprika, seasoning salt, nutmeg, cayenne, 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper. Add the potatoes, onions and zucchini and toss to coat, making sure to separate the vegetable slices.
- Pour the mixture into the prepared baking dish, distribute the vegetables evenly, and then flatten the top with a rubber spatula. Sprinkle with the Parmesan and bake until crispy on top and the potatoes are tender, 45 minutes to 1 hour.
- Let sit for 10 minutes to set. Garnish with green onions before serving.

- Grease an 8x10-inch casserole dish.
- Melt 2 tablespoons butter in a large pot over medium heat; stir in flour until smooth and let the paste simmer for 1 minute, stirring constantly.
- Gradually whisk in milk, about 1/2 cup at a time, and bring to a simmer. Whisk constantly until sauce is smooth and thickened, about 5 minutes.

MOM'S ZUCCHINI CASSEROLE
It's a great casserole and freezes well. I usually triple the batch, but quadruple the sauce since I like a little extra.

Steps:
- Cook zucchini in salted water until almost tender.
- Drain.
- They will cook more later so be sure not to overcook.
- Brown ground beef.
- Add everything but the corn flake crumbs, and cook a few minutes.
- Remove from heat.
- Add enough crumbs to absorb grease.
- Melt butter; add dry ingredients; stir.
- Add milk; stir until thick and smooth.
- Remove from heat and add cheese.
- Stir until melted.
- In a greased casserole, layer half the zucchini, half the beef, and half the sauce.
- Repeat this layering again.
- Sprinkle with corn flake crumbs.
- Bake in a 350 degree oven for about half an hour or until edges are bubbly.

Close family friend who has shared many great italian recipes gave this to Mom years ago. Still our all time way to cook zucchini. Up to you about how many layers to use. You can use italian seasoning in place of oregano, if you like.

- In reserved fat, saute onions until cooked, remove & set aside on a paper towel. Add zucchini to pan & saute until cooked, drain on paper towel. MOM'S SWEET POTATO CASSEROLE

- Preheat oven to 350°.
- Place a pot of water on the stove and bring the water to a boil.
- Peel and chop the potatoes into 1 inch cubes. Once the water is boiling put your potatoes in for 10 to 15 minutes or until the potatoes are soft.
- Place potatoes in a large bowl; add sugar, sweet and condensed milk, 3 tablespoons of melted butter, 1/2 teaspoon salt, and vanilla.
- Beat with a mixer at medium speed until smooth. Add eggs; beat well.
- Pour potato mixture into a 13 x 9 inch baking pan coated with cooking spray.
- To prepare topping, combine flour, brown sugar, and 1/8 teaspoon salt; stir with a whisk. Stir in 2 tablespoons melted butter.
- Sprinkle flour mixture evenly over potato mixture; arrange pecans evenly over top.
- Bake at 350° for 25 minutes or just until golden.
- Preheat broiler (remove casserole from oven).
- Broil casserole 45 seconds or until topping is bubbly. Let stand a little bit before serving.

- Cook zucchini until tender. (On the stove, add a little water, cover and cook about 15 minutes. In the microwave, cook about 5 minutes.).

- Prepare Hungry Jack mashed potatoes. Substitute cottage cheese for milk.
- Stir in dill. Care should be taken not to get potatoes pasty.
- Brown ground beef in a large skillet; drain fat.
- Add onion five minutes before end of browning.
- Stir in garlic powder and salt.
- Add mixed vegetables and 2 cans of soup - DO NOT ADD WATER.
- Pour hamburger mix into 9x13 pan and spread evenly.
