Categories     appetizer

Time 1h5m

Yield 10 servings

Number Of Ingredients 3

20 fresh jalapenos, 2 to 3 inches in size
Two 8-ounce packages cream cheese, slightly softened
1 pound thin (regular) bacon, slices cut in half

Steps:

  • Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
  • If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
  • Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
  • Serve immediately, or they're also great at room temperature.

SAUSAGE JALAPENO POPPERS

Sausage Jalapeno Poppers image

This is a recipe for stuffed jalapenos I had at a baby shower in Texas. I loved them and have made them for every party since. They are always anxiously requested, a HIT AT EVERY PARTY!!!! Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!

SAUSAGE STUFFED JALAPENO POPPERS RECIPE - (4.5/5)

Sausage Stuffed Jalapeno Poppers Recipe - (4.5/5) image

Provided by á-31991

Number Of Ingredients 5

1 pound ground Italian sausage (or regular pork or whatever appeals to you)
1 (8-ounce) package cream cheese, softened
1 cup shredded cheddar cheese (original recipe used parmesan)
1 pound jalapenos, halved lengthwise and seeded
1 green onion, finely chopped

Steps:

  • Preheat oven to 425°. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease. In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Tips on seeding the jalapenos. 1) Wear gloves throughout the entire process, then remove right after so you don't transfer to sink faucet, cabinet handles, etc. 2) I love my little lemon zester tool for seeding but a small melon baller works great too. 3) As you half and seed the jalapenos and put into a bowl of continuous running water. This helps soften to bake better and removes some heat.

  • On a cutting board, carefully slice each jalapeno in half length-wise. If you prefer, you can also slice the tops off as you won’t eat that part, but I prefer to leave them on because they look nicer.
  • Scoop out all of the seeds, taking as much of the white pith and ribs as you prefer based on your heat preference (the white ribs and pith are where the majority of the heat is). I always like to give my peppers an extra rinse afterward, to make sure all the seeds have come out.

  • Prepare the jalapeños. First, cut off the stem, then using a coring tool clean out all the seeds and the pith. Slice cleaned out jalapeños in half lengthwise. *Tip – after I core out the center, I run the jalapeños underwater – makes for easy work removing any stuck-on seeds.
  • Brown sausage until fully cooked, I like to make sure it’s broken up into small tiny bits, drain any grease. Add cream cheese to sausage and mix until completely melted and everything is well combined. *Tip – I use a medium pot to brown the sausage, then you can add the cream cheese right to the pot instead of dirtying another bowl.
  • Spoon sausage mixture into jalapeño halves and place onto a cookie sheet lined with parchment paper.
