MOM'S FAMOUS CROCK POT CREAM CORN
My mom got this recipe from a local restaurant, The Brookville Hotel. She makes it for almost every family get together by request. And if you have any leftovers, it tastes even better warmed up.

- Cook on low in crock pot about 4 hours, stirring occasionally, until ingredients are well blended and hot.
- For a large crock pot, triple ingredients.
CREAM CORN LIKE NO OTHER
This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

- In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

We serve this at all the holiday meals. It's easy - just dump it in the crock pot and assign a kid the job of stirring once every hour or so. Delish!

- Place all ingredients in a crock pot.
- We cut up the butter and cream cheese to help it melt down faster.
- Set your crock pot on low and let it cook all day - 6 to 8 hours.
- You can also cook on high for 3 to 4 hours, but make sure to check it more often so the bottom doesn't scorch.

MOM PAT'S PORK CHOPS WITH CREAMED CORN
The taste of the chops soaks into the corn for a really good flavor. Very easy and cheaper than most. My sister Cris loves these.

Steps:
- Season chops with salt, pepper, garlic salt; brown chops in skillet.
- Drain the chops of grease and then add 1/2 cup water. Cover and simmer 45 minutes; add can(s) of cream corn to cover chops and salt and pepper corn to taste.
- Cover and simmer for at least 15 minutes more or until pork is done.
- You can bake these puppies in oven if you want at 350° for the same amount of time. I cook longer cause I like my pork really done.

- 1. Shuck corn by removing the outer green leaf layers.Wash corn & remove as many silks as possible.Using a large bowl, Cut corn from each ear of corn by running knife down the length of each ear of corn with a sharp knife removing the kernals as you glide knife down each ear of corn. Then run knife down the sides of corn a second time to remove the milk from the cob;
- 2. Season with salt & pepper, Add sugar, flour, slightly beaten egg and milk or water. Stir thourgly to combine.
- 3. Heat oil in a large cast iron skillet, and when oil is hot, carefully add the corn mixture.Lower the heat, and stir constantly to prevent scorching: cook about 12 to 15 minutes. Remove from heat and serve immediately.
- 4. Note: This was one of our favorite hearty breakfast meals during the spring months when the corn was ready to pick. We worked hard in the fields chopping cotton, and needed a hearty breakfast to tide us over till lunch time. Mama made all of this on a wood stove in the wee early hours so we could get to the fields by 6:00 AM.Recipe is in my cookbook in a section called Mama's Recipes.
- 5. I added sweet red bell peppers to this one not only for color but for the sweet flavor of the peppers.
