This is the only cheese ball recipe you will ever need. I can honestly say it's the BEST cheese ball I have ever had!

1 lb. sharp cheddar cheese (shredded)
6 oz. onion and chive cream cheese (softened)
8 oz. cream cheese (softened)
6 oz. Lighthouse Chunky Blue Cheese dressing
2.1 oz. black olives (chopped)
4 oz. pimento (diced)
1/2 Tbsp granulated garlic
1/2 tsp Accent seasoning
1 cup almonds (finely chopped)

Steps:

  • Combine all ingredients except for almonds and mix well. You may need to use your hands to do this! You want to make sure all the flavors are well mixed.
  • Cover with plastic wrap and store in refrigerator over night.
  • After chilling, divide mixture into two cheese balls. At this point you can roll in chopped almonds and serve or wrap up again and keep in the refrigerator until ready to serve. Be sure it is airtight. Cover with almonds right before serving.

My mom gave me this recipe years ago. I don't think I've ever made this and not had someone ask for the recipe. I have had more "Can you make your cheese ball?" requests than I care to count. I don't really mind though because it is super easy for a party and mighty tastey.

8 ounces cream cheese, 2-3 pkgs room temp (3 will make 2 good sized balls and 2 will make 1 large ball with lots of flavor)
1 (3 1/2 ounce) jar Kraft pimento spread
2 cups shredded cheddar cheese (seperated)
1 (8 ounce) package thin sliced beef lunch meat (I get the Carl Budding kind in the deli section I really don't know the exact package size. It's usu)
2 green onions (use both white and green)

Steps:

  • Make sure cream cheese is room temperature or it is a pain to mix.
  • Finely chop beef and green onions.
  • Mix cream cheese, pimento spread, 1 cup of the cheddar, beef and onion well.
  • Roll into ball(s).
  • Roll ball(s) in remaining cheddar (If you're making more than one ball you will probably need more cheese.
  • Refrigerate (The longer it refrigerates the better the flavors come together, but is good right away too.).

4 Granny Smith apples
1 tablespoon unsalted butter
1 tablespoon canola oil
1 pound ground pork sausage
4 cups grated sharp Cheddar
3 cups instant pancake mix
2 tablespoons minced fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • For the applesauce: Preheat the oven to 375 degrees F.
  • Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
  • For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

  • Place all ingredients in a medium-sized bowl. I use a fork to "mash" the ingredients together (a fork helps to blend the veggies and nuts into the cream cheese).
  • Once completely blended, I "mold" the cheese into the shape I want to serve it in. To do this, you take plastic wrap, drape a small bowl (whatever shape you choose to use) and completely cover it with plastic wrap with the sides overlapping and hanging over the bowl several inches on each side. Then I use a spoon to "mold" the cream cheese mixture into the bowl, being sure to push the mixture into every part of the bowl and packing it down.
  • Once packed into the bowl, make sure you level off the top part of the cheese as flat as you can (this will end up being the bottom of the cheese ball, and you want it lay flat). Wrap the excess plastic wrap completely over the top of the cheese, so it is sealed completely.
