Easy Almond Bundt Cake Recipe With Almond-Flavored Icing image

This almond Bundt cake recipe is easy to make and uses almond filling in the batter and is drizzled with an almond-flavored icing.

For the Cake:
Cooking spray (for greasing the bundt pan)
1/4 cup sugar (for coating the bundt pan)
8 ounces (1 cup or 2 sticks) butter (softened)
1 cup sugar
3 large eggs
12.5 ounces almond filling (not almond paste or marzipan)
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup milk
For the Icing:
1 1/2 cups confectioners' sugar
1/4 cup milk
1/4 teaspoon good-quality almond extract

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Coat a 10-cup Bundt pan with cooking spray and sprinkle with 1/4 cup of sugar.
  • In a large bowl or stand mixer, beat together butter and 1 cup sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in almond filling until combined.
  • In a separate small bowl, whisk together flour, baking powder, and salt.
  • Alternately add the flour mixture to the butter mixture with the milk, starting and ending with flour mixture. Beat until well blended.
  • Spread batter evenly into prepared pan.
  • Bake 50 to 55 minutes, but begin checking at 45 minutes, or until toothpick tests with a few crumbs clinging to it.
  • Cool on a wire rack for 10 minutes.
  • Then invert onto wire rack to cool completely.
  • Gather the ingredients.
  • In a small bowl, combine confectioners' sugar, milk, and almond extract until there are no lumps. The mixture should run off a spoon but be opaque. Adjust as necessary.

I entered this bundt cake of mine this past weekend into a baking contest at our local gourmet food store. It took home 2nd place--plus the bakery is going to start making it along side of their other "gourmet" cakes!! I am so excited--thought I would share it with everyone!

2 1/2 cups sugar
2 eggs
2 1/2 teaspoons almond extract
1 1/3 cups milk
1 cup butter, softened at room temperature
2 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
chopped almonds
raw sugar

Steps:

  • Preheat oven to 350°F; grease and flour a bundt pan.
  • Beat sugar, egg, almond extract, milk and softened butter together.
  • Gradually add flour, baking powder and cinnamon.
  • In bottom of greased bundt pan, sprinkle almonds and raw sugar to make a nice crunchy topping.
  • Pour cake batter over almonds/sugar.
  • Bake for 50 minutes or until toothpick comes out clean from center of cake.
  • Cool for 15-20 minutes, then remove from pan.
  • Cool on wire rack.
  • Serve warm or cooled - your preference.

MY MOM'S ALMOND CAKE



My Mom's Almond Cake image

I'm a chocoholic so it is a big deal when I say that THIS is my favorite cake. It is simple, yummy, makes two small cakes or 1 large and is a little ugly. You do need two eight inch spring form pans or 1 9 inch spring form pan...worth the investment...i make two eight inch cakes. Very moist and keeps for TWO WEEKS in a sealed container just getting better with time. You'll be asked for the recipe. This makes a great gift, housewarming, dessert or great as a snack with coffee.

1 cup unsalted butter, plus more (room temp)
unsalted butter, for buttering pan
2 cups sifted all-purpose flour, plus more
all-purpose flour, for prepping pan(s)
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 (7 ounce) package almond paste
4 egg yolks, at room temp
1 teaspoon almond extract
1 cup sour cream
1 teaspoon baking soda
powdered sugar, for sifting over cake

Steps:

  • Preheat oven to 325 degrees.
  • Butter sides and bottom of pan(s) and flour them as well.
  • Place pan(s) in freezer (i've done this and also skipped it, works either way, i feel).
  • Sift flour and salt into a small bowl. Set aside.
  • In a mixer with a paddle, beat butter and sugar at hight til fluffy (5 min).
  • Add almond paste, one chunk at a time and beat at medium speed for 8 minutes.
  • Beat in egg yolks, one at a time.
  • Beat in almond extract.
  • Mix baking soda and sour cream together and add to butter mixture.
  • Reduce speed to low and add flour mixture, turn off when just blended.
  • Divide among the two 8 inch pans or 1 9 inch pan.
  • Bake about 35-40 minutes and start checking. My oven is really hot so it is usually done, but my mom's oven takes at least an hour to bake.
  • Cool in pans on wire rack.
  • Take out of pans, store in covered tins or sealed rubbermaid containers -- get better with time.
  • When ready to serve, dust with powdered sugar.

PEACH/ALMOND BUNDT CAKE

Quick, easy, and delicious! My friends beg for this cake which I invented out of necessity one day.

1 (18 ounce) yellow cake mix (moist)
4 eggs
1/3 cup oil
1 (21 ounce) can peach pie filling
1/4-1/2 teaspoon almond flavoring
3/4 cup powdered sugar
1 -2 tablespoon half-and-half cream
1/4 teaspoon almond flavoring

Steps:

  • Mix cake mix, eggs, oil and almond flavoring until smooth. It will be fairly stiff. I found chopping the peaches in the pie filling in half works best. Gently fold pie filling into cake mixture until all is blended. Try not to break the peaches up anymore than necessary. Pour into well greased bundt pan. Bake at 350 degrees until cake tests done.
  • Let cool completely in pan before removing from pan.
  • Make glaze to desired consistency and pour over cooled cake.
  • Glaze and serve. Looks lovely with fresh peach slices as a garnish.
  • (You can do the same with a chocolate cake and cherry pie filling, omitting almond flavoring).

Easy, yet really elegant and so tasty. This has got to be one of the most wonderful cakes I have ever eaten. I got this recipe from a Christian Brothers & Blue Diamond Almond ad in a magazine back in the late 70's. It is still a favorite and people always ask for the recipe.

18 1/2 ounces yellow cake mix (NOT pudding type)
4 large eggs
3/4 cup cream sherry
3/4 cup vegetable oil
1 (3 5/8 ounce) package vanilla instant pudding mix
1/2 teaspoon nutmeg
1/3 cup packed brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
3 tablespoons firm butter or 3 tablespoons margarine
3/4 cup almonds, sliced and toasted
2 cups powdered sugar, sifted
1/3 cup melted butter or 1/3 cup margarine
1 tablespoon cream sherry
1 -2 tablespoon hot water
1/4 cup sliced almonds, toasted (for garnish)

Steps:

  • Grease and flour a 10 inch bundt pan.
  • In large bowl, combine cake mix, eggs, sherry, oil, pudding mix and nutmeg.
  • Mix at low speed for 1 minute, scraping bowl as necessary.
  • Mix at medium speed 3 minutes, again scraping bowl as necessary.
  • (Or beat by hand about 5 minutes.).
  • Pour half the batter into bundt pan.
  • In a medium bowl mix first 4 streusel filling ingredients until crumbly.
  • Sprinkle evenly over batter in bundt pan.
  • Pour in remaining cake batter.
  • Bake at 350 for 45-50 minutes.
  • Cool on wire rack 15 minutes.
  • Unmold from pan and cool completly on rack.
  • To make the glaze, mix together the sugar, butter and sherry.
  • Add hot water slowly until desired consistency.
  • Brush completely cooled cake with sherry glaze and garnish with almond slices.

Steps:

  • Preheat oven to 350, position rack in center of oven.
  • Grease and flour a 10-12 cup bundt or kugelhopf pan (or 12 1-cup mini bundt pans) Sift together the flour, baking powder and salt.
  • With a stand mixer (with paddle) or a hand mixer, beat butter and almond paste on medium speed until smooth and soft- 2 minutes.
  • Add sugar and beat until light and fluffy- 2 minutes.
  • Beat in eggs one at a time, scraping after each addition.
  • Beat in vanilla.
  • With mixer on low, alternate adding flour mixture and milk, beginning and ending with the flour.
  • Scrape down as necessary.
  • Beat about 20-30 seconds until batter os completely smooth.
  • Fold in cranberries with a rubber spatula.
  • Spoon batter into pan, spread evenly.
  • Run a knife through batter to eliminate air pockets.
  • Bake until wooden skewer inserted in the center of the cake comes out clean- 40-45 minutes (20 minutes for mini cakes), Set pan on rack to cool for 20 minutes, invert cake on rack to release cake, cool completely.
  • Serve at room temperature with a dusting of powdered sugar.

  • In a food processor pulse with a metal blade almonds to a fine crumb add flour, baking powder, cinnamon, and salt pulse to mix and lighten.

From my mother's recipe files. A favorite recipe from my childhood that brings back memories of toasting a slice of pound cake and spreading a little butter on top.

1 cup butter
1 cup granulated sugar
1 cup powdered sugar
4 egg yolks
1 teaspoon vanilla extract
1 teaspoon almond extract
4 egg whites, stiffly beaten
3 cups flour, sifted three times
2 teaspoons baking powder
1 pinch salt
1 cup milk
almonds

Steps:

  • Heat oven to 350. Grease bundt pan then put large dabs of butter along creases of pan, embedding an almond in each dab.
  • Cream butter.
  • Sift the two sugars together and gradually add to butter. Scrape bowl.
  • Add unbeaten egg yolks, one at a time. Beat until smooth. Scrape bowl.
  • Mix in extracts. Scrape bowl.
  • Sift flour 3 times, re-measure, sift with baking powder and salt 3 times (Mom was emphatic about the sifting).
  • Starting with flour and ending with flour, add flour and milk alternately to batter. Scrape bowl.
  • Fold in stiffly beaten egg whites.
  • Pour batter into prepared pan.
  • Bake 1 1/4 hours or until toothpick comes out clean.
  • Cool in pan 10 minutes. Remove to wire rack and cool completely.
