These tuna patties taste like crab cakes, and are easy to make. I like putting the patties on buns and topping them with pickled jalapenos... YUM.

Steps:
- Combine the tuna, bread crumbs, celery and mayo in a large bowl. Blend in the chili paste, lemon juice, and celery salt. Mix everything well.
- Form 4-8 patties, depending on how large you want them. Fry lightly in a sprayed skillet over medium heat about 5-8 minutes, flipping once. Patties are done once they are well-browned.
EASY TUNA PATTIES

JESSICA'S FAMOUS TUNA PATTIES
These amazing baked tuna patties were discovered when the kids were hungry and it was the night before grocery day! I had to do what I could with what we had to avoid getting a "We want (fill in the blank with a fast food restaurant)!" protest from the kids. I made these babies off the top of my head and they were an instant hit. The kids loved them, I loved them, and I was easily able to hide the carrots in them from my husband, so he loved them too!

- Pre-Heat Oven to 375.
- Spread oil over bottom of pan (any metal pan should work, I used a pizza pan that has a lip on it).
- Mix remaining ingredients in a large mixing bowl.
- Divide mixture into 8 equal parts.
- Form mixture into patties and place on the pan.
- Bake patties for 10 minutes.
- Turn patties over. (Be careful they may fall apart easily.).
- Continue to bake for an additional 5-10 minutes until they start to brown.
- Remove and let them sit for 5 minutes to firm.

- Heat oil in a small frying pan over medium heat. Add onion. Cook for 2 minutes or until soft. Set aside to cool for 5 minutes.
- Place bread into a food processor. Process until fine crumbs form. Place tuna, lemon juice, tomato sauce, Worcestershire sauce, 1 egg, parsley, and salt and pepper into a large bowl. Add onion and 2 cups of breadcrumbs. Mix with clean hands until well combined (see hint below).
- Form 1/4 cup of tuna mixture into a patty. Repeat with remaining mixture to make 12 patties. Place flour onto a plate. Beat remaining 2 eggs together in a shallow dish.
- Line a tray with paper towels. Pour enough oil into a frying pan to cover the base. Heat over medium heat until hot. Coat patties in flour then dip into egg. Cook patties, 3 at a time, for 3 minutes each side or until golden. Place onto prepared tray. Cover to keep warm while cooking remaining patties.
- Place patties onto serving plates. Serve with tzatziki, salad and chips.

I got this recipe from my great grandmother and I have added to it throughout the years I have been making them. They are awesome for a meal and the family loves them. It's a definite comfort food that kids can eat with their fingers when cold - a great idea to get fish into a child's diet.

- Take can of corn, flaked tuna, mashed potato, cooked rice, 1 egg, garlic, salt, pepper, herbs, onion and cheese and mix them together in a large bowl.
- Heat cooking oil in a frying pan on stove top.
- Take mixture and roll into golf ball sized balls.
- Put plain flour into a bowl, mix beaten egg, 1/4 cup of milk, 1/4 teaspoon of salt and 1/4 teaspoon of pepper together, then put into a bowl, put breadcrumbs into a bowl.
- Take balls of mixture and drop them into the bowl of plain flour, then put them into the bowl of egg mixture, then coat them in the the bowl of breadcrumbs.
- Do about 6-7 balls at a time. Put them in the heated oil pan, pressing them down to make into patties at the same time.
- Cook for about 10 - 12 minutes or until they are golden brown, then turn them over and cook the other side until they are golden brown.
- Take them out and place them on paper towels to drain the excess oil off of them.
- Repeat steps until all of the mixture is used up.
- You can serve them hot or cold with salad or with chips or even steamed vegetables.
- If you are not into really fried crispy patties, you could skip instructions 4-6 and just take the plain mixture and make them into balls.
- Spray your frying pan with cooking spray and then put mixture balls into the pan.
- Press them down to make them patties. cook until they are golden brown. (around 10-15 minutes each side)
- I have cooked these patties both ways and they are so delicious.
