1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

Easy and delicious weeknight meal. The sauce thickens while cooking so prep time is at a minimum and is perfect with rice and broccoli. You can use any cut of chicken you like - just adjust the cooking time accordingly.

2 teaspoons cornstarch
2 teaspoons water
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup low sodium soy sauce
1/4 cup cider vinegar
1/4 cup orange juice or 1/4 cup pineapple juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
8 skinless chicken thighs

Steps:

  • Preheat oven to 425 degrees F.
  • Combine the first 10 ingredients in a bowl.
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Pour sauce over chicken and turn to thoroughly coat.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 10 minutes, until no longer pink and juices run clear.
  • Spoon sauce over chicken and serve.
  • ***If using bone-in chicken breasts, bake at 375 for 35-40 minutes. If using boneless chicken breasts, bake at 375 for 20-25 minutes.
  • ***If you prefer (especially if you are cooking for a shorter amount of time), bring all the ingredients to a boil in a saucepan on the stove and let simmer until thick. Brush the chicken with the resulting glaze.

This recipe came from my friend Molly. It is similar to a teriyaki chicken, but baked, and so easy. It tastes great warm, but even better cold the next day.

1 cup water
1 cup soy sauce
1 cup white sugar
1/4 cup orange juice
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon ground ginger
8 -16 chicken legs

Steps:

  • Mix all the ingredients in a large plastic bag or container.
  • Marinate 8 hours, overnight.
  • Add the chicken and all the marinade to a large baking dish.
  • I use a 9x13 pan, or a large roaster.
  • Bake at 350F for 1 hour, uncovered.
  • To serve, remove the chicken from the marinade.
  • Can be eaten warm, or chilled.

Served with a bright, refreshing radish salad, these salty, sweet, and shatteringly crisp glazed thighs will satisfy all your classic chicken teriyaki cravings.

5 skin-on, boneless chicken thighs (about 1 1/2 lb. total)
1 1/2 tsp. kosher salt, divided
1/3 cup low-sodium soy sauce
1/3 cup mirin (sweet Japanese rice wine)
1/3 cup sake
5 radishes, trimmed, thinly sliced
5 scallions, thinly sliced on a diagonal
2 tsp. unseasoned rice vinegar
Cooked white rice (for serving)

Steps:

  • Place chicken on a cutting board and poke several holes through the skin with a sharp knife. Season with 1 tsp salt.
  • Place chicken, skin side down, in a cold large cast-iron skillet and cook over medium heat, undisturbed, until chicken skin releases easily, about 5 minutes. Reduce heat to medium-low and continue to cook, lifting up once or twice to let hot fat run underneath, until skin is evenly golden brown and crisp, about 12 minutes.
  • Meanwhile, whisk soy sauce, mirin, and sake in a small bowl.
  • Transfer chicken skin side up to a plate. Wipe out skillet and increase heat to medium. Pour in soy sauce mixture and cook, stirring occasionally, until thickened slightly, about 4 minutes. Return chicken to pan, arranging skin side up, and cook, adding a splash of water if sauce looks too thick, until underside is cooked through, about 1 minute. Turn thighs skin side down and continue to cook until warmed through and coated, about 1 minute more. Transfer chicken to a cutting board and slice into 1/2" strips; set teriyaki sauce in skillet aside.
  • Toss radishes, scallions, and vinegar in a small bowl. Season with remaining 1/2 tsp. salt.
  • Place rice on a platter and arrange chicken over. Drizzle with reserved teriyaki sauce and top with radish salad.

½ cup soy sauce
¼ cup packed brown sugar
2 cloves garlic, minced
1 (8 ounce) can tomato sauce

Steps:

  • Place drumsticks in a slow cooker. In a medium bowl, stir together soy sauce, brown sugar, garlic, and tomato sauce. Pour sauce over chicken.
  • Cover, and cook on Low heat 8 hours.

Wonderful baked chicken with minimal mess to make for easy clean-up. My daughter says it's her favorite teriyaki chicken ever! Can be easily adapted to your tastes and can also be done on the stove if you prefer. Serve over rice.

2 tablespoons cornstarch
2 tablespoons water
1 cup low-sodium soy sauce
½ cup white sugar
¼ cup mirin (Japanese sweet wine)
4 teaspoons grated fresh ginger
3 cloves garlic, minced
¼ teaspoon red pepper flakes
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk cornstarch and water together in a small bowl until dissolved; set aside. Combine soy sauce, sugar, mirin, ginger, garlic, and red pepper flakes together in a saucepan over medium heat until the mixture starts to simmer. Slowly whisk in cornstarch mixture. Bring to a boil; reduce heat to medium-low, and simmer until thickened, stirring often, about 10 minutes.
  • Pat chicken dry with paper towels; arrange in a baking dish. Pour sauce over chicken breasts, coating all sides.
  • Bake chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).
