Original Lime Mojito - made with simple syrup. My favorite way to make this refreshing summer drink.

10 mint leaves + more for garnishing
2 oz white rum
1 oz simple syrup
2 tbsp lime juice
soda water
1/2 cup water
1/2 cup suga

Steps:

  • Start with the simple syrup. Mix sugar and water in a sauce pan and bring to a boil. Stir until sugar gets dissolved. Remove from heat and store in the fridge until ready to use.
  • Pour lime juice and simple syrup into a tall glass.
  • Add mint leaves and muddle it together.
  • Add rum and muddle a little more.
  • Add ice and a splash of soda.
  • Serve garnished with fresh mint leaves and a slice of lime.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

1/2 cup fresh mint leaves, plus sprigs for garnish
2 limes, cut into wedges, plus more for garnish
2 cups crushed ice, plus more for serving
1 liter white rum, chilled
1/2 cup fresh lime juice, chilled
club soda, chilled
2 cups sugar
2 cups water
2 limes, zest of
1/2 cup fresh mint leaves

Steps:

  • To make the Lime-Mint Syrup, bring the sugar and water to a boil cook until completely dissolved, only about 1 minute. Remove from heat, stir in the lime zest and mint, and let sit for about 30 minutes. Strain, cover and refrigerate until chilled.
  • Muddle mint and lime with the crushed ice in the bottom of a large pitcher. Add chilled Lime-Mint Syrup, rum, lime juice, and more ice. Top off with chilled club soda, to taste.
  • Pour into glasses over crushed ice and serve. Garnish each cocktail glass with a lime slice and mint sprigs.
