2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
8 ounces cream cheese, softened
1/2 cup butter, melted
2 cups sugar
2 large eggs
2 teaspoons vanilla extract, pure
2 cups blueberries, fresh or frozen
3 tablespoons sugar
1 1/2 teaspoons cinnamon, ground

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking pan; set aside.
  • In small bowl stir together flour, baking powder and salt; set aside.
  • In a large bowl beat cream cheese and butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 2 cups sugar; beat until combined.
  • Add eggs, 1 at a time, beating well. Add flour mixture; beat until combined.
  • Stir in vanilla. Gradually fold in blueberries.
  • Batter will be very thick. Pour into prepared pan and smooth the top.
  • In small bowl stir together 3 tablespoons sugar and the cinnamon.
  • Sprinkle over batter.
  • Bake for 50 to 60 minutes or until a toothpick inserted in center comes out clean.
  • Cool on a wire rack.

I made this for my mom's birthday and everyone loved it! Have it with a big glass of cold milk for an extra-special treat. This cake is nice and sweet but not too much with a yummy crunchy pecan topping! It will rise up very pretty in the oven and has a great flavor and texture.

1/2 cup milk
2 cups all-purpose flour

1 teaspoon ground cinnamon

3 tablespoons margarine

Steps:

  • Preheat oven to 375°F Spray an 8 or 9-inch round pan with cooking spray and shake a little bit of flour all around in the pan to lightly coat the inside of pan with the flour.
  • Sift together the 2 cups flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the egg.
  • Beat in the flour mixture alternately with the milk, mixing just until combined. Fold in blueberries. Pour batter into prepared pan.
  • In a small bowl combine all topping ingredients except margarine, then cut in margarine until crumbly. Sprinkle evenly over batter.
  • Bake in pre-heated oven for around 50-60 minutes or until a toothpick inserted in center comes out clean. Cool slightly before serving.

A very easy to make blueberry coffee cake. I always double the topping so I included the measurements for the doubled amount. This makes a great dish to bring for a potluck. It will disappear very quickly. You can add nuts if you wish in the topping. I got this from a friend who always used it as a quick item to make for a party. She could make it up, stick it in the oven, finish getting ready and when guests arrived, served it very warm with butter.

  • Preheat oven to 350 F. Lightly grease a 9×13 baking dish. Make the pecan topping by cutting the cold butter into the flour, cinnamon, and sugar until crumbly. Stir in the pecan nuts. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.Roll the blueberries in 2 tablespoons of flour (from the flour mix above) until coated.
  • In another bowl, beat the eggs with the sour cream just until combined. Pour in the melted butter and the vanilla and mix.Slowly whisk in the flour mixture with the egg mixture. It will be a thick batter. Gently fold in the blueberries and chopped pecans (if using).
  • Spoon the batter onto the prepared baking dish and spread evenly. Distribute the pecan topping all over the batter. Bake in the preheated oven for about 35-40 minutes or until a tester inserted in the middle comes out clean. Oven heating and temperatures vary so adjust accordingly. Mine was perfect at 35 minutes.
