ONE POT KALE AND QUINOA PILAF

One Pot Kale and Quinoa Pilaf image

This recipe came from food52.com, from member "deensiebat." This was my first time using lacinato kale, which I find I like better than standard kale (although the standard kale or chard can also be used). I was thrilled to find such a delicious dish made of complete-protein quinoa and antioxidant-rich kale. AND it's easy to make all in just one pot!

Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

2 cups salted water
1 cup quinoa, rinsed and drained
1 bunch lacinato kale, washed and chopped into 1-inch lengths
1 meyer lemon, zested and juiced
2 scallions, minced
1 tablespoon toasted walnut oil
3 tablespoons toasted pine nuts
1/4 cup crumbled goat cheese (feta is also good)
salt & pepper

Steps:

  • Bring the water to a boil in a covered pot. Add the quinoa, cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes.
  • While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts, and goat cheese.
  • Check the quinoa and kale when the cooking time has completed--the water should have absorbed, and the quinoa will be tender but firm, and the kale tender and bright green. If the quinoa still has a hard white center, you can steam a bit longer (adding more water if needed). When the quinoa and kale are done, fluff the pilaf, and tip it into the waiting bowl with the remaining ingredients. Toss to combine, seasoning with salt and pepper, and the remaining lemon juice if needed.

KALE AND QUINOA PILAF

Kale and Quinoa Pilaf image

I make this one constantly... It's quick, pretty virtuous and from another of my favorite food sites, Food52. http://food52.com/recipes/2434-one-pot-kale-and-quinoa-pilaf

Yield 4 serving(s)

Number Of Ingredients 8

2 cups salt water
1 cup quinoa
2 cups kale, washed and chopped into 1-inch lengths (recommend Tuscan)
1 meyer lemon, zested and juiced (regular lemon is fine too)
2 scallions, minced
1 tablespoon walnut oil, toasted
3 tablespoons pine nuts or 3 tablespoons walnuts, toasted
salt and pepper

  • While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts.
  • Check the quinoa and kale when the cooking time has completed -- the water should have absorbed, and the quinoa will be tender but firm, and the kale tender and bright green. If the quinoa still has a hard white center, you can steam a bit longer (adding more water if needed). When the quinoa and kale are done, fluff the pilaf, and tip it into the waiting bowl with the remaining ingredients. As the hot quinoa hits the scallions and lemon it should smell lovely. Toss to combine, seasoning with salt and pepper, and the remaining lemon juice if needed.

2 cups water
1 cup quinoa
10 leaves kale, cut into small pieces
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 large garlic clove, minced
1 teaspoon fresh cracked black pepper
½ teaspoon ground sea salt
1 cup pecans
1 cup currants
¾ cup crumbled feta cheese

Steps:

  • Bring water to a boil in a saucepan. Stir quinoa into the boiling water, reduce heat to medium-low, place cover on the saucepan, and cook until water absorbs into the quinoa, about 12 minutes. Remove saucepan from heat and let rest covered for 5 minutes. Remove cover and allow quinoa to cool completely.
  • Put kale in a large mixing bowl.
  • Whisk olive oil, lemon juice, Dijon mustard, garlic, pepper, and salt together in a bowl until oil emulsifies into the mixture; drizzle over kale. Add cooled quinoa, pecans, currants, and feta cheese to the dressed kale and toss to incorporate.

  • Rinse the quinoa under cold water and leave the sieve to strain. Prepare the kale and set aside.
  • Tun the Instant Pot and turn the Sautee function key. Add the olive oil, onions and carrots and cook for 2 minutes, stirring a couple of times.
  • Once you have sauteed the onions and carrots, add the quinoa, garlic, lemon zest, raisins, vegetable stock cube (crush it with your hands) and cumin powder (you can also use other spices or herbs). Add the water and stir through well. Cancel the Saute function.
  • Note: A typical ratio of quinoa to water is 1:1 but we’re adding just a little bit more water as we have other ingredients. This will also prevent that pesky burning error message.
