2 cups white sugar
1 cup light corn syrup
1 ½ cups water
8 drops red food coloring

Steps:

  • Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
  • In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
  • Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.

From my falling apart cookbook entitled Best-Loved Pennsylvania Dutch Recipes. Simple ingredients, easy assembly and spectacular presentation. When pressed for time, I have been known to substitute canned apple pie filling. This also works well for Cherry Crumb Pie by using canned cherry filling plus 1/4 teaspoon almond extract. A lifetime ago, on holidays, I was not allowed to enter my ex-inlaws house unless I had a Cherry Crumb Pie in my hands! ;) NOTE: If you use canned filling, just bake for 45 minutes at 350 degrees or until topping is brown.

1 (9 inch) pie crusts, unbaked
2 teaspoons lemon juice
1/2 cup sugar
1/2 teaspoon cinnamon
5 cups apples, cored and sliced (about 5 small, Granny Smith apples work well)
1/2 cup raisins (optional)
3/4 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
1/3 cup butter

Steps:

  • Preheat oven to 425 degrees and set butter out so it will be at room temperature.
  • Line 9" pie pan with unbaked crust.
  • Core and slice apples.
  • Sprinkle the apples with the lemon juice.
  • Mix in the sugar & cinnamon.
  • Fill pie shell with apple mixture.
  • In a small bowl, mix the topping's flour, sugar and cinnamon.
  • Rub the topping ingredients and butter together with your fingers until the mixture is crumbly.
  • Sprinkle topping over pie.
  • Bake 10 minutes at 425 degrees then reduce oven temperature to 350 degrees and bake until crumb topping is browned and apples are soft, approximately 50 minutes.

This recipe produces a very red, shiny candied apple. You can substitute a drop of cinnamon oil for the candies. After the apples are cooled, you can wrap them in colored plastic wrap and tie shut with curling ribbon. Makes a nice Halloween party treat.

3 cups white sugar
½ cup white corn syrup
½ cup water
8 cinnamon red hot candies
1 teaspoon red food coloring

Steps:

  • Insert a wooden craft stick into the bottom of each apple. Butter a baking sheet and set aside.
  • Combine sugar, corn syrup and water in a heavy saucepan over medium heat. Heat, without stirring, to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Remove from heat and stir in candies and food coloring until just mixed.
  • Holding each apple by its stick, quickly twirl in syrup, tilting pan to cover apple. Lift out of syrup, turning to allow drips to adhere to apple. Place apples on prepared baking sheet to cool completely.

5 large Granny Smith apples - peeled, cored and sliced
½ cup white sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
2 tablespoons lemon juice
½ cup white sugar
½ cup all-purpose flour
½ cup butter
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine 1/2 cup sugar, 2 tablespoons flour, and cinnamon. Pour over apples in crust. Sprinkle lemon juice on top.
  • Cut 1/2 cup sugar, 1/2 cup flour, and 1/2 cup butter or margarine together, and top pie with the mixture.
  • Take two 15 inch pieces of parchment paper and enclose pie; fold edges up 3 times. Place on a baking sheet.
  • Bake in preheated oven for 1 hour. Remove from oven, split parchment open and cool pie on wire rack. DO NOT open parchment covering while baking! Serve warm, or at room temperature.

These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that.   • Mix 1st 3 ingredients in saucepan.
  • Put on high heat with candy thermometer positioned in center of fluid level.
  • While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.
  • Boil mixture until reaches hard crack (300ºF), then immediately add red food coloring and stir.

10 apples (use strongly flavored apples, such as Winesap or Mackintosh)
1 cup sugar
1 cup corn syrup
10 wooden popsicle sticks

Steps:

  • Wash apples, remove stems and replace with popsicle stick pushed halfway into the apple.
  • Combine sugar and corn syrup in a deep pan and stir slowly over low heat until thoroughly dissolved.
  • Let boil to 300F on candy thermometer or until a small quantity becomes brittle when dropped into cold water.
  • Remove pan from heat and place over boiling water (to keep the candy from hardening too quickly).
  • Dip apples in the candy syrup and twirl in a circular motion until completely covered.
  • Place on a buttered pan with the sticks upright and permit to cool.

6 Fuji or Granny Smith apples
1 bag candy corn
1 bag licorice bits
1 1/2 cups water
4 1/2 cups granulated sugar
1 1/8 cups corn syrup
3/4 teaspoon red food coloring

Steps:

  • Clean apples. Place a wooden stick in the center of the apple. Set aside. Place the candy corn and licorice in separate bowls.
  • Place the water, sugar, and corn syrup in a clean 3-quart saucepot. Stir to form wet sand.
  • Place on medium flame until the sugar boils; at that point increase the heat to high. Occasionally, wash sides of pot with cold water and a brush, if needed, to prevent crystallization. Cook on high heat to 283 degrees F. Add red food coloring and swirl around in the pot; do not stir. Continue to cook to 300 degrees F. Remove from the heat and let rest for 3 minutes.
  • Dip the apple on an angle, rotating the apple clockwise, to coat the apple. Immediately roll the apple in candy corn or licorice. Set aside to cool.

1 (3-ounce) box cherry gelatin dessert mix
1/2 cup hot water
6 Granny Smith apples, washed and dried
6 wooden candy apple sticks
1 cup chopped nuts

Steps:

  • In a saucepan over medium-low heat, combine glaze and corn syrup. Simmer for 20 minutes.
  • Dilute gelatin mix in hot water and pour in saucepan with glaze. Stir and continue to cook until temperature on a candy thermometer is between 180 and 200 degrees F.
  • Shove wooden candy sticks into bottom of apples, far enough to secure inside. Dip each apple in syrup and turn until completely coated. Immediately roll bottom half of apples in nuts. When cool arrange on parchment-lined tray.

2 cups water
1 cup sugar
4 ounces red cinnamon candies

Steps:

  • Slice the apples into thin rings.
  • In a dutch oven or soup kettle put the water, sugar and red cinnamon candies.
  • Bring the mixture to a boil and then reduce heat to medium, stirring occasionally.
  • When the cinnamon candies have dissolved, add the apple rings.
  • Simmer for 15 minutes on lowish heat until the apples are tender.
  • While the apples are simmering, about every 5 minutes gently stir the mixture.
  • When the apples are cooked, turn off the heat and allow the apples to cool in the syrup.
  • They will continue to darken in color as they sit in the syrup.
  • Serve either chilled or at room temperature.

30 small red apples
5 cups white sugar
½ cup golden syrup
1 ½ cups mineral water
2 teaspoons black currant syrup

Steps:

  • Place lollipop sticks or wooden craft sticks into each apple at the stem end. Set aside.
  • In a heavy saucepan, mix together the sugar, golden syrup and water. Bring to a boil, then reduce the heat to medium and continue to cook until the mixture reaches 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. This will take a good 45 minutes!
  • Remove the sugar mixture from the heat and stir in the black currant syrup. Quickly dip all of the apples, holding them by the stick. You can let them cool by inserting the other end of the stick into a thick sheet of foam board. If that is not available, set the coated apples onto waxed paper or aluminum foil. Make sure they don't touch each other.
