MIXED BERRY CRISP (GLUTEN FREE)
Make this delightful berry crisp with any mix of strawberries, blueberries, raspberries or blackberries. It's the perfect simple and fruity summertime dessert. Recipe yields one 9-inch crisp, about 8 servings.

- Preheat the oven to 350 degrees Fahrenheit. Rinse and drain the berries and pick through to remove any stems still attached. If you're using strawberries, slice them into 1/4-inch thick pieces. If you're using particularly large blackberries, slice them in half.
- In a 9 by 9-inch baking dish, mix together the berries, honey, starch, citrus zest and juice. Set aside.
- In a medium mixing bowl, stir together the oats, almond meal/flour, sliced almonds (if using), sugar and salt. Mix in the butter and yogurt. Stir until all of the flour is incorporated and the mixture is moistened throughout.
- Dollop spoonfuls of the oat mixture over the filling and use your fingers to break up the mixture until it is evenly distributed (no need to pack it down).
- Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden. Let the crisp rest for 5 to 10 minutes before serving. Serve with vanilla ice cream (I insist!).

- Preheat the oven to 190°C/ 375°F/ Gas Mark 5.
- Put the filling ingredients into a pan over low heat and cook for about 4 minutes or until the fruit just begins to soften. Tip the fruit into an ovenproof dish and set this aside.
- Put the oats, ground almonds, dates, butter, 2 teaspoons of the ground ginger and the vanilla seeds into a bowl and, using your fingertips, rub this gently together to just combine so everything is evenly mixed in. Tip the crumble topping over the fruit and then sprinkle over the remaining 1 teaspoon of ground ginger.
- Pop into the oven and cook for about 25 minutes or until the crumble is just going golden brown. Once cooked, remove from the oven and leave to cool for a few minutes before serving.
BERRY ALMOND CRUMBLE OATMEAL
This recipe was delivered to my e-mail by Quaker Oats. I'm going to store it here so it doesn't get lost. This recipe appeals to me because of the fiber in the oatmeal. It is also low in sodium (although I've been known to add a pinch of salt to my oatmeal)

- For topping:.
- In a medium skillet, combine oats and almonds.
- Cook over medium heat on low for 4 to 6 minutes, stirring occasionally, until oats and almonds are lightly browned.
- Cool completely.
- In a small bowl, combine brown sugar and cinnamon.
- Add oat mixture, mix well.
- For Oatmeal:.
- In a medium saucepan, bring milk and cinnamon to a boil.
- Stir in oats.
- Return to a boil.
- Reduce heat to medium.
- Cook 1 minute for quick oats or 5 minutes for old fashioned oats, stirring occasionally.
- Gently stir in blueberries.
- Continue cooking until blueberries are heated through and most of liquid is absorbed, about 1 minute.
- Spoon oatmeal into cereal bowls, Sprinkle topping over oatmeal. Enjoy!
THE ULTIMATE BERRY CRUMBLE
I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
- Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
- Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
- Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

- MAKE THE TOPPING:
- Preheat the oven to 400°.
- In a food processor, combine the flour with the oats, granola and sugar and pulse until coarsely ground.
- Add the chilled butter and pulse until the mixture resembles fine meal.

MIXED BERRY AND APPLE CRUMBLE-NO SUGAR, NO FLOUR
In an effort to make a dessert that my parents could have on their no sugar, no flour diet, I came up with this. Thanks to Ladypit for the idea of using pineapple and banana for added sweetness. My recipe will make a lot of crumble topping because that's how my family likes it. You can adjust quantities as you see fit.

- Preheat oven to 375.
- Separated pineapple juice from chunks and in a food processor, puree the pineapple chunks and banana.
- In a small sauce pan, reduce the pineapple juice to a syrupy consistency.
- Combine the pureed fruit, pineapple syrup, frozen berries, apple, and applesauce in a large sauce pan and bring to a low boil.
- Allow to cook until the apple are soft and the juices of the fruit have thickened.
- In a large bowl, combine the ground almond, chopped nuts, oats, cinnamon, and salt, if using.
- In a small sauce pan combine honey and butter and heat till well melted.
