SICILIAN SPAGHETTI ALLA NORMA

This is a beautifully simple, classic Sicilian pasta dish - it's incredibly satisfying, full of flavour, and feels like a great big hug in a bowl. It also contains two of your five-a-day (bonus!), and the nutty-flavoured wholewheat pasta is much higher in fibre than the white refined stuff (double bonus!), so is a fantastic switch to make. The aubergine takes on the most amazing texture, the capers and pecorino add a lovely saltiness to the sweet tomato sauce and the chilli flakes give it a lovely warmth.

2 aubergines
3 cloves of garlic
½ a bunch of fresh basil, (15g)
1 teaspoon dried oregano
1 teaspoon dried chilli flakes
olive oil
1 tablespoon baby capers
1 tablespoon red wine vinegar
1 x 400 g tin of quality plum tomatoes
320 g dried wholewheat spaghetti
50 g pecorino cheese
extra virgin olive oil

Steps:

  • Chop the aubergines into rough 2cm chunks. Place into a colander in the sink, sprinkle with sea salt to draw out the moisture, then set aside for around 20 minutes.
  • Peel and finely slice the garlic, then pick the basil leaves and finely slice the stalks.
  • Rinse the aubergine and pat dry with kitchen paper, then place into a large bowl with the oregano, chilli flakes, a splash of olive oil and a pinch of sea salt and black pepper. Toss together well.
  • Drizzle a splash of olive oil into a large frying pan over a medium heat. Once hot, add the aubergines in a single layer, and fry for 5 to 8 minutes, or until softened and golden, stirring occasionally - you may need to do this in batches.
  • Add another splash of olive oil, followed by the garlic, capers and basil stalks, then cook for a further 2 minutes, or until golden.
  • Stir in the vinegar and the tomatoes, breaking them up with the back of a spoon. Reduce the heat to low, and simmer gently for 15 to 20 minutes, or until thick and glossy.
  • Cook the spaghetti in a pan of boiling salted water for 8 minutes or until al dente, which means that it should be soft enough to eat, but still have a bit of bite and firmness to it.
  • Drain the spaghetti, reserving a cupful of the cooking water, then add a good splash of the reserved water to the aubergine sauce.
  • Finely grate in half the cheese and tear in most of the reserved basil leaves. Add a lug of extra virgin olive oil, then season to taste.
  • Add the spaghetti to the sauce and toss well, adding an extra splash of the reserved cooking water to loosen, if needed.
  • Divide between bowls, grate over the remaining cheese and finish with the remaining basil scattered on top.

3 links pork sausage, casings removed
½ pound ground beef

  • Heat 2 tablespoons olive oil in a large Dutch oven over medium heat; cook pork sausage, breaking it onto smaller pieces with a wooden spoon, until browned, about 5 minutes. Add ground beef; cook and stir until beef is browned and crumbly, about 5 minutes. Drain excess fat.
  • Pour remaining olive oil over sausage mixture; add eggplant, onion, garlic, salt, and black pepper. Cook and stir until lightly browned, about 10 minutes. Add mushrooms and continuing cooking until tender, about 5 minutes.

1 eggplant, washed and sliced into 8 1/2 inch slices, i use the nicer ones from the center and work my way out
2 cups mozzarella-parmesan cheese blend
1 egg
1/2 cup milk
1 1/2 cups breadcrumbs, seasoned with garlic powder
salt

1 cup olive oil
2 cups spaghetti sauce
cooked pasta

Steps:

  • preheat oven to 350 degrees.
  • mix egg and milk together in bowl, blend.
  • heat olive oil in med frying pan.
  • dip eggplant slices into egg/milk mixture.
  • dip eggplant into breadcrumbs.
  • place 4 slices at a time, into olive oil in frying pan.
  • fry eggplant on each side, until each side is golden brown (you want them crispy, not mushy).
  • remove eggplant from skillet, and place on paper towels to drain excess oil.
  • repeat dipping and frying proces with other 4 eggplant slices.
  • place 1/2 cup spaghetti sauce into 9x13 casserole dish.
  • place eggplant into bottom of cassserole.
  • pour spaghetti sauce over top of eggplant.
  • sprinkle mozzarella/parmesan cheese over top of spaghetti sauce.
  • bake in 350 degree oven for 30 minutes or until cheese is melted.
  • serve over pasta if desired.

1 pint cherry tomatoes
3 cloves garlic, whole
3 tablespoons olive oil
1 teaspoon salt

1/4 cup toasted pine nuts
1 pound rigatoni pasta
1/4 cup torn fresh mint leaves
3 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl combine the eggplant, cherry tomatoes, garlic, olive oil, salt, pepper, and red
  • pepper flakes. Spread the vegetables out in an even layer on the baking sheet. Roast in the oven until the vegetables are tender and the eggplant is golden, about 35 minutes.
  • While the vegetables are roasting, place the pine nuts in a small baking dish. Place in the oven on the rack below the vegetables. Roast until golden, about 8 minutes. Remove from the oven and reserve.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta into a large bowl and reserve 1 1/2 cups of the cooking liquid.
  • Transfer the roasted vegetables to a food processor. Add the torn mint leaves and extra-virgin olive oil. Puree the vegetables.
  • Transfer the pureed vegetables to the bowl with the pasta and add the Parmesan. Stir to combine, adding the pasta cooking liquid 1/2 cup at a time until the pasta is saucy. Sprinkle the pine nuts over the top and serve.

6 garlic cloves, chopped
1 large bell pepper, chopped
2 lbs eggplants, peeled & cubed

4 tablespoons fresh basil
2 teaspoons dry oregano
1/3 cup sugar
1/8 cup salt
1 teaspoon pepper
1 cup dry red wine

Steps:

  • In a very large kettle, heat olive oil over medium heat.
  • Add onion and garlic; cook until the onion is soft.
  • Add tomatoes, eggplant, bell pepper, tomato paste, basil, oregano, sugar, salt, pepper, and wine; stir.
  • Bring to boil; reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Put into hot jars and seal.
  • Makes 7 pints or 4 quarts.
  • Process in hot water bath for 40 minutes.
  • This is very good served over pasta with Mozzarella cheese.

1 lb aubergines/eggplants
1/2 teaspoon fine sea salt
6 tablespoons olive oil
3 garlic cloves
2 sprigs thyme/oregano (a generous pinch of dried herbs works as well)
1 cup vegetable or chicken stock
2 tablespoons dried tomatoes (chopped)
basil leaves
1 lb spaghetti
grated Parmesan to serve

Steps:

  • Cut the aubergines into chunky cubes, sprinkle them with some salt and let them sit for 20 minutes. Dry them off with kitchen paper, pressing lightly.
  • Saute: Peel the garlic cloves, smash them slightly but leave them whole. Heat the olive oil in a wide non-stick pan and add the garlic cloves. Turn the heat to low and fry the garlic, stirring often, until it starts to sizzle and smell. Don't let it burn.
  • Add the aubergines, stir to coat them in oil, and cook on medium heat until translucent and soft.
  • Simmer: Add the chopped tomatoes, herbs, and stock. Bring everything to a boil, cover the pan leaving a crack open and let cook for about 20 minutes until the liquid has evaporated and the aubergines are very soft. If there is too much liquid left in the pan by the time the aubergines are soft, just take away the lid and let the sauce bubble for a little while longer.
  • Cook pasta: While the sauce is cooking, start cooking the spaghetti.
  • Mix: Mash the aubergines with a fork, add the sliced basil leaves, season to taste, and mix with the spaghetti. Serve with some grated Parmesan if desired.

CREAMY EGGPLANT PASTA

6 oz dried Pasta
1 Eggplant
1 White or Yellow Onion (minced)
1 tbsp Milk or Cream
Olive Oil
Salt
Black Pepper
Parmigiano cheese (grated)

Steps:

  • Peel and chop the eggplant in cubes. Boil it in slightly salted water for about 5 minutes or steam it for about 10 minutes. Remove the eggplant with a skimmer and don't toss the water.
  • Drizzle a pan with oil and sauté the minced onion for a minute. Add the drained eggplant and sauté for 2-3 minutes more.
  • Meanwhile, add more salt to the boiling water and toss the pasta in. Cook according to the packaging instructions, until al dente.
  • Transfer the eggplant and onion in a blender, season with salt and pepper and add the tablespoons of milk. Blend until you get a smooth cream. Add a few tablespoons of pasta water to make it thinner if needed.
  • Drain the pasta and mix it with the creamy eggplant sauce. Serve with abundant grated Parmigiano cheese on top.

olive oil, for shallow frying
4 tablespoons extra virgin olive oil

2 tablespoons capers
1 kg large frsh tomatoes, skinned and chopped

Pasta Alla Norma is a traditional Sicilian pasta dish made with eggplant/aubergine, tomatoes, basil and cheese. It's perfect for those nights when you want a healthy and filling vegetarian home cooked dinner, but without any fuss.

4 tablespoons olive oil
1 medium eggplant ((aubergine) cut into small cubes (about 1cm²))
4 garlic cloves (crushed or sliced)
1/4 teaspoon crushed chilis ((or 1/2 teaspoon if you like))
28 ounces whole tomatoes ((two cans))
1 tablespoon balsamic vinegar
1 teaspoon sugar ((or honey))
salt and pepper (to taste)
1 bunch fresh basil
10 ounces pasta (I used a variant of penne, but any medium-sized pasta shapes will do)
1 ball of mozzarella
freshly grated parmesan cheese (to serve)

Steps:

  • Heat up the olive oil, then stir in the eggplant, making sure it all gets coated in oil. Let cook, stirring occasionally, for about ten to fifteen minutes.
  • Add the garlic and chili flakes to the pan and cook, stirring, for a couple more minutes.
  • Add the tomatoes to the pan, then crush them and break them up with a wooden spoon. Pour in the balsamic vinegar, then add the sugar/honey. Simmer for about 15 minutes or until the eggplant is nice and soft.
  • At the end of the cooking time, season well and stir in most of the basil.
  • Meanwhile, boil the pasta according to the packet instructions (until al dente is best). Then drain, reserving some of the water.

  • Salt the water and bring to a boil in a kettle; add the spaghetti and cook to the desired degree of doneness and/or according to package directions, then drain and set aside.
  • While pasta is cooking, peel and devein the shrimp and set aside.
  • Trim the ends of the eggplant and peel it.
  • Cut into 1/2 inch cubes.
  • Heat 1 tablespoon of the oil in a saucepan and add the garlic.
  • Cook, stirring, without browning.
  • Add the tomatoes, honey, pepper flakes, basil (flat Italian parsley can be substituted), salt and pepper.
  • Stir to blend, cover and simmer, stirring frequently, about 15 minutes.
  • Heat 2 tablespoons of the oil in a large nonstick skillet and when it is very hot, add the eggplant, salt and pepper.
  • Cook the eggplant, tossing it, until it's nicely browned.
  • Drain and add the eggplant to the tomato sauce.
  • Stir and cover and cook for 15 minutes or until well blended with the sauce.
  • Meanwhile, in the same nonstick skillet, add the remaining 1 tablespoon of oil and add the shrimp, salt and pepper.
  • Cook over high heat for one minute, stirring.
  • Add the shrimp to the sauce, blend well and cook for one minute.
  • Toss the cooked and drained spaghetti with the shrimp and eggplant mixture, and serve immediately with parmesan cheese.

3 garlic cloves, minced
1 medium eggplant, unpeeled and chopped (about 1 lb.)

4 tablespoons capers, rinsed

Steps:

  • Heat olive oil over medium-low heat in a large skillet. Add garlic.
  • Add eggplant and bell peppers and toss.
  • Stir in tomatoes, olives and capers.
  • Add remaining ingredients, stir and cover.
  • Turn heat down to very low and allow sauce to gently simmer for about 1 hour, stirring occasionally to keep it from scorching, add more wine or water if it gets to thick.

1 pound pasta
4 small eggplants (cut in half)
cooking spray
1 tablespoon olive oil
3 garlic cloves
14 ounces can plum tomatoes
1 cup white wine
fresh basil (A big handful )
¼ cup Parmesan cheese (freshly grated )
salt and pepper (to taste)

Steps:

  • Pre-heat your oven to 400F. Place the eggplant halves face down on a baking sheet. Spray with cooking spray and roast for 30-35 minutes (you'll know they're done when the skin shrivels). When ready, carefully scoop out the fleshy center with a spoon and run a knife through it to cut into strips.
  • Bring a large pot of salted water to a roaring boil, and cook the pasta until about 2 minutes underdone.
  • While the pasta cooks, heat the oil over medium-high heat in a large, deep sauté pan. Add the garlic and cook until just brown.
  • Add tomatoes followed by the wine. Raise the heat and allow the alcohol to cook off the wine. While the wine cooks down, crush the tomatoes with a potato masher or the back of a spoon.
  • Add the eggplant and basil to the tomatoes and mix well to combine, lower the heat and allow to simmer while the pasta finishes cooking.
  • Before straining the pasta, with a ladle or strainer, use a mug to remove a cup of pasta water. Then drain the pasta and mix it into the sauce in the pan with half the cooking water. Cook for 2 - 3 minutes (adding more pasta water if it starts getting a bit dry). Check to see if the pasta is cooked. When done, add freshly grated cheese to the pasta and mix well to incorporate.
  • Taste for seasoning and season with salt and pepper as needed. Serve with more grated cheese.

Steps:

  • Preheat oven to 400F.
  • Roast eggplant and onions: arrange sliced onions and diced eggplant on a sheet pan and toss with oil, garlic powder, and a generous pinch of salt & pepper. Roast for 20-25 minutes - flip halfway through roasting time.
  • Cook pasta: bring a pot of well-salted water to a boil. Cook pasta as box instructs. I like to cook the noodles until they are al dente in texture! Tip: al dente means "to the tooth" - the pasta should have a bite to it and not be too soft.
  • Heat sauce: In a sauce pan, simmer the marinara on low to heat up. Fold in roasted eggplant and onions to sauce when they're finished cooking.
  • Serve: Serve pasta noodles with eggplant and marinara sauce, chopped fresh basil, and parmesan cheese!

2 medium eggplants
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 garlic cloves
1/2 lemon, juiced
6 fresh basil leaves
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 medium onions, chopped
1 fresh red chile, chopped
2 garlic cloves, minced
1 cup alfonso olives, pitted
1/2 bunch fresh basil leaves
3 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
Pinch sugar
1 tablespoon capers
Kosher salt and freshly ground black pepper
1 pound spaghetti
1/2 cup freshly grated pecorino cheese

Steps:

  • Heat a grill pan over medium heat. Slice the eggplants into 1/4-inch rounds. Toss them with 1/4 cup olive oil and some salt and pepper. Grill them until marks have formed and they are soft, about 2 to 3 minutes per side. Place them onto a paper towel lined platter. Scatter over 2 cloves of sliced garlic, drizzle with 2 tablespoons of olive oil and the lemon juice, put on a few torn basil leaves, and season it all with salt and pepper. Set aside while you make the sauce.
  • Coat a large saute pan with olive oil and place over medium heat. Cook the onions until they are soft, about 5 minutes. Add the chile, garlic, olives and a few hand-torn basil leaves. Carefully add the tomatoes and a pinch of sugar; cook and stir until the liquid is cooked down and the sauce is thick, about 15 minutes. Add the capers, taste, and adjust the seasoning with salt and pepper. Lower the heat, cover, and keep warm.
  • Fill a large pot with water and bring it to a boil. Add a couple of tablespoons of salt and the spaghetti. Stir to make sure the pasta doesn't stick. Cover and return to a boil. Remove cover and cook for about 6 to 8 minutes, or until the spaghetti is al dente. Drain and add the spaghetti to the tomato sauce. Add the cheese and mix well. Pile onto a platter and top it with the eggplant slices. Garnish with more basil leaves.

Steps:

  • Toss the eggplant with the 2 teaspoons of salt and place in a colander.
  • Let sit 20 minutes, then squeeze dry.
  • Heat the olive oil in a heavy bottomed saucepan over medium heat and add the onion and sausage meat.
  • Cook, using two forks to break up the meat as it cooks until it is no longer pink.
  • Add the eggplant, and continue to cook until the eggplant has softened, about 8 minutes.
  • Add the garlic and cook an additional minute or two.
  • Add the tomatoes, paste, oregano, salt, pepper, and red pepper flakes if using and bring to a boil.
  • Reduce the heat to a simmer, then cook for 20 minutes, stirring occasionally. (Add a small cup of water if sauce thickens too much).
  • Stir in the parsley and basil.
  • Taste, and adjust salt and pepper as needed.
  • While the sauce is finishing cooking, cook the pasta in a large pot of lightly salted water until it is "al dente", following manufacturers instructions.
  • Drain, and return the pasta to the pot.
  • Add a large scoop or two of sauce to the pasta and toss to coat.
  • Serve the pasta in individual bowls with an additional spoonful or two of sauce on top.
  • Pass the grated cheese at the table, and enjoy!

Be daring, discover how mild & delicious the garlic sauce taste. The recipe came from a cookbook called "Sunday Best". Eggplant is my favorite vegetable. I've collected over 500 eggplant recipes over the years. It's not diffucult.

2 medium eggplants, sliced 1/4 thick slices
1 tablespoon olive oil
1 medium onion, coursely chopped
2 (28 ounce) cans plum tomatoes, drained, and crushed by hand

1 tablespoon dried oregano
1 bay leaf
salt and pepper
60 garlic cloves, i buy them already peeled
boiling water or vegetable stock, to cover
4 tablespoons butter
4 tablespoons flour
2 1/2 cups scalded milk
1 egg, room temperture
1/2-3/4 cup grated parmesan cheese

Steps:

  • Salt and sweat the eggplant pieces for 30 minutes.
  • Preheat oven 400 degrees.
  • Meanwhile, heat 1 Tb.
  • olive oil, saute onion until limp and golden.
  • Add rest of ingredients through salt& pepper.
  • Bring to boil, reduce heat and simmer, uncovered for 30 minutes, until sauce is thick and chunky.
  • Or use any tomato sauce you personally like.
  • Best if thick and chunky.
  • Boil the unpeeled garlic cloves in water to cover for 2 minutes.
  • Can skip, if your cloves are already peeled.
  • Drain, hit each clove lightly with mallet or flat side of large knife.
  • Peel.
  • Place in a small saucepan with stock to cover.
  • Simmer for about 45 minutes.
  • Replenish stock as needed.
  • Whirl garlic and stock in blender until pureed.
  • Set aside.
  • Rinse and drain eggplant of salt.
  • Brush a large baking sheet with 1/4 olive oil.
  • Place in oven until hot.
  • Place eggplant on hot pan.
  • Bake 25-30 minutes.
  • Check frequently, turn with tongs after 15 minutes, do not burn or allow to become crisp.
  • Looking for soft, golden, and cooked eggplant.
  • May need more oil.
  • Drain and blot off oil with paper towel.
  • Reduce oven to 350 degrees.
  • Heat 4 Tbs.
  • butter in heavy saucepan.
  • Whisk in flour.
  • Let roux cook over low heat, stirring constantly, for 3-4 minutes.
  • Whisk in hot scalded milk.
  • Cook gently, stirring frequently for 10-15 minutes.
  • Add salt and pepper to taste,.
  • and stir in garlic puree.
  • Remove from heat.
  • Beat egg.
  • Beat some of sauce into the egg to temper.
  • Beat egg into sauce.
  • Taste for seasoning.
  • Place half of tomato sauce on bottom of a 2quart pan.
  • Spread 1/2 tomato sauce on bottom, top with 1/2 eggplant slices, spread remaining tomato sauce over eggplant, top with remaining eggplant.
  • Pour the garlic cream sauce over all.
  • Sprinkle with grated Parmesan cheese.
  • Bake 45-60 minutes til golden brown and bubbling.
  • Can be vegan leave off cheese.

1 large onion , finely chopped (160g)
2 large garlic cloves , finely grated
1 tsp chilli flakes
1 tsp smoked paprika
400g can chopped tomatoes
1 tsp vegetable bouillon powder
1 aubergine , chopped
150g wholemeal penne or fusilli
large handful of basil , plus extra to serve
25g parmesan or vegetarian Italian-style hard cheese, finely grated

Steps:

  • Heat the oil in a large non-stick pan, add the onions, cover and cook for 5 mins. Remove the lid and cook for 5 mins more, stirring frequently until softened. Add the garlic, chilli flakes and paprika, stir briefly, then tip in the tomatoes and a can of water. Stir in the bouillon and aubergine, then bring to a simmer, cover and cook for 20 mins.
  • Cook the penne in a pan of boiling water for 12 mins until al dente. Drain, reserving 60ml of the cooking water. Add the cooked penne to the sauce, and toss well with the basil and a little of the reserved water, if needed. Spoon into two shallow bowls, and serve topped with the cheese and some extra basil, if you like.

1 lb pasta
1 cup torn fresh basil leaves
shaved ricotta salata

Steps:

  • Place eggplant cubes in colander and sprinkle with 2 tablespoons kosher salt. Let eggplant drain 15 minutes. Pat dry, removing excess salt. Meanwhile, heat 2 tablespoons oil in heavy large skillet over medium heat. Add onion and garlic; sauté until onion is soft, about 5 minutes. Add peperoncini and tomatoes with juice; cook until tomatoes begin to soften, about 15 minutes. Remove tomato sauce from heat. Heat 1 tablespoon olive oil in another heavy large skillet over high heat. Working in 3 batches and adding 1 tablespoon olive oil for each batch, cook eggplant until browned on all sides, about 8 minutes. Using slotted spoon, transfer eggplant to tomato sauce in skillet. Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup pasta cooking water. Add cooking water to sauce; bring to boil. Add pasta and basil to sauce and toss to coat. Season to taste with salt and pepper. Transfer pasta to bowl; top with ricotta salata and serve.

1 pound Asian eggplants (about 6 medium)
two 28- to 32-ounce cans whole tomatoes
1 pound ridged ziti or rigatoni
1 1/4 cups olive oil
3 ounces freshly grated ricotta salata cheese (about 3/4 cup)
Garnish: fresh basil leaves

Steps:

  • Peel garlic. Trim stem ends of eggplants. Halve eggplants lengthwise and cut crosswise into 1/2-inch-thick slices. In a large sieve drain tomatoes. Transfer tomatoes to a bowl and squeeze to break into smaller pieces.
  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
  • In a 12-inch heavy skillet heat 1 cup oil over moderately high heat until hot but not smoking. Fry eggplant in 2 batches, turning, until golden brown on both sides. Transfer eggplant as fried with a slotted spoon to paper towels to drain, arranging it in one layer. Season eggplant with salt and pepper.
  • Pour off oil from skillet and wipe clean with paper towels. Add remaining 1/4 cup oil to skillet and cook garlic over low heat, stirring, until golden. Stir in tomatoes with any juices that have accumulated in bowl and simmer, stirring frequently, until slightly thickened, about 15 minutes. Season sauce with salt and pepper.
  • While sauce is simmering, cook pasta until al dente. Reserve 1 cup pasta cooking water and drain pasta in a colander. Transfer half of tomato sauce with half of ricotta salata to a large bowl and toss with pasta and half of eggplant, adding some reserved pasta cooking water if sauce becomes too thick. Transfer pasta to a serving bowl and top with remaining sauce and eggplant and some of remaining cheese.
  • Garnish pasta with basil and serve remaining cheese on the side.

1 eggplant (1 1/4 lb), peeled and cut into 1/4-inch dice
1 1/2 teaspoons kosher salt
2 tablespoons salt-packed capers *
1 red bell pepper
4 cups vegetable oil
10 green Bella di Cerignola olives, pitted*
1/2 cup loosely packed fresh basil leaves
1/4 cup loosely packed fresh mint leaves
1/4 cup loosely packed fresh parsley leaves
1/2 teaspoon finely chopped fresh marjoram
3 garlic cloves
2 tablespoons extra-virgin olive oil
1 anchovy fillet, rinsed and chopped
2 tablespoons dry white wine
1 lb penne rigate or fusilli

Steps:

  • Toss eggplant with salt in a colander set in a large bowl, then let drain, tossing occasionally, 1 hour.
  • While eggplant drains, rinse capers in a sieve and transfer to a small bowl. Cover capers with water by 2 inches and soak 30 minutes. Drain, then repeat soaking. Drain and rinse capers, then squeeze dry and coarsely chop.
  • Roast bell pepper on rack of a gas burner over moderately high heat, turning with tongs, until skin is blackened, about 5 minutes. (Or broil pepper on a broiler pan about 5 inches from heat, turning occasionally, about 15 minutes.) Transfer to a bowl, then cover bowl tightly with plastic wrap and let pepper steam 10 minutes.
  • When cool enough to handle, peel pepper and discard seeds, stem, and ribs. Pat pepper dry and purée in a blender until smooth.
  • Rinse eggplant and pat dry thoroughly. Heat vegetable oil in a 4-quart pot over high heat until it registers 375°F on thermometer. Fry one third of eggplant, stirring gently, until just golden brown, about 5 minutes. Transfer with a slotted spoon to paper towels to drain. Fry remaining eggplant in 2 batches, returning oil to 375°F between batches.
  • Pulse together olives, basil, mint, parsley, marjoram, and 2 garlic cloves in a food processor until finely chopped.
  • Finely chop remaining garlic clove and cook in olive oil along with anchovy in a 5-quart heavy pot over moderately low heat, stirring, until anchovy dissolves and garlic is fragrant, about 1 minute. Increase heat to moderate and stir in pepper purée, then cook, stirring, 1 minute. Stir in olive mixture, capers, and wine and cook, stirring, until wine is evaporated, about 1 minute. Stir in eggplant (sauce will be very thick) and remove from heat. Keep warm, covered.
  • Cook pasta in a 6- to 8-quart pot of boiling salted water until al dente, then drain and stir into sauce. Season with salt.

4-5 tbsp olive oil
1 medium red onion , finely sliced
2 garlic cloves , finely sliced
1 small dried red chilli , chopped
handful oregano or marjoram, roughly chopped
2 medium aubergines , diced into 2.5cm/1in cubes
50g raisins
4 large tomatoes , chopped
2 tsp tomato purée
2 tbsp baby capers , rinsed, drained and roughly chopped
2-3 tbsp good quality red wine vinegar
400g fusilli
small handful mint , roughly chopped
50g pine nuts , toasted
aged ricotta or vegetarian Parmesan-style cheese (try Bookhams 'Not just a pasta cheese'), to serve

Steps:

  • In a heavy based pan, heat ½ tbsp of oil and gently cook the onion, garlic and chilli until soft with half the oregano.
  • Meanwhile, heat 3-4 tbsp of oil in another frying pan and start browning the aubergines. Once cooked, add to the onion mixture. Fry the raisins in another ½ tbsp oil and, when they have puffed up, add to the aubergine mix. Add the tomatoes, purée and rest of the oregano. Cook on a medium heat for 15-20 mins so all the flavours come together.
  • Finally add the capers and the vinegar and leave on a low heat while you cook the pasta in plenty of boiling, salted water. If the mixture becomes very thick add 100ml of water. Toss the pasta through the aubergine sauce and sprinkle with fresh mint and the pine nuts. Let everyone grate over their own cheese.

1 lb eggplant, peeled, cubed
2 lbs tomatoes, cubed
1/2 cup dry red wine
2 tablespoons fresh basil or 1 teaspoon dry basil
2 tablespoons fresh oregano or 1 teaspoon dry oregano
salt and pepper
12 ounces spaghetti, cooked

Steps:

  • In a large saucepan, heat olive oil over medium heat.
  • Add onion and garlic; cook until onion is soft.
  • Stir in bell pepper, eggplant, tomatoes, wine, basil, and oregano.
  • Season with salt and pepper, if desired.

  • 1. Take one eggplant, prick it a few times with a fork or skewer and char it over a gas flame or grill inside your kitchen. Better yet, use an outdoor grill. It should be completely blackened outside and soft on the inside. If the skin gets completely black but it's not yet soft in the middle, finish roasting it in a 180C oven until softened. Set aside and allow to cool.
  • 2. Meanwhile, cut the other eggplant into medium-sized chunks. Heat about 100ml olive oil in a wide, deep heavy-bottomed pan and when hot, add the eggplant. Make sure the heat is on high when the eggplant goes in and then immediately turn it down to medium-high. Season the eggplant and try to brown it on a few sides. Some will stick and that's OK. As with browning meat, the trick is not to shake it around straight away. Drop it in, make sure it's in one even layer, then leave it for a few minutes. The eggplant will absorb a lot of the oil so you may need to add a bit more (which you can always remove later). It will brown, then start to release from the pan. Once it softens it will stick a bit more. That's OK, too. Once most is soft and brown, remove from the pan onto a paper-towel-lined plate.
  • 3. In the same pan, add a bit more olive oil if the pan is dry and sizzle the garlic cloves until fragrant then add dried chillies. Next, add the cherry tomatoes and oregano, season again. Turn your heat to medium and allow the tomatoes to cook gently without burning the garlic – they will soon begin to burst and release their juice, which will form the base of the sauce. Set this pan aside until ready to finish.
  • 4. Meanwhile take the smoky eggplant and peel away all the charred skin and stem. Chop the fleshy interior as finely as possible or throw in the food processor to make your life easier. Set aside.
