2 pounds chicken tenders
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 eggs, beaten
2 cups panko
6 tablespoons vegetable oil
2 bags (10 ounces each) mixed baby greens
1 cup thinly sliced red onion
4 Bosc pears, peeled and thinly sliced
1 cup Danish blue cheese, crumbled
Dressing, recipe follows
Sugared Pecans, recipe follows
1/2 cup chopped pecans
1/4 cup maple syrup
1/3 cup plus 2 tablespoons apple cider vinegar
1/2 cup mayonnaise
2 tablespoons brown sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup vegetable oil
1/2 cup sugar
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 cup pecans, lightly toasted

Steps:

  • Sprinkle chicken with salt and pepper. Place eggs in a medium bowl. Place panko in another bowl. Dip chicken first in eggs, then in panko.

Stir until nuts are well coated, then transfer to a plate lined with wax paper coated with cooking spray. When cool, break into pieces. Store in an airtight container if making ahead of time.

Provided by Food Network

Categories     side-dish

Time 17m

Yield 4 servings

Number Of Ingredients 13

1/2 cup pecans
4 cups romaine lettuce, torn into small pieces
4 cups mesclun (mixed baby greens), washed and spun dry
1/2 cup slivered red onion
About 1/3 cup Lemon-Soy Dressing, recipe follows
4 tablespoons dried cranberries
1 large garlic clove, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 1/2 teaspoons tamari soy sauce
1/8 teaspoon salt
Generous seasoning freshly ground pepper
1/2 cup mild-flavored olive oil

Steps:

  • Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
  • Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
  • Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.

GRILLED PEARS WITH CANDIED PECANS OVER MIXED GREENS

Grilled Pears With Candied Pecans over Mixed Greens image

I went to a cooking class at the Maytag Store and Babara Tenney showed us how to make this. WOW is all I can say!!

Provided by Chill

Categories     Pears

Time 35m

Yield 4 serving(s)

Number Of Ingredients 16

1 cup water
1 cup sugar
1 cup pecans
1/3 cup balsamic vinegar
2 teaspoons fresh oregano, minced
1 teaspoon shallot, minced
1 teaspoon sugar
1 tablespoon fresh chives
1 tablespoon red onion, minced
1 cup canola oil
4 pears, ripe, peeled
3 tablespoons olive oil
kosher salt
fresh ground pepper
5 cups spring mixed salad greens
1/4 cup crumbled blue cheese

Steps:

  • Preheat over to 350 deg. For the pecans, boil together the water and sugar. Add the pecans and simmer 5 minutes. Drain and toast the pecans on a well-greased baking sheet until golden (about 10 mins). Set aside to cool. This can be done a few days ahead.
  • For the dressing: Mix the vinegar, shallots, sugar, chives and onion. Slowly whisk in canola oil, and make sure the dressing is thoroughly combined. Season with salt and pepper. Set aside. This too can be made earlier.
  • For the pears: cut into quarters and remove the seeds. Toss with olive oil and season with salt and pepper. Either grill or pan fry until the pears are tender. Not mushy, but tender. In the pan would be approx 15 mins or so.
  • Toss the salad with the dressing and mound the pears in the center of each plate. Top with candied pecans and crumbled blue cheese. Enjoy!
