SHEET-PAN MISO-GLAZED SALMON AND RADISHES



Sheet-Pan Miso-Glazed Salmon and Radishes image

2 teaspoons vegetable oil, plus more for the pan
1/3 cup or sake or mirin
3 tablespoons white miso
1 tablespoon sugar
2 teaspoons sesame oil
2 bunches radishes, halved or quartered, if large
Kosher salt
Four 6-ounce skinless salmon fillets
2 scallions, thinly sliced on a bias
2 tablespoons white miso
2 tablespoons rice vinegar
2 tablespoons lime juice
1 tablespoons coconut aminos
1 teaspoon sesame oil
1 teaspoon black sesame seeds
1/4 cup vegetable oil
2 Persian cucumbers, quartered and sliced
5 ounces spring mix

Steps:

  • For the salmon: Preheat the broiler on high. Line a rimmed baking sheet with foil and brush it lightly with oil.
  • Whisk the sake, miso, sugar and sesame oil in a large, microwave-safe bowl; microwave until just simmering, about 40 seconds. Alternatively, whisk the mixture in a small saucepan over medium-low heat until just simmering, stirring occasionally to combine and to dissolve the sugar and miso. Cool to warm room temperature, whisking occasionally.
  • Toss the radishes with the remaining 2 teaspoons of vegetable oil, a tablespoon of the miso sauce and a pinch of salt. Arrange around the edges of the prepared baking sheet.
  • Coat the salmon in the miso sauce then arrange the fillets in the center of the baking sheet and pour the remaining miso sauce over top. Broil 4 to 6 inches from the element, rotating the pan occasionally, until the radishes are crisp tender and browned and the fish is just cooked through and golden brown in spots, about 6 minutes.
  • To make the salad dressing, whisk the miso and rice vinegar in a large bowl to break up the miso. Next add the lime juice, coconut aminos, sesame oil and sesame seeds. While whisking, drizzle in the vegetable oil. Add the sliced cucumbers and spring mix and toss to coat.
  • To serve, plate some of the salad and top with broiled salmon and radishes. Garnish with the scallions and serve!

CITRUS SALAD WITH TAHINI AND CASHEW-SESAME CRUNCH



Citrus Salad with Tahini and Cashew-Sesame Crunch image

This beautiful salad is a great way to highlight citrus, using the flesh, along with the zest and juice. Creamy tahini, pleasantly bitter radicchio, crunchy cashews and refreshing mint round out the dish.

2 tablespoons extra-virgin olive oil
1/2 cup chopped unsalted raw cashews
2 tablespoons sesame seeds
1/2 teaspoon crushed red pepper
1 teaspoon pure maple syrup or honey
Kosher salt
1/2 cup tahini
1 small navel or other orange, zested and juiced, plus 3 more oranges
1 lemon, zested and juiced
Kosher salt
1 small head radicchio or 2 cups arugula
1 tablespoon extra-virgin olive oil
1/2 cup mint leaves or any soft herb
Flaky sea salt

Steps:

  • For the cashew-sesame crunch: Heat the olive oil in a medium heavy-bottomed skillet over medium heat until shimmering, 1 to 2 minutes. Add the cashews, stirring continuously, until lightly golden, 1 to 2 minutes. Add the sesame seeds and crushed red pepper. Cook, stirring continuously, until the nuts are golden and the mixture is fragrant, 1 to 2 minutes.
  • Remove from the heat and stir in the maple syrup. Season with kosher salt. Set aside to cool.
  • Meanwhile, make the salad: Combine the tahini with the orange zest and lemon zest in a medium bowl. Add half of the orange juice and half of the lemon juice. Slowly whisk in 1/4 cup water until the sauce is smooth and fluffy. Season with kosher salt. Set aside.
  • Cut the ends off the 3 remaining oranges. Stand each orange on one end and cut away the peel and white pith, following the contour of the fruit with a very sharp paring knife. Work from top to bottom, rotating the orange as you go. Slice the oranges into 1/4-inch-thick rounds and discard any seeds. Set aside.
  • Thinly slice the radicchio with a mandoline or sharp knife and transfer to another medium bowl. Add the olive oil and the remaining lemon juice and orange juice and toss until combined.
  • Spread the tahini sauce on a serving platter to fully cover the surface. Arrange the orange slices on top and sprinkle with sea salt. Mound the radicchio on top in a generous pile and sprinkle with sea salt. Scatter the mint leaves and cashew-sesame crunch over the top.

MISO MAC AND CHEESE

5 ounces shiitake mushrooms, sliced into 1/4-inch pieces
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 pound small shells pasta, such as De Cecco Small Shells (No.52)
6 ounces (a big chunk) good-quality aged Parmesan
1 stick unsalted butter, divided in half and cubed
1/4 cup white miso paste
1 tablespoon light brown sugar
1 cup whole milk
Fresh chives, finely chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Coat the mushrooms in the olive oil, season them with salt and pepper and lay them on baking sheet, making sure that they are in one flat layer so the mushrooms crisp instead of steam. Bake for 10 to 15 minutes, then flip the mushrooms over and bake until brown and crispy, about 10 minutes. Set them aside to cool.
  • Bring a large pot of heavily salted water to a boil. Cook the shells according to the instructions on the package.
  • In a high-powered blender or food processor, grind the Parmesan into a fine powder.
  • Add half of the butter into a large saucepan over a medium heat. Add in the miso and sugar and stir until combine into a beautiful, saucy paste. Slowly stream in the milk, whisking continuously to make sure the miso and butter emulsify with the milk. Add 1 piece of the remaining butter, whisking until melted. Once melted, add another piece of butter. Repeat with the last pieces of butter.
  • Drain the pasta and reserve 1 cup of the pasta water. Add the cooked pasta into the saucepan with your miso sauce. Add a splash of the pasta water, followed by a small handful of the Parmesan, alternating back and forth between the two to make sure the cheese has melted and the sauce is thickening.
  • Plate the mac and cheese and top it with more Parmesan, the crispy mushrooms and the chopped chives. Enjoy!

SPICY MISO NOODLES

Spicy vegan miso noodles with cabbage and mushroom that are ready in under 20 minutes!

2 tbsp white miso (40 g)
2 tbsp tahini or peanut butter (35 g)
2 tbsp maple syrup (35 g)
2 tbsp tamari (30 mL)
2 tbsp sesame oil (30 mL)
1 tbsp rice vinegar (15 mL)
2 tsp chili-garlic sauce (sambal oelek or Sriracha)
4 cloves garlic, grated (20 g)
⅓ cup warm water
250 g dry wheat noodles (Chinese style lo mein), soba or ramen (I used Hakubaku Ramen noodles)
3 cups green cabbage, chopped (215 g)
3 cups sliced mixed mushrooms (approx. 160 g)
1 small white onion, thinly sliced (1 cup/120 g)
1 bunch green onions, thinly sliced
Optional: 250 g tempeh or tofu, cut into small cubes
1 tbsp tamari
green onions, thinly sliced
sesame seeds
toasted nori, thinly cut

Steps:

  • Make the Miso Sauce: Add all sauce ingredients to a medium bowl. Stir until smooth. Set aside.
  • Cook the Noodles: Prepare noodles according to package directions. Once tender, drain and set aside.
  • Cook Tofu or Tempeh (Optional): If using tempeh or tofu, heat 1 tbsp oil in a large pan, over medium-high heat. When the pan is hot, add the tempeh or tofu cubes. Cook for 6-8 min, breaking apart into smaller pieces, until golden-brown. Remove the pan from the heat, then drizzle over 1 tbsp tamari. Toss to combine. Transfer to a plate and set aside.
  • Stir Fry the Veggies: Heat 2 tsp oil over medium-high heat. Add the mushrooms, cabbage and onions. Season with a pinch of salt and pepper. Cook for 4-6 min, stirring occasionally, until tender. Add green onions, reserving some for serving. Cook for another 2-3 min, stirring often, until tender-crisp.
  • To the pan, add drained noodles and miso sauce. Cook for 1-2 min, tossing gently, to coat noodles in sauce.
  • For Serving: Divide noodles between bowls. Top with tempeh (if using), green onions, sesame seeds and toasted nori. Drizzle more chili-garlic sauce over top, if desired.

This all-purpose miso-sesame vinaigrette is great on a simple salad with lettuces and fresh vegetables, such as cucumbers, tomatoes, sliced onions, radishes, jicama or grated carrots, or in this Chicken and Cabbage Salad. Try it drizzled on an iceberg wedge, over sliced leftover steak, chicken or tofu, or on grilled seafood, served hot or cold. It's especially good with grilled salmon and spicy greens like watercress, mizuna or arugula.

2 medium garlic cloves, smashed with the side of a knife
1 small shallot, roughly chopped
2 tablespoons shoyu or tamari
2 tablespoons balsamic vinegar
2 tablespoons red or white wine vinegar
1 tablespoon light miso paste
1 tablespoon dark brown sugar
1/2 cup grapeseed, vegetable or canola oil
2 tablespoons toasted sesame oil
2 tablespoons toasted white or black sesame seeds

Steps:

  • Combine garlic, shallot, shoyu, vinegars, miso and sugar in a blender and blend on high speed until homogenous. (Alternatively, mash garlic and shallots in the bowl of a large granite or marble mortar and pestle into a fine paste using the pestle, then stir in the shoyu, vinegars, miso and sugar.)
  • With the blender running on medium speed (the liquid should form a vortex but not jump up and splatter on the walls of the blender), slowly drizzle in the grapeseed oil. (If using a mortar and pestle, slowly drizzle in the oil as you stir vigorously with the pestle.)
  • Transfer to a lidded jar. Stir in the sesame oil and sesame seeds with a spoon. Dressing can be stored in the refrigerator for up to 3 weeks. Shake well before using.
