JAPANESE MISO SALMON SIDE (BBQ OR BAKE)



Japanese Miso Salmon Side (BBQ or bake) image

Recipe video below. My mother's recipe for Miso Marinated Salmon. The flavour infused in the salmon is incredible. An authentic Japanese recipe, make this on the barbecue or even in the oven! You can get all the ingredients for this at Woolworths supermarket in Australia, including the side of salmon.

1.6 - 2.4 lb / 0.8 - 1.2kg side of salmon (, skin on (Note 1))
Oil (, for barbecue)
5 tbsp miso paste ((Note 2))
2 tbsp white sugar
1 2/3 tbsp sake ((Japanese rice wine))
1 2/3 tbsp mirin ((Japanese sweet rice wine))
Sesame seeds
Scallions/shallots (, finely sliced)

Steps:

  • Mix together the marinade ingredients in a small bowl until smooth.
  • Place the salmon skin side up on a work surface and slather with just under half the marinade.
  • Turn the salmon so it is skin side down onto a large piece of cling wrap. Slather the remaining marinade on the flesh side.
  • Wrap the salmon in cling wrap. Marinade for 24 to 48 hours.
  • Scrape the marinade off (do not rinse with water) and leave the salmon to come to room temperature
  • Preheat barbecue plate side on MEDIUM LOW. Leave it to heat up for a good 10 to 15 minutes - another tip for cooking salmon perfectly.
  • Add oil just before cooking. Place the salmon on the BBQ skin side down. Cook for 3 minutes, then use two spatulas to turn it. Cook the flesh side for 2 - 3 minutes or until caramelised, then flip it again so the skin side is down then transfer to a tray.
  • Cover loosely with foil to rest for 5 minutes before serving. It will continue cooking while resting.
  • Garnish with sesame seeds and finely sliced shallots.

HONEY MISO GLAZE

1 cup white miso paste
1/4 cup rice wine vinegar
1 1/2 teaspoons grated fresh ginger
1 1/2 teaspoons sesame oil
1 teaspoon chili paste
1 teaspoon soy sauce
1 clove garlic, grated
1/4 to 1/2 cup honey
1 tablespoon chopped fresh cilantro
Freshly ground black pepper

Steps:

  • Whisk together the miso, vinegar, ginger, sesame oil, chili paste, soy sauce, garlic and 1/4 cup honey in a medium bowl until smooth. Taste for sweetness and whisk in more honey if desired. Stir in the cilantro and season with pepper. Spoon or brush on vegetables, meat or fish.

MISO-GLAZED FISH



Miso-Glazed Fish image

Most recipes for miso-glazed fish are for salmon, because fatty fish are well suited for this preparation and salmon is particularly delicious. Nobu Matsuhisa is known for his miso-marinated black cod, which he marinates for two to three days. I can't imagine finding fish fresh enough to marinate for that long, so in my recipe I marinate the fish for a few hours before broiling and then finishing, if necessary, in the oven. The marinade is based on the Matsuhisa recipe, but I've reduced the sugar considerably.

1/4 cup mirin
1/4 cup sake
3 tablespoons white or yellow miso paste
1 tablespoon sugar
2 teaspoons dark sesame oil
4 salmon, trout, Arctic char, mahi mahi or black cod fillets, about 6 ounces each

Steps:

  • Combine the mirin and sake in the smallest saucepan you have and bring to a boil over high heat. Boil 20 seconds, taking care not to boil off much of the liquid, then turn the heat to low and stir in the miso and the sugar. Whisk over medium heat without letting the mixture boil until the sugar has dissolved. Remove from the heat and whisk in the sesame oil. Allow to cool. Transfer to a wide glass or stainless steel bowl or baking dish.
  • Pat the fish fillets dry and brush or rub on both sides with the marinade, then place them in the baking dish and turn them over a few times in the marinade remaining in the dish. Cover with plastic wrap and marinate for 2 to 3 hours, or for up to a day.
  • Light the broiler or prepare a grill. Line a sheet pan with foil and oil the foil. Tap each fillet against the sides of the bowl or dish so excess marinade will slide off. Place skin side up on the baking sheet if broiling.
  • Place the fish skin side down on the grill, or skin side up under the broiler, about 6 inches from the heat. Broil or grill for 2 to 3 minutes on each side, until the surface browns and blackens in spots. If necessary (this will depend on the thickness of the fillets) finish in a 400-degree oven, for about 5 minutes, until the fish is opaque and can be pulled apart easily with a fork.

A really easy low-fat, low-calorie aubergine recipe with delicious umami flavours. This dish is so rich and meaty, it's hard to believe it's vegan!

2 small aubergines, halved
vegetable oil, for roasting and frying
50g brown miso
100g giant couscous
1 red chilli, thinly sliced
½ small pack coriander, leaves chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. With a sharp knife, criss-cross the flesh of the aubergines in a diagonal pattern, then place on a baking tray. Brush the flesh with 1 tbsp vegetable oil.
  • Mix the miso with 25ml water to make a thick paste. Spread the paste over the aubergines, then cover the tray with foil and roast in the centre of the oven for 30 mins.
  • Remove the foil and roast the aubergines for a further 15-20 mins, depending on their size, until tender.
  • Meanwhile, bring a saucepan of salted water to the boil and heat ½ tbsp vegetable oil over a medium-high heat in a frying pan. Add the couscous to the frying pan, toast for 2 mins until golden brown, then tip into the pan of boiling water and cook for 8-10 mins until tender (or following pack instructions). Drain well. Serve the aubergines with the couscous, topped with the chilli and a scattering of coriander leaves.

1/3 cup cider vinegar
1/3 cup ketchup
2 tablespoons tomato paste
2 tablespoons brown sugar
1 tablespoon molasses
2 teaspoons Pickapeppa sauce (or tspns vegetarian Worcestershire-style sauce)
2 garlic cloves peeled, minced
1 teaspoon minced fresh ginger
Few drops liquid smoke
2 tablespoons miso (preferably red)

Steps:

  • In a medium saucepan, whisk together the cider vinegar, ketchup, tomato paste, brown sugar, molasses, Pickapeppa sauce, garlic, ginger and liquid smoke. Bring to a simmer and cook for 3 minutes, whisking continuously. Remove from the heat and let the sauce cool slightly. Transfer the sauce to a food processor or blender and add the miso. Blend until smooth. Adjust the seasonings if necessary. Store in the refrigerator. Serve on vegetarian burgers, with tofu or as a condiment. This recipe yields about 1 1/2 cups.

MISO-MARINATED SALMON



Miso-Marinated Salmon image

This lightly miso-marinated salmon is served with a bright green spinach sauce underneath, then broiled or grilled. Learn how to make it for your next barbecue.

2 Tbsp. sake
3½ ounces (about 5 Tbsp.) Saikyo miso (sweet white miso)
1 Tbsp. sugar
1 large egg yolk
About ⅛ tsp. usukuchi shoyu (light-colored soy sauce), preferably, or regular shoyu
1¼ pounds fresh salmon or cod fillets, skinned or not, cut into 4 pieces
5 tsp. salt
8 ounces Saikyo miso (sweet white miso)
¼ cup sake
¼ cup mirin
¼ cup dry white wine
¼ cup rice vinegar
1 Tbsp. minced shallot
3½ ounces spinach leaves, 4 medium leaves reserved
Vegetable oil, for frying
6 to 8 Tbsp. extra-virgin olive oil, to taste

Steps:

  • First, make the tama-miso sauce. In a small cup, mix the sake with 2 tablespoons water. In a suribachi or other mortar, grind the miso, sugar, and egg yolk to a smooth paste. Add the rice wine and water mixture little by little, grinding all the time. Season to taste with shoyu. Have at hand a bowl half-filled with cold water and ice cubes. Transfer the sauce to the top of a double-boiler, and cook the sauce over simmering water, stirring constantly and thoroughly so you do not scramble the egg, until the sauce becomes thicker, about 6 to 8 minutes. Set the bowl of sauce in the bowl of cold water and ice cubes to cool. Tama-miso may be stored in the refrigerator, covered, for three days. Heat the sauce through before using it.
  • Salt the fish on both sides, and rest it on a steel rack set over the pan, for 1 hour in the refrigerator.
  • In a medium bowl, soften the miso by stirring in the sake and mirin. Spread one-third of the miso mixture in the bottom of a large pan in which the fish can fit without overlapping. Lay a tightly woven cotton cloth or two layers of cheesecloth over the miso in the pan. Wipe the salted salmon with a paper towel to remove the salt and the liquid exuded from the fish. Place all the salmon pieces on the cloth in the pan, and cover them with another tightly woven cotton cloth or two layers of cheese cloth. Spread the remaining miso mixture over the cloth, covering the surface completely. Wrap the entire pan with plastic wrap, and refrigerate it for 5 hours.
  • In a small saucepan, combine the dry white wine, komezu, and shallot. Bring the mixture to a boil over medium heat. Reduce the heat to very low, and cook the mixture until it is reduced to 1 tablespoon syrup.
  • In a large pot of boiling water, parboil the spinach, excluding the 4 leaves, 1 to 2 minutes. Cool the spinach in ice water, and drain the spinach well. In a food processor, purée the spinach. In a skillet, heat 1 inch oil over medium heat to 320°F. One at a time, add the 4 reserved spinach leaves to the oil, and cook them until they are bright green and translucent, 10 to 15 seconds. Transfer the spinach to paper towels to drain.
  • Lift the top cloth (or cloths) from the salmon, and remove the salmon from the marinade. Discard the marinade, or reserve it to use as a fish marinade one more time within 2 weeks, after heating it through and adding more miso and sake, or for making miso soup. If there is any miso residue on the fish, gently wipe it away with a paper towel. At this point you can refrigerate the fish, in a well-sealed plastic bag, for up to 3 days, or freeze it for a longer period.
  • Heat a broiler or grill, and the broiler pan or grill rack. With a pastry brush, lightly grease the pan or rack. Transfer the salmon to the pan or rack, and cook the salmon, turning once, until both sides are light golden. A 1-inch-thick salmon steak needs about 8 minutes' total cooking. Marinated fish burns easily, so you may need to cover the fish with aluminum foil as it cooks.
  • In a small saucepan, combine 2 Tbsp tama-miso sauce with the reduced vinegar-wine syrup. Place the saucepan over low heat, and cook until the mixture is heated through. Transfer the mixture to a medium bowl, and add the spinach purée. Little by little, whisk in the olive oil. Serve the salmon with the spinach sauce underneath and garnished with the fried spinach leaves.
