Easy Hedgehog Slice image

This easy Hedgehog Slice is super simple and needs just SIX ingredients! Both regular and Thermomix instructions included.

500 grams Marie Biscuits (2 packs)
250 grams butter
3 tablespoons cocoa
4 tablespoons desiccated coconut
395 grams sweetened condensed milk
180 grams milk chocolate

Steps:

  • Line a 20cm x 20cm square tin with baking paper. Make sure you leave plenty hanging over the edges to help you remove the slice once it has set.
  • Place one pack of biscuits into a food processor and blitz until finely crushed, add the second pack and blitz again until they have broken into large pieces. Alternatively you can just use a rolling pin to crush your biscuits! Place the crushed biscuits into a large bowl and set aside until needed.
  • Melt the butter using a microwave safe bowl and cooking for 30 second spurts until it has just metled.
  • Pour the melted butter into the bowl with the crushed biscuits and add the sweetened condensed milk, cocoa and coconut. Using a large metal spoon, mix until the ingredients are combined. Pour the mixture into your prepared slice tin and flatten the surface with the back of a spoon.
  • Place the milk chocolate into a microwave safe bowl and cook for 30 second spurts (mixing in between) until it's just melted. Pour over the top of the slice and place in the fridge for two hours or until set.

2 packets of plain biscuits - Marie or similar
250g of butter
3 tablespoons of cocoa
4 tablespoons of shredded coconut
1 tin of condensed milk
200g of milk chocolate

Steps:

  • Line a 18 x 28cm slice tin with baking paper, make sure you leave plenty of paper hanging over the edges.
  • Place the biscuits into a large bowl and using the end of a rolling pin break them up until you have a combination of fine crumbs and larger pieces. Set the bowl with the biscuits in it to the side.
  • In a small saucepan add the condensed milk, and butter (cut into cubes) and cook over a low heat until the butter has melted and the ingredients have combined.
  • Pour the melted ingredients into the bowl with the crushed biscuits and add the cocoa and shredded coconut. Stir all of the ingredients together using a large metal spoon.
  • Pour the mixture into the prepared slice tin and using the back of a spoon flatten the surface.
  • Break the milk chocolate into squares and place it in a microwave safe bowl. Cook for 30 second spurts until it has melted.
  • Pour the melted chocolate over the top of the slice and place the tray into the fridge for 2 hours or until set.
  • Cut the chilled slice into pieces and enjoy

125 g unsalted butter, chopped (4 oz)
115 g caster sugar (½ cup)
3 tablespoons best quality cocoa powder (unsweetened)
1 egg
250 g Marie or Digestive biscuits (cookies) (broken into pieces)
1 cup marshmallows (chopped)
2 teaspoons melted butter
1 tablespoon boiling water
1 cup icing sugar
2 tablespoons best quality cocoa powder (unsweetened)

Steps:

  • Line a medium loaf tin with baking paper.
  • Combine the butter, sugar and cocoa in a medium saucepan until melted together. Cool slightly, add the egg and stir through. Add the biscuits and marshmallows and stir through.
  • Press into the tin and place in the fridge until set.
  • When set, cut into small squares. Can serve un-iced or ice with chocolate icing.

CAROB HEDGEHOG SLICE

1 cup dates
1 cup other dried fruit, eg sultanas
1/2 cup brazil nut (original recipe uses almonds in their skins)
2 cups rolled oats (I substitute 1/3 - 1/2 cup LSA mix)
1 tablespoon vanilla essence
2 tablespoons unsweetened carob powder
2 tablespoons approx rice syrup (have also used glucose syrup and honey successfully)

Steps:

  • Combine all ingredients, except syrup, in a *sturdy* food processor (I broke my el cheapo on this recipe). Process and slowly add syrup until mixture begins to stick together. Press into slice tin lined with greaseproof paper, refrigerate until firm.

An Aussie treat. Biscuits are the Australian term for cookies. This needs to refrigerate for a couple of hours.

1 lb broken biscuits (shortbread) or 1 lb cookie (shortbread)
1 cup butter
2 cups sugar (fine grain)
1 cup sultana (raisins)
1/4 cup unsweetened cocoa
3 eggs, beaten
2 cups powdered sugar
4 tablespoons unsweetened cocoa
2 tablespoons melted butter
2 tablespoons milk (or enough to get a good spreading consistency)

Steps:

  • Break up biscuits into bits. Not crumbed, just pieces no larger the size of a quarter.
  • In large pan melt the butter, then add the sugar, sultanas and cocoa. Heat and keep mixing until hot but not boiling.
  • Take off the heat.
  • Mixing very quickly, add the beaten eggs in small amounts incorporating each lot before adding the next.
  • Fold in broken biscuits.
  • Press mixture into a foil lined tray (30x25cm).
  • Refrigerate to set for a couple of hours.
  • To make the icing / frosting:.
  • Mix the icing sugar, 4 T cocoa and 2 T melted butter with enough milk to give a spreadable consistency.
  • Beat until smooth.
  • Spread over the hedgehog and leave until it has set.
  • I store this slice in the refrigerator.
